
One of the best vegetable preparations is zucchini for the winter. Of course, they can also be found in the cold season, but this is not the same taste at all. But homemade snacks will delight until the new harvest! We share 12 excellent recipes for zucchini “You will lick your fingers”!
1. Fried zucchini “Lick your fingers” for the winter

The easiest and fastest recipe that everyone can handle.
You will need: 1.5 kg of zucchini, 2 heads of garlic, 1 bunch of herbs, 100 ml of vegetable oil, 2 tbsp. vinegar, 20 g of salt.
Cooking: Cut the zucchini into circles and fry them in oil on both sides until golden brown without salt and spices. Put the zucchini in clean jars. Shift the layers with chopped herbs, garlic and salt. Pour in a spoonful of vinegar, sterilize the jars for another 20-25 minutes in boiling water and roll up.
2. Pickled zucchini “Lick your fingers” for the winter

A very convenient way of cooking, because you do not need to stew or fry anything.
You will need: 3 kg zucchini, 2 tbsp. salt, 6 tbsp. sugar, 150 ml vegetable oil, 150 ml vinegar, 50 g dill, 60 g garlic, 1 tbsp. ground black pepper.
Cooking: Dice the zucchini, chop the dill and garlic, and mix all the ingredients together. Leave the workpiece to marinate for 3-4 hours, put it in jars, sterilize for another 15 minutes and roll it up.
3. Zucchini “You’ll lick your fingers” with vegetables in a tomato marinade

An excellent salad, reminiscent of lecho in taste and preparation.
You will need: 1.5 kg of zucchini, 300 g of onions, 300 g of tomatoes, 300 g of carrots, 300 g of bell peppers, 120 ml of vegetable oil, 60 g of tomato paste, 350 ml of water, 80 g of sugar, 1 tbsp. salt, 70 ml of vinegar.
Cooking: Combine water, sugar, salt, tomato paste and oil and bring to a boil. Put the diced zucchini in the marinade and boil for 20-25 minutes. Add the remaining randomly chopped vegetables and simmer for another 20 minutes. Pour in the vinegar, simmer for another 5 minutes and roll the workpiece into sterilized jars.
4. Zucchini circles “Lick your fingers”

According to the same recipe, you can prepare zucchini or squash for the winter.
You will need: 900 g zucchini, 6 garlic cloves, 9 clove buds, 9 bay leaves, 1 tbsp. allspice, 1 bunch of herbs, 1.5 liters of water, 130 g of sugar, 130 ml of vinegar, 45 g of salt.
Cooking: Cut the zucchini into circles and put them in sterilized jars, shifting all the additives, spices and herbs. Boil water, add salt, sugar and vinegar, and boil until dissolved. Pour zucchini and roll up for the winter.
5. Pickled zucchini with onions “Lick your fingers”

Feel free to add various spices to the marinade to taste.
You will need: 400 g zucchini, 1/2 onion, 300 ml water, 1 tsp. salt and sugar, 5 g dill, 1 bay leaf, 1 tbsp. vinegar, 2 cloves.
Cooking: Cut the zucchini into circles, and the onion into rings, and put them in a sterilized jar with dill and spices. Pour boiling water over and leave covered for 10 minutes. Drain this water, boil it again and pour it back for another 10 minutes. Drain again, add salt, sugar and vinegar, boil, pour back and roll up the zucchini for the winter.
6. Zucchini in Korean for the winter “Lick your fingers”

It is simply impossible to ignore such a delicious and beautiful preparation!
You will need: 3 zucchini, 2 carrots, 2 bell peppers, 120 ml vegetable oil, 100 ml vinegar, 2 tbsp. sugar, 1 tbsp. salt, 1 tsp. seasonings for Korean carrots, coriander and paprika.
Cooking: Grate carrots and zucchini on a Korean grater, and cut the pepper into strips. Add the rest of the ingredients, mix and leave for 2 hours. Place the workpiece tightly in jars, fill with the secreted juice and sterilize for another 15 minutes. Roll up for the winter.
7. Salted zucchini for the winter “Lick your fingers”

These zucchini will take a little longer because they need to infuse.
You will need: 3 kg of zucchini, 1 bunch of dill, 100 ml of vegetable oil, 50 ml of vinegar, 1 cup of garlic, 50 g of salt, 1 tbsp. sugar, 1 tsp ground black pepper.
Cooking: Cut the zucchini into cubes, chop the dill and garlic and mix all the ingredients together. Leave the workpiece under pressure for 8-12 hours. Arrange the zucchini tightly in jars, sterilize for another 15 minutes and roll up.
8. Zucchini caviar for the winter “Lick your fingers”

What selection of zucchini blanks can do without delicious caviar?
You will need: 1 kg zucchini, 500 g carrots, 250 g onions, 4 garlic cloves, 1 tbsp. tomato paste, 1/2 cup vegetable oil, 1 cup water, 1 tbsp. salt, 2.5 tbsp. sugar, spices.
Cooking: Finely chop all the vegetables, pour in water and simmer for 40 minutes over low heat. Then grind the workpiece with a blender or pass through a meat grinder. Add chopped garlic, spices, tomato paste, sugar, salt and oil. Stew zucchini caviar for another 20 minutes and roll into sterilized jars.
9. Zucchini “Lick your fingers” with tomatoes and hot peppers

Especially for lovers of more savory snacks!
You will need: 1.5 kg of zucchini, 500 g of bell pepper, 2 hot peppers, 500 g of tomatoes, 1 head of garlic, 90 g of sugar, 125 ml of vegetable oil, 1 tbsp. salt, 90 ml of vinegar.
Cooking: Grind tomatoes, both types of pepper and garlic in a blender. Add butter, sugar and salt and bring to a boil. Add diced zucchini, stew the workpiece for half an hour on low heat, pour in vinegar and after another 5 minutes roll it into sterilized jars.
10. Zucchini for the winter “Lick your fingers” with ketchup

Ketchup will add a touch of piquancy to zucchini, all the more you can choose any to your taste.
You will need: 1.5 kg of zucchini, 1 carrot, 1 bell pepper, 1 onion, 5 cloves of garlic, 260 ml of ketchup, 2 tbsp. tomato paste, 80 ml vegetable oil, 1 tbsp. salt, 2 tbsp. sugar, 50 ml vinegar, 200 ml water.
Cooking: Cut the zucchini into slices, onion into feathers, pepper into cubes, and grate the carrots on a Korean grater. Add oil, sugar, salt and ketchup to vegetables. Dilute tomato paste in water and pour in the same. Bring everything to a boil and simmer for half an hour over low heat. Add chopped garlic and vinegar, simmer for another 5 minutes and roll the workpiece into sterilized jars.
11. Zucchini with eggplant “Lick your fingers”

One of the best combinations of ingredients – just a godsend!
You will need: 1.5 kg of eggplant, 1.5 kg of zucchini, 1 kg of tomatoes, 1 kg of bell pepper, 3 carrots, 4 onions, 3 heads of garlic, 150 ml of vegetable oil, 3 tbsp. vinegar, 2 tbsp. sugar, 2 tbsp. salt.
Cooking: Randomly cut all the vegetables into roughly equal pieces. Lightly fry the onion and eggplant separately. Mix everything together, add oil and simmer for half an hour over low heat. Add sugar, salt, spices, garlic and vinegar. Stew for another 10 minutes and roll the workpiece into sterilized jars.
12. Adjika from zucchini for the winter “Lick your fingers”

Moderately spicy, very tasty and easy to prepare – what else do you need?
You will need: 2 kg of zucchini, 500 g of bell pepper, 3 heads of garlic, 1 kg of tomatoes, 300 g of carrots, 150 ml of vegetable oil, 5 tbsp. sugar, 3 tsp salt, 2 tsp red ground pepper, 70 ml of vinegar.
Cooking: Pass the vegetables through a meat grinder and mix together all the ingredients except garlic and vinegar. Bring the workpiece to a boil and boil for 40 minutes over low heat. Add chopped garlic, boil for another 5 minutes, pour in vinegar, mix adjika and roll it into sterilized jars.
