Every year, closer to the holidays, the same throwing begins – and what would this be done on the festive table. I want to surprise guests and not spend a couple of days of my life in the kitchen. We share 20 recipes for what to cook for the New Year 2021 tasty and inexpensive!
1. Baked chicken with herbs and lemon
Take a whole bird – and you definitely won’t regret it!
You will need: 1 chicken, 10 thyme stalks, 2 lemons, 50 g butter, 500 g potatoes.
Cooking: Peel and cut the potatoes into large pieces, put it in a greased form. Strip the thyme leaves off the sprigs and sprinkle over the potatoes. Mix the remaining leaves with spices and the zest of one lemon, and stuff the pockets under the skin of the chicken with this.
Put the second lemon inside, wipe the chicken with paper towels, rub with butter. Rub it again with spices, put it on potatoes and put it in the oven for 70-80 minutes at 180 degrees.
2. Salmon appetizer with ginger
A simple but very beautiful and delicious appetizer for the New Year’s table.
You will need: 500 g salmon fillet, 2 green onion feathers, 1 piece of ginger root, 1 lime, 2 tbsp. soy sauce, 1 bunch of chives, 1 tbsp. fish sauce, 1 tbsp. sesame oil.
Cooking: Grate the lime zest, squeeze the juice from half of it, add the grated ginger there. Finely chop both types of onions, mix with lime, fish and soy sauce and sesame oil. Add finely chopped salmon to this and mix.
3. New Year’s chocolate cookies
Quick cookies that even those who do not know how to bake pastries can handle.
You will need: 130 g butter, 130 g brown sugar, 2 egg yolks, 1 tbsp. cocoa, 1 tsp cinnamon, 180 g flour, powdered sugar.
Cooking: Beat the soft, heated butter with a mixer with sugar until fluffy. Separately mix dry ingredients and combine both mixtures until smooth. Leave the dough in the refrigerator for 15 minutes, roll it thinly, cut the cookies and bake for 10 minutes at 180 degrees.
4. Chicken pate with armagnac
A festive pate with savory notes will be a delicious New Year’s snack.
You will need: 450 g chicken liver, 200 g butter, 50 ml cream from 30%, 1 tbsp. armagnac, coarse salt, black pepper, dried cranberries, toast.
Cooking: Fry the liver in a small piece of butter so that the center remains pink. Grind it in a blender with the rest of the butter and cream. Add salt, pepper and armagnac, arrange in molds, tighten with cling film and refrigerate. Garnish with dried cranberries when serving.
5. Aspic of beef
Delicious aspic – the crown dish of the New Year’s table.
You will need: 900 g of veal, 1.6 l of meat broth, 50 g of carrots, 100 g of onions, 5 g of dill and parsley, 2 cloves of garlic, 30 g of gelatin.
Cooking: Crush the garlic, cut the carrot into large pieces, and the onion into four pieces. Pour the washed meat with broth, add vegetables, bring to a boil and simmer for 2 hours over low heat. Add bay leaf and peppercorns, boil for another half hour.
Put vegetables and meat out of the pan, add garlic and pre-diluted gelatin to the broth. Arrange the chopped meat, greens and, if desired, carrots in the forms, pour in the broth and refrigerate for at least 2 hours.
6. Turkey roll with sun-dried tomatoes
A simple and beautiful dish for the New Year for those who are worried about their figure.
You will need: 800 g turkey fillet, 50 g sun-dried tomatoes, 120 g bacon, a pinch of thyme, 15 ml olive oil, 10 g basil leaves, 50 g butter.
Cooking: Grind sun-dried tomatoes and basil separately. Cut the fillet, lay it out thinner, beat, pepper and salt. Layer the bacon, tomatoes, thyme and basil, drizzle with olive oil, spread the pieces of butter and roll. Tie it with a thread and bake for 40 minutes at 180 degrees.
7. Christmas meringue
It is easy to make beautiful Christmas trees from meringue, which can be decorated with sprinkles or confectionery beads.
You needupholstered: 4 egg whites, 300 g sugar, 5 tsp. matcha tea.
Cooking: Put the whites with sugar in a water bath and, stirring, heat until the sugar dissolves. Beat with mixer on high speed until stiff peaks form and add to matcha. Put the proteins in a pastry bag, form Christmas trees and dry for about 1.5-2 hours at 100-110 degrees.
8. New Year’s pork in sour cream
An affordable recipe on how to bake fragrant pork in sour cream for the New Year’s table.
You will need: 1 kg of pork, 1 glass of sour cream, 3 cloves of garlic, cheese, white pepper, salt.
Cooking: Cut the pork into 1.5 cm thick pieces. Mix sour cream, spices, crushed garlic and grated cheese, brush each piece and put them together tightly. Coat the pork on top, wrap in foil and bake for 100-130 minutes at 200 degrees.
9. Stewed turkey fillet with vegetables
You can use chicken, but turkey is juicier.
You will need: 500 g turkey, 2 onions, 2 tomatoes, 1 bell pepper, 1 turnip, 1 patisson.
Cooking: Put the chopped fillet in a cast-iron pan with a little oil and simmer for 10 minutes under the lid. Cut the vegetables, add them to the meat, mix and simmer until tender.
10. New Year’s salad “Herringbone”
Decorate it on top with pomegranate or berries.
You will need: 200 g smoked chicken fillet, 200 g mushrooms, 4 eggs, 2 tbsp. milk, 50 g prunes, 30 g walnuts, 2 cloves of garlic, 300 g cucumbers, 100 g mayonnaise, a pinch of salt.
Cooking: Beat eggs with milk and fry two omelettes, cool and cut. Fry the sliced mushrooms and fold on a paper towel to remove excess fat. Grind the smoked fillet, prunes and nuts, mix all the ingredients and season with mayonnaise with crushed garlic. Lay out the lettuce in the shape of a Christmas tree and make needles from triangles of cucumbers.
11. New Year’s tangerines in spicy syrup
Spicy tangerines can be eaten alone, served with ice cream or other desserts.
You will need: 8 tangerines, 300 ml water, 150 g sugar, 1 tsp. saffron, 2 star anise, 2 cinnamon sticks.
Cooking: Bring water with sugar to a boil and boil for 5 minutes. Add all the spices and continue to cook until the syrup is golden and thick. Soak the peeled tangerines in it and leave there, at least until they are completely cool.
12. Salad with squid and vegetables
A bright layered salad that is easy to prepare for the New Year!
You will need: 2 squid, 1 cucumber, lettuce, 1 red onion, 10 cherry tomatoes, 2 eggs, 1 tbsp. 9% vinegar, 1 tsp sugar, 250 ml yogurt, 0.5 tsp. mustard, salt and pepper.
Cooking: Boil the squid for 2 minutes and cut into cubes. Boil the eggs and grind the squirrels with yolks separately, cut the cucumber into cubes, and the tomatoes into rings. Marinate onion half rings in cold water with vinegar and sugar for half an hour.
Mix yogurt with mustard and spices. Layer lettuce, onions, dressing, protein, dressing, squid, cucumbers, dressing, tomatoes, dressing, grated yolk.
13. New Year’s salad with pork
This hearty and quick salad will decorate any New Year’s table!
You will need: 200 g of pork, 1 can of pickled champignons, 2 pickled cucumbers, 150 g of Korean carrots, 4 leaves of Chinese cabbage, 4 tbsp. mayonnaise, 3 tbsp. olive oil.
Cooking: Boil the pork, cut it into small pieces and fry in olive oil. Grind mushrooms, cucumbers and Chinese cabbage, mix all the ingredients and season with mayonnaise.
14. New Year’s salad with pear and pine nuts
And with two types of meat – for every taste!
You will need: 300 g beef, 200 g chicken, 150 g cucumbers, 20 g green onions, 1 bell pepper, 1 pear, 2 tsp. pine nuts, 3 tbsp. olive oil, 2 tsp. soy sauce, 1 tsp granular mustard, 2 cloves of garlic, pepper.
Cooking: Chop green onions, pears, peppers and cucumbers into small strips or cubes. Also cut boiled beef and chicken fillet. Mix olive oil with soy sauce, mustard, crushed garlic and spices, dress salad and sprinkle with pine nuts.
15. Beetroot mousse “Herring under a fur coat”
A beautiful interpretation of the classic salad for the New Year.
You will need: 6 slices of black bread, 150 g beets, 1 herring fillet, 6 tbsp. mayonnaise, a quarter of a lemon, 2 tsp. gelatin, 70 ml of water, spices.
Cooking: Boil or bake the beets and grind them in a blender with mayonnaise and spices. Add lemon juice and diluted gelatin to the puree. Cut out circles from bread, put herring cubes on top and pour beetroot mousse through the ring. Put in refrigerator until cold.
16. Cookies “Christmas cones”
An easy recipe for beautiful holiday cookies, like an anthill.
You will need: 125 g butter, 1 egg, 4 tbsp. sugar, 4 tbsp milk, 3 cups flour, 100 g walnuts, 1 can of boiled condensed milk.
Cooking: Rub the egg with sugar, add milk and melted butter to them. Knead elastic dough with flour, divide into 3 parts and freeze. Rub each part on a coarse grater on parchment and bake for 10 minutes at 160 degrees. Grind the dough and nuts, mix with condensed milk and form cones.
17. Swiss New Year salad
Beautiful meat salad with pickled cucumbers and pears.
You will need: 2 fresh cucumbers, 2 pickled cucumbers, juice of 1 lemon, 400 g carbonade, 400 g servelat, 400 g smoked ham, 4 pears, 5 tbsp. mayonnaise, herbs.
Cooking: Mix chopped greens with mayonnaise and lemon juice. Peel all the ingredients and cut into thin strips, mix and season with mayonnaise and herbs.
18. New Year’s fish salad
The more types of fish you take, the more interesting the taste will be.
You will need: 400 g of smoked salmon, 1 smoked pink salmon, 300 g of smoked butterfish, 100 g of any caviar, 10 eggs, 2 large cucumbers, 2 small apples, 2 red onions, 100 ml of wine vinegar, 2 tbsp. sugar, 1 tbsp. salt, 20 g chives, mayonnaise, lemon juice, salt, pepper.
Cooking: Cut the onion into cubes and marinate overnight in a liter of water with vinegar, sugar and salt. Dice butterfish, drizzle with lemon juice and toss with chives. Mix salmon cubes with apples, and pink salmon with egg and mayonnaise. Lay out the salad in layers to your liking.
19. Spicy eggplant
Light and beautiful appetizer is especially good on skewers!
You will need: 4 eggplants, 6 cloves of garlic, 1 bunch of cilantro, zest of half a lemon, 50 ml of olive oil, 30 ml of balsamic, salt, pepper.
Cooking: Cut the eggplant into cubes, salt, leave for half an hour and rinse. Drizzle eggplant and garlic cloves with olive oil, place on parchment and bake until soft at 200 degrees. Grind the cilantro with 2 more garlic cloves and balsamic in a blender. Season eggplants with this, sprinkle with pepper and zest, leave overnight and serve.
20. Christmas duck
We already figured out how to cook chicken for the New Year, and now let’s move on to the duck!
You will need: 1 duck, 3 oranges, 4 tangerines, 6 cloves of garlic, 1 head of garlic, 3 sprigs of rosemary, zest of 2 oranges, 250 ml of orange juice, 125 ml of chicken broth, olive oil, salt, pepper.
Cooking: Clean the duck and prick the skin on the breast and legs. Finely chop the leaves of half a sprig of rosemary, garlic cloves and half the zest, mix with salt and pepper. Rub the duck with this mixture, and inside put a cut orange and tangerine with a sprig of rosemary.
Mix the juice with the broth, add the remaining zest and garlic. Cut the rest of the citruses and the head of garlic into thick rings, put in a mold and add rosemary. Put the duck on top and pour the broth, put it in the oven and bake at 180 degrees for 2-2.5 hours, pouring juice every 15 minutes.
