The basis of the detox program at the naturopathy and yoga center Prakriti Shakti, which is located in Kerala, is organic vegetarian food. And even desserts here are prepared from local fruits, vegetables, nuts at a temperature not exceeding 50 degrees. The restaurant’s cuisine is led by Joy Mathew, one of India’s most talented chefs, who has risen to prominence through his passion for raw food gastronomy. His works of art are delicious dishes from “live” organic food, not subject to heat treatment.
We asked Joey to share recipes that are easy to make and won’t hurt your figure.
Apple caramel tart
Base Ingredients:
- Walnut – 120 g
- Yellow raisins – 60 g
For filling:
- Finely chopped apple – 120 g
- Honey – 40 ml
- Cinnamon powder – 1 g
- Nutmeg powder – 1 g
- Cloves, powder – 1 g
- Lemon juice – a few drops
For almond cream:
Almonds – 80 g (wipe without water to a state of oil)
Mix the ingredients for the base until you have a dough. Give it a square shape.
Put the apple filling on the dough, add the almond cream on top.
Avocado smoothie
Ingredients:
- Avocado – 100 g
- Banana – 100 g
- Spinach – 50 g
- Cilantro – 30 gr
- Honey – 50 g
- Coconut milk – 50 ml
- Water – 100 ml
Blend all ingredients in a blender until smooth.
