1. Spicy adjika from tomatoes and peppers for the winter

You can make adjika hotter or softer – depending on the amount of hot pepper.
You will need: 1 kg of tomatoes, 1 kg of bell pepper, 200 g of hot pepper, 200 g of garlic, 50 ml of vinegar, 50 g of salt, 75 g of sugar.
Cooking: Pass the tomatoes, garlic and both types of pepper through a meat grinder. Bring adjika to a boil, add the rest of the ingredients and simmer for half an hour over low heat. Roll up in sterilized jars.
2. Spicy Georgian adjika for the winter

For such adjika, only hot pepper is used and nothing more.
You will need: 300 g hot red pepper, 100 g herbs, 300 g garlic, 50 g salt.
Cooking: Pass all the ingredients through a meat grinder and mix. Add salt, spread adjika in clean dry jars and store in a cold place.
3. Spicy adjika without cooking for the winter

Raw adjika retains more vitamins and benefits, but it must be stored in the refrigerator.
You will need: 500 g tomatoes, 250 g bell peppers, 2 hot peppers, 50 g garlic, 0.5 tbsp. salt, 1 tbsp. sugar, 1 bunch of cilantro, 1.5 tbsp. vinegar.
Cooking: Remove the skin from the tomatoes. Pass all vegetables, garlic and cilantro through a meat grinder. Add the rest of the ingredients, mix and spread the adjika in clean jars.
4. Spicy adjika with horseradish for the winter

Table vinegar can be replaced with apple cider vinegar, but then slightly increase its amount.
You will need: 2.5 kg of tomatoes, 200 g of horseradish root, 300 g of garlic, 120 g of sugar, 3 hot peppers, 500 g of bell pepper, 2 tbsp. salt, 120 ml of vinegar.
Cooking: In a blender, grind the horseradish root, garlic and hot pepper, but so that small pieces remain. Pass the tomatoes and sweet peppers through a meat grinder, mix everything together and bring to a boil. Add salt and vinegar with sugar, boil adjika for another 15 minutes and roll it into sterilized jars.
5. Spicy Abkhaz adjika with walnuts

We recommend that you only work with hot peppers with gloves!
You will need: 1.3 kg of hot pepper, 60 g of garlic, 1 cup of walnuts, 1 bunch of cilantro, 1 tbsp. salt, 1 tsp basil, 100 ml wine vinegar, spices.
Cooking: Peel the hot pepper from the seeds and fill it with warm water for 1 hour. Drain the water and grind all the ingredients in a blender or with a meat grinder. Add vinegar, salt and spices, roll adjika into jars and store it in a cold place.
6. Spicy adjika with eggplant for the winter

An adapted variation of another Abkhaz adjika recipe is a pleasure.
You will need: 1.5 kg of tomatoes, 1 kg of eggplant, 300 g of garlic, 1 kg of bell pepper, 5 hot peppers, 1 cup of vegetable oil, 2 tbsp. salt, 100 ml of vinegar.
Cooking: Peel the eggplant. Pass all the vegetables through a meat grinder, add oil and boil adjika for 45 minutes over low heat. Add salt and vinegar, boil for another 5 minutes and roll into sterilized jars.
7. Spicy adjika with apples for the winter

Preparing is very simple, and in addition – without vinegar.
You will need: 500 g tomatoes, 250 g apples, 100 g bell peppers, 3 hot peppers, 25 g garlic, 1 tbsp. sugar, 1 tsp salt, 4 tbsp. vegetable oil.
Cooking: Peel the tomatoes and apples, and grind all the ingredients with a blender or pass through a meat grinder. Add oil, sugar and salt, stew adjika for half an hour and roll it into prepared jars.
8. Spicy adjika from zucchini for the winter

Spicy adjika can be cooked not only with tomatoes and peppers, but also with zucchini.
You will need: 1.5 kg of zucchini, 1 kg of tomatoes, 300 g of carrots, hot and bell peppers, 50 g of garlic, 2 tbsp. salt and sugar, 100 ml of vegetable oil and vinegar.
Cooking: Pass all vegetables and garlic through a meat grinder. Bring the workpiece to a boil and boil for half an hour. Add sugar, salt, oil and vinegar, and boil for another 10 minutes. Roll spicy adjika into sterilized jars.
9. Spicy adjika with onions and carrots for the winter

You can easily diversify it by adding other vegetables to taste.
You will need: 1 kg of tomatoes, 150 g of onions, carrots, hot and bell peppers, 100 g of garlic, 30 g of cilantro, 50 ml of vegetable oil, 1 tsp. salt.
Cooking: Peel all vegetables and garlic, and pass them through a meat grinder. Add oil, salt and chopped cilantro, bring adjika to a boil and boil for half an hour over low heat. Roll up in sterilized jars.
10. Spicy adjika with celery for the winter

For this recipe, you will need both celery root and greens.
You will need: 3 kg of bell pepper, 300 g of hot pepper, 300 g of garlic, 300 g of celery root and parsley, 1 bunch of celery and parsley, 1/2 cup of salt, 1 cup of apple cider vinegar.
Cooking: Clean all the ingredients and grind them with a blender or meat grinder. Add chopped herbs, vinegar, salt and spices as desired. Bring adjika to a boil, boil for half an hour over low heat and roll into prepared jars.
11. Spicy adjika in a slow cooker for the winter

Especially for those who want to automate the entire cooking process as much as possible.
You will need: 3 kg of bell pepper, 2 kg of tomatoes, 4-6 hot peppers, 1 head of garlic, 5 tbsp. sugar, 100 ml of vinegar and vegetable oil, salt.
Cooking: Peel vegetables and garlic, and chop them in a blender or with a meat grinder. Send the workpiece to the multicooker bowl and turn on the “Extinguishing” mode for 2 hours. Half an hour before the end – add oil, sugar, salt, spices and vinegar. Roll spicy adjika into sterilized jars.
12. Spicy adjika in the oven for the winter

An alternative way to cook adjika without boiling it on the stove.
You will need: 1 kg of tomatoes, 200 g of onions, hot and bell peppers, 1 handful of walnuts, 100 g of garlic, 1 bunch of herbs, 50 ml of vegetable oil, 1 tsp. salt.
Cooking: Peel all vegetables and pass them through a meat grinder with garlic, nuts and herbs. Add salt and send the workpiece for 1 hour in the oven at 180 degrees. Stir every 15 minutes, and 15 minutes before the end – pour in the oil. Roll adjika into prepared jars.
