
Beetroot is a completely self-sufficient product, and it is good in itself. But it will be even better in this selection of salad recipes. Try and make sure in practice, because we have selected only the most delicious and simple!
1. Salad with beetroot and apple

It is difficult to come up with an even simpler and lighter salad.
You will need: 250 g beets, 1 apple, 2 garlic cloves, 3 tbsp. sour cream, salt.
Cooking: Boil the beets, grate them with an apple on a coarse grater and add crushed garlic. Salt the salad and season with sour cream.
2. Salad of boiled beets and chickpeas

Soak chickpeas and boil in advance, or take canned.
You will need: 250 g beets, 1 bell pepper, 1 handful of chopped herbs, 100 g chicken, 150 g chickpeas, 5 tbsp. olive oil, 2 garlic cloves, thyme, chili flakes and salt.
Cooking: Boil the beets and chicken and cut them into cubes along with the bell pepper. By the way, you can take smoked chicken. Add chickpeas to the salad, mix and dress with oil, garlic and spices.
3. Salad with beets and sauerkraut

Sweetish beets and sauerkraut make for an interesting combination of flavors.
You will need: 3 beets, 500 g sauerkraut, 1 onion, 1 carrot, herbs, spices, olive oil.
Cooking: Boil beets and carrots and grate them on a coarse grater or cut into long strips. Mix with cabbage, add finely chopped onion, season the salad and drizzle with oil.
4. Boiled beetroot salad with orange juice

Orange dressing turns this simple salad into a work of art.
You will need: 600 g beets, 2 sour apples, 1 tsp. sugar, salt, 1 tbsp. vegetable oil, 3 tbsp. orange juice.
Cooking: Boil the beetroot and grate it on a coarse grater along with the apple. Mix the salad with orange juice, add sugar and salt and your favorite odorless vegetable oil.
5. Salad with meat, herring and beets

This is an Estonian salad recipe that at the same time resembles a herring under a fur coat and Russian salad.
You will need: 100 g beets, 150 g herring, 100 g meat, 100 g potatoes, 100 g pickled cucumbers, 100 g red onions, 100 g green apples, 100 g carrots, 2 eggs, 3 tbsp. sour cream, 1 tsp mustard, spices.
Cooking: Boil all vegetables, eggs and any meat to taste. Grind the ingredients in approximately the same cubes, mix and season the salad with sour cream with mustard and spices.
6. Salad with beets and beans

If you want a spicier version, add Georgian or Caucasian spices.
You will need: 2 beets, 1 green apple, 300 g canned red beans, 1 bunch of herbs, 2 tbsp. vegetable oil, 1 tbsp. apple cider vinegar, 0.5 tsp sugar, 3 tsp grainy mustard.
Cooking: First mix the dressing of oil, vinegar, sugar and mustard. Boil the beets, cut them into cubes along with the apple and add the washed beans. Add chopped greens to salad and mix with dressing.
7. Boiled beetroot salad with cilantro

Fragrant spicy cilantro pairs perfectly with sweet boiled beets.
You will need: 400 g beets, 5 green onions, 1 bunch of cilantro, 3 tbsp. olive oil, 1 tbsp. lemon juice, spices.
Cooking: Boil the beetroot and grate it on a coarse grater. Add finely chopped cilantro and green onions to the same place, season and dress the salad with olive oil and lemon juice.
8. Salad with beets and bulgur

Bulgur generally goes well with beets in any form.
You will need: 1 beet, 1 bunch lettuce, 5 tbsp. bulgur, 70 g brisket, 2 tbsp. chopped walnuts, green onions, 2 tbsp. olive oil, 2 tsp. balsamic, 1 tsp granular mustard, salt.
Cooking: Mix the oil, balsamic, mustard, salt and some nuts and leave to infuse. Boil the beets and bulgur, cut the beets into cubes and mix everything with the torn lettuce. Add randomly chopped brisket, nuts, green onions there, and season.
9. Salad of boiled beets and carrots

A simple and very tasty vitamin salad for every day.
You will need: 2 beets, 2 carrots, 1 apple, 2 garlic cloves, 3 tbsp. mayonnaise, sour cream or yogurt.
Cooking: Boil the beets and grate them on a coarse grater along with fresh apples and carrots. Add crushed garlic to the salad and season it to taste.
10. Salad with couscous and beets

Sprinkle chopped almonds on top and top with blue cheese.
You will need: 250 g beets, 40 g couscous, 1 shallot, 2 tbsp. olive oil, 1 tbsp. lemon juice, 1 tsp Dijon mustard, spices.
Cooking: Prepare the couscous according to the instructions and add thin slices of boiled beets to it. Mix finely chopped shallots with olive oil, lemon juice, mustard and spices, and field salad.
11. Salad with chicken and boiled beets

Be sure to sprinkle the salad with nuts and herbs.
You will need: 200 g beets, 150 g chicken, 1 red onion, soy sauce, olive oil, yogurt.
Preparation: Boil the beets and chicken, disassemble the meat into fibers, and grate the beets on a coarse grater. Add onion half rings and dress the salad with a mixture of yogurt, butter and soy sauce.
12. Salad with cottage cheese and beets

This recipe is very good as a quick and healthy breakfast.
You will need: 1 beetroot, 150 g cottage cheese, 1 tbsp. odorless vegetable oil, 1 tsp. honey, 1 tsp balsamic, spices.
Preparation: Boil the beets in advance and cut them into small cubes. Toss with curd cheese and dress the salad with a dressing of butter, honey, balsamic and spices.
13. Salad of boiled beets, lentils and peanuts

Very simple, but very nutritious salad due to lentils and nuts.
You will need: 100 g beets, 60 g lentils, 30 g peanuts, 100 g avocados, herbs, olive oil, lemon.
Cooking: Boil the lentils and beets in advance, grate the beets and mix everything. Add whole or chopped nuts, avocado cubes and greens to the salad. Drizzle with lemon and a little oil.
14. Boiled beet root salad

Korn are small lettuce leaves with an expressive taste that harmonizes perfectly with beets.
You will need: 1 beet, 75 g root, 4 tbsp. pumpkin seeds, 3 tbsp. olive oil, 1 tbsp. balsamic.
Cooking: Boil the beets and cut them into slices or cubes. Toss with lettuce, sprinkle with seeds and generously dressing.
15. Salad with beets and ricotta

Beets are good with any cottage cheese and cheese, but this recipe is especially interesting.
You will need: 4 beets, 1 lemon, 1 orange, 100 g greens, half a red onion, 200 g ricotta, 50 ml olive oil, salt and pepper.
Cooking: Mix olive oil with citrus juice and spices, stir. Cut the boiled beets into thin strips and finely chop the onion. Add chopped greens, mix salad with dressing and after 20 minutes add ricotta.
16. Georgian boiled beetroot salad

Here the whole secret is in a set of bright and fragrant spices.
You will need: 1 kg of beets, 2 bunches of cilantro, 300 g of walnuts, 1 red onion, 4 cloves of garlic, 2 tsp each. saffron, coriander and suneli hops, 2 tbsp. vinegar, salt, red pepper.
Cooking: Cut the onion into half rings, chop the nuts and herbs, mash the garlic and mix all the ingredients with spices and vinegar. Boil the beets, cut into thin strips, mix with dressing and leave in the refrigerator for 2 hours.
17. Sweet salad with beets and brie cheese

Delicate sweet appetizer that can even pass for dessert.
You will need: 250 g beets, 1 brie cheese, 10 pieces of dried apricots and prunes, 50 g walnuts, 20 g dried cranberries, honey.
Cooking: Pour dried fruits with hot water for 5 minutes and coarsely chop dried apricots with prunes. Boil the beets and cut into slices, add large pieces of cheese and nuts. Top fields with honey salad and leave for half an hour.
18. Salad of boiled beets and zucchini

Very easy, healthy and low calorie salad recipe.
You will need: 250 g beets, 250 g onions, 400 g zucchini, 2 cloves of garlic, 1 tsp. sugar, a pinch of salt, 1 tbsp. apple cider vinegar, olive oil, spices.
Cooking: Grate the boiled beets on a coarse grater, and also grate the zucchini. Squeeze excess liquid from zucchini, mix vegetables and add onion half rings. Dress the salad with vinegar, oil, spices and crushed garlic.
19. Beet salad with dried fruits and horseradish

A savory appetizer made from simple ingredients will delight even gourmets.
You will need: 2 beets, 3 potatoes, 6 pieces of prunes and dried apricots, 1 sweet and sour apple, 1/3 lemon, 2-3 cm of horseradish root, 200 g of sour cream.
Cooking: Boil potatoes and eklu, rub the beets on a coarse grater and cut the potatoes into strips. Grind dried apricots with prunes, chop an apple and sprinkle it with lemon juice. Stir the salad, add the remaining juice and season with sour cream with grated horseradish root.
20. Salad of boiled beets and red cabbage

A beautiful purple salad that will adequately decorate the festive table.
You will need: 2 beets, 1 red cabbage, 200 g pumpkin seeds, 200 g soft cheese, 1 red onion, olive oil, lemon juice, Dijon mustard, spices.
Cooking: Boil the beets and cut them into thin slices. Finely chop the cabbage and red onion, mash them with your hands and mix. Drizzle the salad with oil, lemon juice and mustard to taste, season, put cheese on top and sprinkle with seeds.
