2. Rabbit in sour cream

You will need: 1.5 kg of rabbit, 1 bell pepper, onion, 100 ml of fat sour cream, 50 g of butter, spices as desired.
Cooking: Fry the onion in butter, add spices. Cut the carcass into portions, put in a pan with onions and fry for 20-25 minutes until the juice evaporates. Add finely chopped pepper, a couple of tablespoons of water, cover with a lid and simmer until the meat is cooked. Pour in sour cream, mix well and keep the ingredients on fire under the lid for another 15-20 minutes.
3. Rabbit baked in the sleeve
This is a more dietary recipe for those who do not like heavy food.
You will need: 1 kg of rabbit meat, a couple of cloves of garlic, onion, 200 ml of tomato juice, spices.
Cooking: Mix diced onion, squeezed garlic, tomato and seasonings. Put the mixture in the sleeve. Wash the carcass, wipe it dry with napkins, place it with the rest of the products and, after mixing, leave it in the refrigerator for 30 minutes. Preheat the oven to 250 degrees, bake the dish for 35-40 minutes.
4. Rabbit in beer
A rabbit dish with an unusual but very pleasant aftertaste and delicate texture.
You will need: 1 small rabbit carcass, 400 ml beer (preferably dark), 2 onions, 50 g butter, 1 tbsp. l. mustard, prunes and spices as desired.
Cooking: Cut the rabbit, lightly fry in butter until the first color changes, transfer to another bowl. Cut the onions into 8 large pieces (less as possible) and also fry in the juice and oil left over from the meat. Pour in beer, add mustard and spices (+ prunes), mix thoroughly. Then the food over low heat for 15 minutes, stirring occasionally, add pieces of rabbit, cover everything with a lid and hold for another 50-55 minutes.
5. Delicious rabbit cutlets
You don’t need a lot of products to prepare, and the result is clearly worth the time spent.
You will need: 2 kg rabbit meat, 200 g sl. butter, 300 ml heavy cream (more than 20%), 1 egg, flour, spices.
Cooking: Melt the butter and run it, along with the rabbit, through the meat grinder twice. Add spices, egg and cream to the resulting minced meat, beat it like dough. Shape into medium-sized cutlets, roll in flour, fry on both sides until cooked through.
6. Rabbit in white wine
For such a recipe, it is important to choose white semi-sweet alcohol, since red will give a completely different effect “for an amateur”.
You will need: 1 large carcass of a rabbit, a bottle of wine, a couple of onions, 250 ml of sour cream, 150 g of bacon, adjika, dry seasonings and herbs as desired.
Cooking: Soak the meat in alcohol overnight, and in the morning pour half of the wine into another bowl. Add onion cubes, bacon strips, adjika to the carcass and send to the fire for about 1 hour. Add spices, simmer for another 50 minutes. At the end, add sour cream with herbs and mix.
7. Rabbit Stew
The Italian recipe will make the dish a signature dish and will delight everyone who tries it.
You will need: 1 rabbit carcass and liver, 200 ml red wine, onion, carrot, garlic clove, 200 g pasta (ideally tagliatelle), 50 g tomato sauce, dried herbs.
Cooking: Cut the meat into pieces (3-4 cm), chop the onion, carrot and garlic, sauté them for about 7 minutes. Add the rabbit, after the appearance of the first crust, pour in the tomato and wine, leave it under the lid for 10 minutes, then remove it. When the liquid has evaporated by half, reduce the heat, pour in a glass of water. Finely chop the liver, boil the vermicelli until half cooked, check the softness of the meat: if it is easy to press, pour out the pasta and liver, mix, leave on fire for 10 minutes.
8. Rabbit with vegetables and soy sauce
Juicy and soft meat will be a worthy decoration for any table.
You will need: 400 g rabbit fillet, 2 medium sweet peppers, zucchini and eggplant, onion, 15 ml vinegar, 60 ml soy sauce, garlic and spices to taste.
Cooking: Cut the fillet into small pieces, mix with spices, put zucchini slices on top, then pepper strips, onion half rings, thick eggplant half slices. In another bowl, combine vinegar, sauce and garlic (you can add 3 more tablespoons of sunflower oil). Pour marinade into vegetables with meat, cover for 40 minutes. Cooking: Put the fillet, 1 peeled onion and carrot to boil, do not forget to remove the foam and add salt after boiling. Grind the remaining vegetables and mushrooms, remove the products from the broth, pour in the potatoes. Fry the onion until golden brown, add carrots and mushrooms after 7 minutes. As soon as they are browned, pour the contents of the pan and the meat separated from the bones into the pan, bring to a boil and leave covered for 10 minutes.
10. Rabbit with vegetables in a slow cooker

13. Rabbit in a cauldron

You will need: 700 g rabbit meat, 2 pcs. carrots and onions, 150 ml sour cream, bay leaf, seasonings and garlic as desired.
Cooking: Slice the rabbit and fry over high heat until crispy. Chop the vegetables and sauté in the oil left over from the meat. Mix all the ingredients in a cauldron, fill with water so that it completely covers the contents, and add bay leaf. Stew for an hour and a half, add garlic, leave on fire for another 15 minutes.

Soak the nuts in boiling water for 3 minutes and then grind them in a blender along with the remaining garlic. You will need: 1 rabbit fillet, 200 ml cream, 200 g ham, 150 g each bacon and pistachios, garlic to taste.
Cooking: Grind meat, cream and garlic in a blender, add ham cubes and nuts, mix. Lay the bacon overlapped on the foil, and place the minced meat on it, roll everything into a roll. You will need: 2 backs of a rabbit, 150-200 g of bacon (smoked), 150 ml of cognac, spices as desired.
Cooking: Cut and fry the rabbit meat, then dry it with dry napkins. Put a layer of bacon in a saucepan or pot, then meat and, according to this scheme, fill the container to the brim, ending with lard. Pour in cognac, add spices, bake for 60 minutes at 150-180 degrees.

You will need: 1 rabbit carcass, 1 pc. onions, carrots, a pack of gelatin, 1.5 l of vegetable broth, black peppercorns.
Cooking: Wash, dry and cut the meat, then put it in a saucepan along with peppers, whole unpeeled onions, clean carrots. Boil for 2 hours, at this time dilute the gelatin, then disassemble the meat into fibers, put it in molds, adding chopped carrots. Pour gelatin into the strained broth, send to the meat and refrigerate.
