
Light and airy pumpkin cake literally melts in your mouth, and it has an incredibly beautiful golden-orange color. You can cook it in dozens of different ways, and we have already collected the best of them in our selection of recipes. Always check the readiness of the cake with a wooden skewer or a toothpick!
1. Pumpkin cake on kefir with raisins

Vary the amount of sugar according to the sweetness of the pumpkin.
You will need: 200 g pumpkin, 2 handfuls of raisins, 3 eggs, 150 ml kefir, 100 g sugar, 60 ml vegetable oil, 180 g flour, 4 tbsp. semolina, 1 tsp baking powder, 1 tsp lemon juice.
Cooking: Mix kefir, sugar and semolina, and leave for half an hour. Beat eggs, mix with kefir, and then add flour with baking powder, vegetable oil, as well as grated pumpkin, lemon juice and washed raisins. Put the dough into a mold and bake the cake for 40-45 minutes in the oven at 180 degrees.
2. Pumpkin cake on sour cream with dried fruits

For this recipe, you need to prepare pumpkin puree in advance in any convenient way.
You will need: 150 g sugar, 180 g flour, 6 tbsp. pumpkin puree, 5 tbsp. sour cream, 100 g dried fruits, 2 eggs, 1 tsp. baking powder, 50 g butter, 1 tbsp. vegetable oil.
Cooking: Whisk eggs with sugar and soft butter. Add sour cream and vegetable oil, and then pumpkin puree and chopped dried fruits. At the end, add flour and baking powder, put the dough into a mold, and bake the pumpkin muffin in the oven for about 45 minutes at 180 degrees.
3. Pumpkin Butter Cake with Lemon

The best for baking such a cupcake is a round shape with a hole in the center.
You will need: 300 g pumpkin, 50 ml lemon juice, 2 tbsp. lemon zest, 3 eggs, 150 g sugar, 1 pinch of vanillin, 1 tsp. baking powder, 1 cup flour, 80 g butter.
Cooking: Grind the pumpkin in a blender. Add eggs, soft butter, sugar, zest, lemon juice, and beat again. Then add the rest of the dry ingredients, mix the dough and put in a mold. Bake the cake in the oven for 40 minutes at 180 degrees.
4. Pumpkin Banana Cake

This cupcake is eaten to the last crumb in minutes!
You will need: 250 g pumpkin puree, 1 banana, 50 ml vegetable oil, 1 egg, 2 egg whites, 320 g flour, 150 g sugar, 1 tsp. vanilla extract, 1 tsp. baking powder, 0.5 tsp soda, 150 g of roasted nuts to taste.
Cooking: Mash the banana with a fork and whisk it with pumpkin puree, egg and egg whites. Add butter, vanilla and sugar and mix again. Then add flour with soda, knead the dough and at the end add chopped nuts. Put the mass into a mold and cook the cake in the oven for 40 minutes at 180 degrees.
5. Lean Pumpkin Cake with Candied Fruit and Ginger

An excellent recipe for delicate homemade pastries during Lent.
You will need: 320 g flour, 100 ml vegetable oil, 300 g pumpkin puree, 180 g sugar, 1 tsp. soda, 50 g nuts, 50 g candied fruits, 1 tsp. ginger and cinnamon.
Cooking: Mix pumpkin puree, butter and sugar until smooth with a blender. Add slaked soda, spices, and then sifted flour. At the end, add candied fruits and nuts to taste, mix the dough and put it in a mold. Bake the pumpkin cake for 45 minutes in the oven at 170 degrees.
6. Pumpkin Cake with Oatmeal and Honey

One of the healthiest pumpkin pie recipes on our list!
You will need: 250 g pumpkin, 50 g honey, 60 g oatmeal, 2 eggs, 2 apples, 2 tsp. baking powder, 120 g wheat flour, 50 ml vegetable oil, 0.5 tsp each. ground nutmeg, cinnamon, ginger and cardamom.
Cooking: Grind peeled apples, pumpkin and eggs in a blender until smooth. Add oil, honey and spices. Grind the oatmeal a little and add it there. Then add flour with baking powder, mix everything, put it in a mold and bake the cake for 45 minutes in the oven at 170 degrees.
7. Pumpkin cake with rice flour

There is absolutely no wheat flour in this recipe.
You will need: 650 g pumpkin, 3 eggs, 2 tbsp. sour cream, 1.5 cups rice flour, 1/2 cup oatmeal, 4 tbsp brown sugar, 100 g butter, 1 tbsp. orange peel, 0.5 tsp slaked soda, vanillin and spices.
Cooking: Bake pumpkin slices for 20 minutes until soft and grind into puree. Beat soft butter with sugar with a mixer, add eggs, sour cream, pumpkin puree, and beat again. Then add slaked soda, all spices, rice flour and oatmeal. Mix the dough and bake the cake for 50 minutes in the oven at 170 degrees.
8. Pumpkin Keks with chocolate in a slow cooker

A cupcake in a slow cooker is prepared in the same way as in the oven – without surprises.
You will need: 200 g flour, 150 g pumpkin puree, 125 g butter, 3 eggs, 150 g sugar, 5 tbsp. cocoa, 1.5 tsp baking powder, 2 pinches of vanilla.
Cooking: Beat eggs with sugar, add soft butter, and then pumpkin puree. Add the sifted flour with baking powder, mix the dough and divide into arbitrary parts. Add vanilla to one and cocoa to the other. Mix again and in a chaotic manner put the parts of the dough with a spoon into the oiled bowl of the multicooker. Cook the cake in the “Baking” mode for about 70-80 minutes.
9. Pumpkin cake with cottage cheese

This pumpkin curd cake always turns out very moist and juicy.
You will need: 200 g pumpkin, 200 g cottage cheese, 200 g sugar, 350 g flour, 150 ml vegetable oil, 100 g raisins, 2 eggs, 2 tsp. baking powder, 15 g vanilla sugar, spices.
Cooking: Stew the pumpkin until soft and grind with a blender. Mix pumpkin puree with cottage cheese and spices. Separately, beat the eggs with all the sugar and butter, and combine both masses. Then stir in the flour with the baking powder, and finally the raisins. Bake the pumpkin pie for about 45 minutes in the oven at 180 degrees.
10. Pumpkin cake with carrots

Vegetable muffins are a salvation for those who love baking, but follow proper nutrition.
You will need: 400 g pumpkin, 100 g carrots, 200 g flour, 2 tbsp. sour cream, 100 g sugar, 4 eggs, 10 g baking powder, 50 g nuts to taste, 200 g butter, spices.
Cooking: Rub the carrots and pumpkin on a fine grater, and beat the butter with a mixer with sugar. Add sour cream with eggs to the butter, and whisk again. Mix with vegetable puree, chopped nuts and spices to taste. Then add the sifted flour with baking powder, put the dough into a mold and bake the cake for about 1 hour in the oven at 180 degrees.
11. Pumpkin Cake with Apples and Cranberries

Add some honey, nuts or ginger to taste.
You will need: 2 cups flour, 1.5 cups pumpkin puree, 1 tsp. soda, 1 tsp baking powder, 2 tbsp. lemon juice, 1 tbsp. lemon peel, 140 g butter, 1-1.5 cup sugar, 1 apple, 2 eggs, 1 cup dried cranberries, spices.
Cooking: Mix flour, spices, soda and baking powder. Beat butter with sugar until fluffy. Add pumpkin puree and beat again. Then add eggs, followed by finely chopped apples, lemon zest and cranberries. At the end, add dry ingredients and lemon juice, mix the dough and put it into a mold. Bake the cake for 50 minutes in the oven at 180 degrees.
12. Pumpkin cake with semolina

Semolina gives the dough an even more loose and airy texture.
You will need: 150 g pumpkin, 260 g semolina, 2 eggs, 200 ml kefir, 120 g sugar, 1 tsp. cinnamon and vanilla sugar, 1 tsp baking powder, 2 tbsp. olive oil.
Cooking: Beat eggs until foamy and mix with kefir. Add sugar, semolina and spices, and whisk until smooth. At the end, add butter and grated pumpkin, and then – flour with baking powder. Mix the dough, put it in a mold and bake the cake for 40-50 minutes in the oven at 180 degrees.
13. Pumpkin nut cake

Such a simple pumpkin cupcake that anyone can handle it!
You will need: 150 g flour, 120 g sugar, 3 eggs, 0.5 tsp. soda, 1/2 cup walnuts, 200 g pumpkin.
Cooking: Roast and chop nuts. Rub the pumpkin on a coarse grater, and beat the eggs with sugar until foamy. Add flour and slaked soda to the eggs, and then pumpkin with nuts. Mix the dough, pour into a mold and bake the cake in the oven for about 50 minutes at 180 degrees.
14. Pumpkin cake with milk and poppy seeds

A very original recipe when the classics are tired.
You will need: 250 g pumpkin, 3 tbsp. poppy seeds, 50 ml milk, 50 g butter, 1 egg, 180 g flour, 1 tsp. baking powder, 1/2 cup sugar, 1 lemon, 2 tbsp. pumpkin seeds, spices.
Cooking: Prepare pumpkin puree in any convenient way and beat in a blender with milk and egg. Separately, mix soft butter with sugar and combine both masses. Add flour, baking powder, poppy seeds, lemon zest, pumpkin seeds and spices to taste. Knead the dough and bake the cake for about 45 minutes in the oven at 180 degrees.
15. Pumpkin Cake with Orange

Citrus sourness is never superfluous when it comes to pumpkin muffin!
You will need: 260 g flour, 1 tsp baking powder, 320 g pumpkin puree, 1 orange, 2 eggs, 90 ml vegetable oil, 160 g sugar, 120 g dried cranberries or raisins, spices.
Cooking: Beat butter with sugar and eggs. Add pumpkin puree and beat again. Then add orange juice and zest, and then all dry ingredients. At the very end, add cranberries, mix the dough, put it in a mold and bake a cake in spiritske about 50 minutes at 180 degrees.
