1. Plum compote – a classic recipe

Plums have a strong gelling property, so do not cook too concentrated compote.
You will need: 600 g plums, 150 g sugar, citric acid at the tip of a knife, 3.5 liters of water.
Cooking: Rinse the plums, cut in half, remove the pits and place in prepared jars. Pour boiling water to the top, cover and leave for 30 minutes. Then pour this water into a saucepan and boil again. Pour sugar and citric acid into jars with plums. Pour boiling water back into jars and roll compote for the winter.
2. Compote of plums, apples and apricots

The compote is aromatic and very rich.
You will need: 500 g apples, 500 g plums, 500 g apricots, 400 g sugar, 2 g citric acid, 8 liters of water.
Cooking: Rinse the fruit, remove the stones, cut and place in jars, filling no more than half. Pour boiling water over, cover with lids and leave for half an hour. Drain the water into a saucepan, add sugar, citric acid and boil for 2 minutes. Pour boiling syrup over fruits in jars, roll up and wrap in a warm blanket.
3. Plum compote with sterilization

Such preservation can be safely stored at room temperature.
You will need: 800 g plums, 500 g sugar, 4 liters of water.
Cooking: Rinse the plums, cut in half, remove the pits and place in jars. Boil water, add sugar and boil for 3 minutes. Pour syrup into fruit jars and place in a pot of hot water. Sterilize for 15 minutes, carefully remove from the pan and roll up.
4. Plum compote with apples for the winter

Cooking should be from dense fruits without worms and other damage.
You will need: 500 g plums, 500 g apples, 250 g sugar, citric acid at the tip of a knife, 5 liters of water.
Cooking: Rinse the fruits, peel, cut and place in sterilized jars. Fill them with boiling water, cover with lids and leave for 25-30 minutes. Drain the water into the pot and boil again. Pour sugar and citric acid into fruit jars. Pour in boiling water, roll up compote and turn upside down.
5. Plum compote with mint

Delicious compote with a refreshing aroma!
You will need: 600 g plums, 5 sprigs of mint, 1 cup sugar, citric acid at the tip of a knife, 3 liters of water.
Cooking: Cut the washed plums in half, remove the pits and put them in jars. Add prepared mint. Pour boiling water over, cover with lids and set aside for half an hour. Drain the water into a saucepan, add sugar, citric acid and boil for 3 minutes. Pour boiling syrup into jars and roll compote for the winter.
6. Plum and grape compote

Pamper your family with healthy preparations for the winter.
You will need: 500 g plums, 200 g grapes, 300 g sugar, 2 g citric acid, 4 liters of water.
Cooking: Remove the grapes from the brushes, and cut the plums in half and peel them. Rinse the blanks thoroughly, place in sterilized jars and fill with boiling water. Cover with lids and leave for 20-30 minutes at room temperature. Drain the water into a saucepan, add sugar, citric acid and boil for 3 minutes. Pour boiling syrup into jars, roll up and turn upside down.
7. Sugar-free plum compote

For this recipe, it is better to use sweet varieties of plums.
You will need: 500 g plums, 3 liters of water.
Cooking: Rinse the plums, cut in half, remove the pits and place in prepared jars. Fill with boiling water, put in a pot of hot water, sterilize compote for 15 minutes and roll up.
8. Fruit compote with pears and plums

Pre-wash the jars with baking soda, and then sterilize in any convenient way.
You will need: 500 g plums, 3 pears, 1 glass of sugar, citric acid at the tip of a knife, 3 liters of water.
Cooking: Prepare fruits, cut and place in sterilized jars, filling no more than half. Pour boiling water to the top, cover with lids and leave for 30 minutes. Drain the water into a saucepan, add sugar, citric acid and boil for 3 minutes. Pour boiling syrup into fruit jars, roll up and turn upside down.
9. Whole plum compote

It is not worth storing such a blank for more than 1 year.
You will need: 1.5 kg plums, 350 g sugar, 2 g citric acid, 8 liters of water.
Cooking: Place the washed plums in jars, taking up no more than half. Pour boiling water over them, cover with lids and leave to cool for half an hour. Drain the water into a saucepan and bring to a boil again. Pour sugar and citric acid into jars. Pour in boiling water and roll up.
10. Plum compote without citric acid

Over time, the color of the compote becomes even more saturated.
You will need: 1 kg of plum, 400 g of sugar, 3 star anise, 6 liters of water.
Cooking: Rinse the plums and place in sterilized jars. Add star anise, pour in boiling water and leave for 30 minutes. Drain the water into a saucepan and bring to a boil again. Add sugar, boil for 5 minutes, pour into jars of fruit and roll up compote.
11. Plum and chokeberry compote

Rowan gives the compote a beautiful ruby hue.
You will need: 500 g plums, 300 g chokeberries, 300 g sugar, 2 g citric acid, 5 liters of water.
Cooking: Rinse plums and mountain ash and place in sterilized jars. Pour boiling water over, cover with lids and leave for 30 minutes. Drain the water into a saucepan, add sugar, citric acid and boil for 3 minutes. Pour syrup into jars and roll up.
12. Pear, apple and plum compote

In winter, a cup of this compote will heal and remind you of summer!
You will need: 3 pears, 3 apples, 500 g plums, 350 g sugar, 2 g citric acid, 5 liters of water.
Cooking: Prepare the fruit, remove the seeds, chop and place in clean jars. Pour boiling water over and leave for 30 minutes. Drain the water into a saucepan and bring to a boil again. Pour sugar and citric acid into jars. Pour in the boiling syrup and roll up.
13. Plum compote with honey for the winter

You can add a little vanilla or cinnamon if you like.
You will need: 1 kg of plum, 300 g of honey, 5 liters of water.
Cooking: Rinse the plums, remove the pits and put them in prepared jars. Boil water with honey and pour it into jars of fruit. Sterilize compote for 10 minutes, roll up and turn upside down.
14. Plum compote with spices for the winter

Close the compote in small batches, no more than 6-8 liters at a time.
You will need: 500 g plums, 1 cinnamon stick, 3 allspice peas, 200 g sugar, citric acid at the tip of a knife, 3.5 liters of water.
Cooking: Rinse the plums and place in prepared jars. Boil water with spices, boil for 5 minutes and pour into jars. Cover with lids and set aside for half an hour. Drain the water into a saucepan, add citric acid, sugar and boil for 5 minutes. Pour boiling syrup into jars and roll up.
15. Plum compote with cinnamon and lemon juice

Lemon juice gives sourness and acts as a preservative here.
You will need: 800 g plums, 1 cinnamon stick, juice of half a lemon, 220 g sugar, 4 liters of water.
Cooking: Cut the washed plums, remove the pits and put them in prepared jars. Boil water in a saucepan, add cinnamon stick and boil for 5 minutes. Pour water into jars and leave for half an hour. Drain the water into a saucepan, add sugar and boil for another 3 minutes. Pour lemon juice, boiling syrup into fruit jars and roll up.
16. Plum and currant compote for the winter

You can take any currant, but with black – the color is more beautiful.
You will need: 1 kg plums, 500 g currants, 450 g sugar, 2 g citric acid, 6 liters of water.
Cooking: Cut plums in half, remove pits and place in prepared jars. Add currants, pour in boiling water and leave for half an hour under the lids. Drain the water into a saucepan, add sugar, citric acid and boil for 3 minutes. Pour boiling syrup into jars, roll up and wrap with a thick towel for a day.
17. Plum compote with cinnamon

After boiling, the cinnamon is removed from the syrup.
You will need: 1 kg of plum, 1 cinnamon stick, 300 g of granulated sugar, 0.5 tsp. citric acid, 5 liters of water.
Cooking: Rinse the plums, cut in half and remove the pits. Put the fruit in clean jars, pour boiling water over it and put it aside to cool. Drain the water into a saucepan, add the cinnamon stick and boil for 5 minutes. Pour sugar and citric acid into jars. Pour in boiling syrup, roll up compote and turn upside down.
18. Plum, pear and viburnum compote

This compote recipe is especially relevant in late autumn!
You will need: 500 g plums, 500 g pears, 1 glass of viburnum, 400 g sugar, 0.5 tsp. citric acid, 6 liters of water.
Cooking: Remove the viburnum berries from the brushes, cut the fruit into small pieces. Place the blanks in sterilized jars, filling no more than half the volume. Boil water with sugar and citric acid in a separate saucepan, boil for 4 minutes and pour into jars. Sterilize for 10 minutes and roll up.
19. Compote of dogwood, plums and mint

The final result directly depends on the quality of water.
You will need: 500 g plums, 1 cup dogwood, 5 sprigs of mint, 200 g sugar, citric acid at the tip of a knife, 4 liters of water.
Cooking: Prepare dogwood, plum, mint and place in sterilized jars, filling no more than half. Pour boiling water to the top, cover with lids and leave for 20-30 minutes. Drain the water into a saucepan and boil for 3 minutes. Pour citric acid and sugar into jars. Pour in boiling syrup, roll up compote and wrap it for a day with a thick towel.
20. Plum, pear and grape compote

So that the grapes do not burst from boiling water, pierce each berry with a needle.
You will need: 500 g plums, 500 g pears, 300 g grapes, 400 g sugar, 6 liters of water.
Cooking: Prepare plums, pears, grapes and place in clean jars, filling no more than half. Pour boiling water over and set aside to cool. Drain the water into a saucepan, add sugar and boil for 3 minutes. Pour boiling syrup into jars and roll up.
