
From cauliflower, you can cook just an unimaginable number of a variety of dishes. Most of them are not ashamed to even put on the festive table. We have collected 12 quick and delicious recipes for you!
1. Casserole “Minute”

This delicious and juicy cauliflower casserole is prepared very quickly. Even a beginner can handle it!
You will need: 1 kg of cauliflower inflorescences, 2 – 3 eggs, 0.75 cups of fresh milk, 120 g of hard cheese, salt, spices.
Cooking: Dismantle the cabbage into small inflorescences and boil in lightly salted water for 12 minutes. Transfer the cauliflower to a glass baking dish and pour over the mixture of beaten eggs, grated cheese, milk and seasonings. Cook in the microwave for 10 minutes at maximum power, or in the oven for about half an hour.
2. Cutlets “Colored”

Cutlets can be not only from pork or ground beef. From cauliflower, they turn out more tender, more aromatic and healthier!
You will need: 1 kg cauliflower, 5 tbsp. l. wheat flour, 2 onions, 1 cup oatmeal, 1 package of breadcrumbs, salt, ground pepper and other seasonings.
Cooking: Boil the cauliflower in salted water for 5 to 7 minutes. Remove the florets from the boiling water and let them cool completely. Pour the oatmeal with the remaining boiling cabbage broth so that the liquid slightly covers the flakes. Infuse under the lid for 15 minutes, waiting for the swelling of the cereal.
Pass cabbage inflorescences with onions, oatmeal through a meat grinder. Add flour, salt and pepper to the resulting mass and mix well. With wet hands, form flat oval cutlets, roll them on all sides in breadcrumbs, and then spread them on a hot frying pan with vegetable oil. Fry on both sides until golden brown, the fire should be below medium.
3. Vegetable rice

You will be surprised, but cauliflower can be turned into … rice without much difficulty. And yes, it is very tasty!
You will need: 450 g cauliflower, 2 egg whites, 1 onion, garlic to taste and spices.
Cooking: Disassemble the cabbage into inflorescences, grind in a blender to a fraction of rice cereal. This will only take a few seconds. Alternatively, if there is no blender, just grate the vegetable. Fry a finely chopped onion in oil, add garlic passed through a press. Pour in the whites, fry while stirring until the egg whites begin to break into small pieces. Now add cabbage, salt and pepper. Fry for 5 minutes and remove from stove. Serve as a separate dish or as a side dish.
4. Braised cauliflower with vegetables

This dish is a nutritionist’s dream. Prepare stewed cabbage with vegetables for dinner, and then there will definitely be no problems with extra pounds!
You will need: 1 fork of cauliflower, 1 red bell pepper, 1 onion and 1 carrot, 200 ml of milk, 2 tbsp. l. tomato puree, salt and seasonings, choose according to your preferences.
Cooking: Cut the onion, carrot and sweet bell pepper into thin strips and fry in oil. Put a spoonful of tomato paste and mascara all together for about five minutes. Then fill the contents of the pan with milk. Wait until it boils and add the chopped cauliflower, not very finely. Simmer covered for 15 minutes. Salt and pepper the dish, stir and let it boil for another five minutes.
5. Cauliflower Chicken

The combination of juicy chicken flavors with tender cauliflower inflorescences and tomato sauce is simply amazing. Be prepared for guests to demand more!
You will need: 1 kg of cauliflower, 1 chicken fillet, 230 g of hard cheese, 2 ripe tomatoes, 1 red bell pepper, 2 cloves of garlic, 1 onion, 3 tbsp. l. tomato paste, 0.25 tsp. sugar, salt and spices to taste, a few sprigs of fresh herbs.
Cooking: Boil the cabbage in well-salted water for 7 minutes. Cut the fillet into pieces and fry in vegetable oil over high heat until golden brown. Prepare a baking dish, put half of the boiled cabbage on the bottom, then lay out the chicken meat, pour over the vegetable sauce, then again a layer of cabbage and pour the remaining sauce. Send the form to the oven, cook for about half an hour at 195 degrees Celsius.
For the sauce, fry the onion with garlic and finely chopped tomatoes. Then add pepper. Carcasses for 8 minutes. Pour in a mixture of 1 cup of cabbage broth, tomato paste, salt, sugar and hot pepper. Boil everything together for a couple of minutes and remove from orot.
6. Cauliflower under a cheese coat

A very tasty dish, consisting of only three ingredients, is prepared easily and quickly. The taste is divine!
You will need: 300 g of hard cheese, 1 kg of cauliflower, 1 can of mayonnaise.
Cooking: Dip the cabbage disassembled into inflorescences in boiling salted water. After 7 minutes, put it in a colander. Then put the cabbage in a baking dish, a little salt and mayonnaise fields. Sprinkle all this with grated cheese and put in the oven. Wait 15 minutes and a delicious, fragrant, crispy dinner is ready.
7. Cauliflower in batter with white wine

Wine plays an important role in this recipe: alcohol will not allow the fat to soak into the batter during frying.
You will need: 1 fork of cauliflower, 150 ml of fresh milk, 2 eggs, 20 ml of dry white wine, 50 ml of soda, salt and spices to taste, 5 drops of lemon juice, 2 – 3 tbsp. l. with a heap of flour.
Cooking: To get started, start making the batter. Separate the whites from the yolks. Beat egg whites with lemon juice and a pinch of salt until stiff. Mix the yolks with soda, white wine, add a little vegetable oil. Salt and pepper and beat well. Pour the sifted flour, mix until smooth and add protein foam.
Boil the cabbage in water with the addition of milk (so the vegetable does not lose its snow-white color), take it apart into inflorescences, dry it and sprinkle with flour. Dip each inflorescence in batter and fry in plenty of oil.
8. Gratin “Autumn Surprise”

A wonderful dish of French cuisine should definitely appear on your table this fall!
You will need: 350 g of cauliflower, 250 g of broccoli, 230 ml of cream, 2 chicken eggs, 300 g of hard cheese, ground nutmeg on the tip of a knife, salt and spices, choose to taste.
Cooking: Boil both types of cabbage in lightly salted water for 12 minutes after the liquid boils. In the meantime, beat the eggs with a fork, gradually pour in the cream and add a third of the grated cheese on a fine grater. Salt and pepper to taste, add nutmeg. Put cabbage in a baking dish, fill it with egg-cream mass, sprinkle with cheese and bake for half an hour at 210 degrees.
9. Marinated cauliflower

You can crunch on delicious pickled cauliflower at any time of the year. The perfect appetizer for meat or fried potatoes. It’s very easy to prepare!
You will need: 1 large fork of cauliflower or a couple of small ones, 1 large beetroot, 1 carrot, 2 heads of garlic, 170 ml of vinegar, half a glass of vegetable oil, 2.5 tbsp. l. salt, 10 black peppercorns, 5 allspice peas, 2 tsp. sweet paprika, half a glass of sugar, 0.5 pod of hot chili pepper, 1.2 liters of warm water.
Cooking: Grate root vegetables for Korean carrots. Chop the garlic with a knife. In a separate container, dissolve salt and sugar in water, then pour in vegetable oil and vinegar. Put cabbage and vegetables in layers in a jar, sprinkle with garlic and spices. Then pour the marinade, cover with a plastic lid and put in a cold place for five days.
10. Cauliflower stuffed “Hedgehog”

Stuffed cauliflower with meat and mushrooms is a full-fledged independent dish, to which you can serve only your favorite sauce and fresh vegetable salad!
You will need: 2 small forks of cauliflower, 400 g of assorted minced meat, 2 onions, 2 potatoes, 250 g of mushrooms, 2 cloves of garlic, 2 tbsp. l. milk, 3 tbsp. l. vegetable oil, salt and pepper to taste, 1 bunch of any fresh herbs.
Cooking: Pour a spoonful of milk into a pot of boiling water, add salt and dip the cabbage inflorescences. Boil for 10 minutes. Onions, garlic, potatoes, grated on a fine grater. Finely chop the mushrooms and fry in oil. Add vegetables and mushrooms to the minced meat, salt and season to your liking, add chopped greens, beat in an egg, pour in milk and vegetable oil, preferably odorless. Put the minced meat in the refrigerator for 15-20 minutes.
Divide the chilled minced meat into two parts, roll a ball from each, put it into a mold. Poke meat “balls” from all sides with cabbage inflorescences. Lightly coat the resulting “hedgehogs” with oil and put in the oven for 25 minutes. During the baking process, pour over the secreted juice.
11. Cabbage pancakes

You may be surprised, but cauliflower pancakes are very fluffy, soft and incredibly tasty.
You will need: 800 g cauliflower, 2 eggs, 3 tbsp. l. flour and mayonnaise, 0.25 tsp. baking powder.
Cooking: Cut the forks of cabbage into small inflorescences, no more than a cherry in size. Put in a saucepan, pour a little salted water and leave to soak for an hour. Then drain the water, and let the inflorescences dry. Put the cabbage in a blender bowl, chop well, beat in the eggs and beat again. Pour the sifted flour with baking powder and add mayonnaise. Stir. Spoon the dough onto a hot frying pan with vegetable oil, fry until golden brown on both sides.
12. Cabbage pizza

Instead of a dough cake, you can safely use cauliflower. So your favorite pizza will be safe for the figure and even more delicious!
You will need: 1 medium fork of cauliflower, 2 eggs, 200 g of hard cheese, 250 g of boiled chicken, 3 tomatoes, salt and spices to taste, 2 cloves of garlic, tomato sauce, fresh herbs.
Cooking: Grate the cabbage or chop well with a blender. Add 150 g of cheese grated on a fine grater, garlic passed through a press. Mix thoroughly and lay out in the form of a circle on a baking sheet covered with parchment. Top with sauce, spread thin circles of tomatoes and finely chopped chicken meat. Sprinkle with salt and spices, distribute the remaining cheese and send to the oven.
