1. Classic cheesecakes

The most classic syrniki recipe in which you can add anything to your taste – dried fruits, candied fruits or chocolate!

You will need: 500 g cottage cheese, 2 eggs, 6 tbsp. flour, 2 tbsp. Sahara.

Cooking: Mash the cottage cheese with a fork or beat with a blender so that the cheesecakes are airy. Add eggs, sugar and mix well. The amount of flour varies according to the density you want to get – about 5 tbsp. Form curd balls, roll them in flour, flatten and fry in a pan on both sides for literally 1-2 minutes.

The dough is dense, elastic, but very tender.

You will need: 300 g cottage cheese, 4 tbsp. corn flour, 1 egg, 1 tbsp. zest, 1 tbsp. Sahara.

Cooking: Thoroughly grind dry cottage cheese with egg and sugar until smooth. Add lemon zest, vanilla, cinnamon or almond extract to taste. Mix the flour into the dough and knead, make elastic washers, roll a little more in flour and you can fry.

Semolina is much healthier than regular flour and is an excellent substitute for it.

You will need: 400 g cottage cheese, 5 tbsp. semolina, 3 tbsp. sugar, 2 eggs, 0.5 tsp. soda, a pinch of salt.

Cooking: Put cottage cheese in one container, 4 tbsp. semolina, sugar, salt and eggs, and leave it for half an hour so that the cereal swells. Add slaked soda and leave for a couple more minutes. After that, knead the dough, form cheesecakes, roll again in the remaining semolina and fry in a pan.

You will need: 400 g cottage cheese, 1 tbsp. rice flour, powdered sugar and starch, 2 eggs, a pinch of salt.

Cooking: Beat the eggs with sugar and salt, add the mashed cottage cheese and mix. Add flour with starch, mix and leave the dough in the refrigerator for 2-3 hours. You can even cook it from evening to morning. Form and fry cheesecakes in a pan as usual, but then put them in the oven for 10 minutes at 200 degrees.

You will need: 450 g cottage cheese, 20 g coconut flour, 30 g sugar, 2 eggs.

Cooking: Grind the cottage cheese or beat it with a blender, simultaneously draining the excess liquid. Mix it with eggs, sugar and salt, and then add coconut flour and knead the dough.

Form and fry cheesecakes with a minimum amount of oil, but turn very carefully – they are too tender. If you want a denser texture – bring them in the oven at 180 degrees for another 7 minutes.

You will need: 200 g cottage cheese, 3 eggs, 3 tbsp. oatmeal, 3 tbsp sugar.

Cooking: Thoroughly mix the cottage cheese with eggs and sugar, and then add the oatmeal and knead the dough. Forming such cheesecakes as usual will not work, so put them on the pan with a spoon. They are fried literally for a minute and a half per side.

A popular Ukrainian dessert has long gone beyond the boundaries of its native city and country.

You will need: 250 g of cottage cheese, 90 g of butter and sugar, 2 eggs, 50 g of sour cream, 0.5 tbsp. semolina, 1.5 tbsp. cocoa, a handful of raisins, zest.

Cooking: Separate the yolks, beat them with 3/4 of sugar until white, add cottage cheese, semolina and 2/3 of soft butter grated through a sieve. Knead the dough, add the zest with raisins and slowly stir in the egg whites whipped to peaks.

Bake the cheesecake at 180 degrees for about 50 minutes, and during this time bring the icing from sour cream, cocoa, butter and sugar residues to a boil. Send the glazed cheesecake to the refrigerator for 5 hours so that it grabs.

You will need: 600 g cottage cheese, 2 eggs, 3/4 cup flour, 4 tbsp. sour cream, 100 g butter, half a glass of milk, 2 tbsp. honey, 1 tsp salt.

Cooking: Grind the cottage cheese with 2/3 of the melted butter, add pre-beaten eggs, flour and salt, knead the dough. Form and fry balls like regular cheesecakes.

Melt the remaining butter in a frying pan, add honey, milk, sour cream and mix the sauce. When it boils, put cheesecakes in it and simmer under the lid for 3 minutes.
