
You can talk about the benefits of chokeberry for a very long time – it is perfectly absorbed, contains many vitamins and is rich in pectins. And it can also be easily prepared for the winter, and in a wide variety of forms. We tell you 20 delicious recipes!
1. Frozen chokeberry

Chokeberry is good because it practically does not lose nutrients when frozen.
You will need: 600 g of chokeberry.
Cooking: Rinse the chokeberry and dry it on paper towels. Put the berries on a baking sheet in a single layer and send to the freezer. When the rowan is frozen, transfer it to zip bags or containers, and put it back in the freezer for storage.
2. Chokeberry syrup for the winter

You can add water to such a syrup and drink it instead of compote, or use it in desserts.
You will need: 150 g of chokeberry, 20 cherry leaves, 150 g of sugar, 2 cups of water, 0.5 tsp. citric acid.
Cooking: Pour cherry leaves with water, bring to a boil and add citric acid. Then add chokeberry, boil for 5 minutes after boiling and strain the broth. Add sugar to the broth, boil the syrup to the desired density and pour it into sterile jars.
3. Chokeberry with sugar in the freezer

You can freeze it in small portions or in containers – like ice cream.
You will need: 700 g of chokeberry, 600 g of sugar.
Cooking: Sort, wash and dry the mountain ash. Grind it in a blender with sugar until smooth, and then pour the workpiece into containers and send it to storage in the freezer.
4. Chokeberry jam

A simple classic jam for tea or for filling.
You will need: 500 g of chokeberry, 700 g of sugar, 1.5 cups of water.
Cooking: Rinse the rowan, fill it with water and boil until soft. Mash the chokeberry with a crush and bring to a boil again. Add sugar, boil the jam for another 15-20 minutes and roll it up in sterile jars for the winter.
5. Aronia and apple jam

Both ingredients are rich in pectin, so the jam thickens beautifully.
You will need: 1 kg of chokeberry, 1.5 kg of sugar, 600 g of apples, 2 cups of water.
Cooking: Peel and cut the apples, sort out the chokeberry and grind everything in a blender with water. Add sugar, bring the workpiece to a boil and boil the jam for 20-30 minutes over low heat. Roll it up in sterile jars.
6. Grated chokeberry with sugar without cooking

It is better to store such a blank in a cellar or refrigerator.
You will need: 1 kg of chokeberry, 1 kg of sugar.
Cooking: Grind chokeberry with sugar in a blender. Heat the workpiece a little and stir until the sugar dissolves. Pour it into sterile jars.
7. Compote of ranetki and chokeberry without sterilization

In each jar, you can add some fragrant spices, like cinnamon or star anise.
You will need: 1 kg of ranetki, 700 g of chokeberry, 4 liters of water, 600 g of sugar.
Cooking: Arrange ranetki and mountain ash in jars washed with soda. Pour boiling water over, cover with lids and leave for 15 minutes. Drain this water into a saucepan, add sugar to it and boil again. Pour the boiling syrup back into the jars and roll up for the winter.
8. Aronia marmalade

Roll marmalade in sugar and store in glass containers in a dry place.
You will need: 1 kg of chokeberry, 400 ml of water, 600 g of sugar.
Cooking: Fill the chokeberry with water, boil until soft and rub through a sieve. Add sugar, bring to a boil and boil the mass until thick. Pour into a form moistened with ice water in a not very thick layer and put in the refrigerator until it solidifies. Cut the finished marmalade.
9. Chokeberry with honey for the winter

A very valuable preparation for strengthening immunity and well-being.
You will need: 1 kg of chokeberry, 800 g of honey.
Cooking: Rinse the mountain ash, then pour boiling water over it, rinse again and dry. Grind the berries in a blender, mix with honey until smooth, pour into sterile jars and store in the refrigerator.
10. Chokeberry juicefor the winter

We recommend that you pack the juice in small jars or bottles so that it does not stand open for a long time.
You will need: 1 kg of chokeberry, 100 g of sugar, 400 ml of water.
Cooking: Squeeze the juice from the chokeberry in any convenient way. Add water and sugar to taste, bring the juice to a boil and boil for 5-7 minutes. Roll it up in sterile jars.
11. Aronia jelly with gelatin

Delicious thick jelly and completely without astringency – the perfect dessert.
You will need: 1 cup chokeberry, 3/4 cup sugar, 2 tbsp. gelatin, 4 cups of water, 2 pinches of citric acid.
Cooking: Squeeze the juice from the chokeberry, and pour the cake with boiling water, boil for 10 minutes and strain. Add sugar and citric acid to the broth, and boil until the sugar dissolves. Dilute gelatin in water according to the instructions and then mix it with broth and raw juice. Bring everything together to a boil and roll the jelly into sterile jars for the winter.
12. Chokeberry sauce with garlic and basil

An excellent sauce for meat or poultry, which will last all winter without any problems.
You will need: 700 g chokeberry, 60 g garlic, 30 g basil, 1 tsp. cinnamon, ground black pepper and coriander, 3 tbsp. lemon juice, 1 tbsp. salt, 100 ml of water, 3 tbsp. Sahara.
Cooking: Fill the blackberry with water, boil for 10-15 minutes and grind with a blender. Chop garlic and basil separately. Mix all the ingredients together, bring the sauce to a boil, boil for 2 minutes and roll into sterile jars.
13. Aronia jam with carrots

Without this original recipe, our selection would be incomplete!
You will need: 1 kg of chokeberry, 200 g of carrots, 300 g of apples, 1 kg of sugar, 2 handfuls of cherry leaves, 1 lemon, 600 ml of water.
Cooking: Pour cherry leaves with 500 ml of water and boil for 20 minutes after boiling. Strain the broth, add sugar to it and boil the syrup. Put the chokeberry berries in the syrup, bring to a boil again and boil for 10 minutes. Let the workpiece cool down.
Peel and randomly cut carrots and apples. Pour the carrots with the remaining water and simmer for 10 minutes. Add apples and stew until soft, and then chop with a blender.
Boil the mountain ash for another 15 minutes, mash a little with a crush and add apple-carrot puree. Boil the jam for another 15 minutes, pour in the lemon juice and after 2-3 minutes roll it into sterile jars.
14. Fruit drink from chokeberry and cranberry for the winter

Adjust the amount of sugar or honey to taste.
You will need: 300 g of chokeberry, 300 g of cranberries, 2 pinches of citric acid, 100 g of sugar, 2-3 liters of water.
Cooking: Grind cranberries and chokeberries in a blender and rub through a sieve. Pour the cake with water, add sugar and bring to a boil. Boil for 5 minutes and strain the decoction. Mix it with juice, add citric acid and pour the juice into clean, dry jars. Sterilize them for another 5-7 minutes and roll them up.
15. Compote of chokeberry with orange for the winter

One of the most delicious and at the same time simple combinations.
You will need: 600 g chokeberry, 1 orange, 400 g sugar, 0.6 tsp. citric acid, 2.5 liters of water.
Cooking: Put chokeberry and sliced orange in a sterile jar. Pour boiling water over them and leave for 20 minutes under the lid. Drain this water, boil it again with sugar, add citric acid and pour it back into the jar. Roll up compote for the winter.
16. Adjika from chokeberry

Such adjika will become an independent snack or sauce for your favorite dishes.
You will need: 1 kg of chokeberry, 1 head of garlic, 2 red hot peppers, 125 g of sugar, 60 ml of vinegar, 2 tsp. suneli hops, 3 tsp salt, 0.5 tsp cinnamon.
Cooking: Pass through a meat grinder or grind mountain ash, garlic and pepper in a blender. Add all other ingredients and bring the mixture to a boil. Boil for 7-10 minutes, pour in vinegar and roll adjika into sterile jars.
17. Tincture of chokeberry on vodka

Ready tincture is best stored in a dark, cool place.
You will need: 500 g of chokeberry, 500 ml of water, 3 tbsp. honey.
Cooking: Pour vodka with chokeberry berries and add honey. You can also add spices to taste. Leave the tincture covered for 2-3 months in a dark, cool place, shaking it occasionally, then filter and bottle.
18. Dried chokeberry in sugar

Dried chokeberry in its pure form is tart, but in syrup – just right.
You will need: 1.5 kg of chokeberry, 1 kg of sugar, 2 cups of water, 1 tsp. citric acid.
Cooking: Boil water with sugar and boil until dissolved. Add citric acid to the syrup and then add rowan berries. Bring to a boil again and boil for 25 minutes. Throw the berries in a colander, let them drain and dry in an electric dryer according to the instructions. You can also put them in one layer on a baking sheet and dry in the oven at 40-50 degrees.
19. Jam from chokeberry for the winter

Tasty, thick and very healthy jam, although it takes a long time to cook.
You will need: 1 kg of chokeberry, 200 ml of water, 1 kg of sugar.
Cooking: Fill the chokeberry with water, mash with a crush and sprinkle with sugar. Bring to a boil and cook jam until thick, about 30-40 minutes, stirring occasionally. Roll the jam into sterile jars.
20. Aronia marshmallow

For a more original taste – you can add red rowan here.
You will need: 600 g chokeberry, 200 g sugar.
Cooking: Freeze the chokeberry, and then grind it with a blender, mix with sugar to taste and bring the mass to a boil. Pour the blank into the dryer trays or onto a baking sheet covered with parchment.
Dry the marshmallow in the dryer according to the instructions or in the ajar oven at 60-80 degrees for about 6 hours. Cut, mix with powdered sugar and store in airtight glass jars or containers.
