
If you love eggplant, then another selection of great eggplant-based snacks will definitely not hurt you. This time we offer to cook spicy eggplants in Chinese style in all sorts of variations. And we have already collected 10 of the most successful recipes for you!
1. Chinese eggplant with honey and soy sauce

A wonderful balance of all tastes at once – sour, sweet and salty.
You will need: 1 eggplant, 2 tbsp. brown sugar, 2 tbsp. soy sauce, 1 tbsp. apple cider vinegar, 1 tsp honey, 1 tbsp. starch, 50 ml vegetable oil, 1 pinch of chili flakes.
Cooking: Cut the eggplant into cubes and fry them for a couple of minutes over high heat until golden. Pour in half a glass of water and simmer for another 15 minutes, and then set aside. Mix all the remaining ingredients and heat the sauce in the same oil for 3-4 minutes. Put eggplant in it, simmer for another 2-3 minutes and remove from heat.
2. Eggplant with Chinese bell pepper

Soft and very juicy vegetables are just the perfect solution.
You will need: 5 eggplants, 2 bell peppers, 2 tbsp. starch, 1/2 cup vegetable oil, 1/4 cup soy sauce, 5 garlic cloves, 1 tsp. ground ginger, 2 tsp Sahara.
Cooking: Cut the eggplant into cubes, roll in starch and fry them in oil over high heat until golden brown. Drain excess oil, add chopped pepper, soy sauce, minced garlic, ginger and sugar. Put out everything under the lid for another 5-7 minutes.
3. Chinese-style eggplant for the winter

Favorite sweet and sour eggplant, but now also for long-term storage.
You will need: 5 eggplants, 2 carrots, 1 head of garlic, 2 bell peppers, 1/2 onion, 1 glass of water, 1 tbsp. starch, 2 tbsp. sugar, 1 tbsp. vinegar, 1 tsp ginger, spices.
Cooking: Cut the eggplant into medium pieces and fry until golden. Set them aside and lightly fry a spoonful of sugar in the same oil. Put the rest of the vegetables cut into strips and fry for 3-4 minutes.
Add garlic, remaining sugar and spices to taste, and fry for 1 more minute. Pour in vinegar – a little more to taste. Lay eggplant with vegetables. Separately, dilute the starch in water, pour in the same and simmer the workpiece until the liquid thickens. Arrange the eggplant in Chinese style in sterilized jars and roll up.
4. Chinese Eggplant with Tomatoes

We recommend using sweet cherry tomatoes for this recipe.
You will need: 700 g eggplant, 170 g bell pepper, 150 g cherry tomatoes, 50 g onion, 70 ml soy sauce, 2 tbsp. sugar, 1 tsp salt, 70 g starch, 4 garlic cloves, 20 g ginger, 1 tsp. chili pepper, 1 tbsp. tomato paste, 100 ml of water, 150 ml of vegetable oil, 5 g of cilantro.
Cooking: Cut the eggplant into cubes, roll them well in starch and fry in oil for about 4 minutes over medium heat. Set aside and fry the chopped peppers and tomatoes in the same place for another 2 minutes. Drain excess oil.
In a clean skillet, sauté the chopped onion, garlic and ginger separately. Add tomato paste, soy sauce, 1 tsp. starch, water, sugar, chili and spices to taste. Stew the sauce for 2 minutes, put vegetables in it and stew for another 2 minutes.
5. Eggplant with Chinese Rice Vinegar

When serving, sprinkle eggplant with sesame seeds and chopped green onions.
You will need: 4 eggplants, 6 tbsp. starch, 1 chili pepper, 2 bell peppers, 2 onions, 2 tbsp. sugar, 6 tbsp. soy sauce, 3 tbsp. rice vinegar, 5 cloves of garlic, 70 ml of water, 1 tsp. tomato paste.
Cooking: Cut the eggplant into medium pieces, roll them in starch, fry over high heat in a large amount of oil and drain in a colander. Mix soy sauce, a spoonful of oil, vinegar and sugar. Separately, dilute in water 1 tsp. starch.
Fry chopped vegetables with garlic and chili in a pan for about 3-4 minutes. Add the eggplant, soy sauce, tomato paste and water with starch, stir and simmer the dish for another 2 minutes. Take the pan off the heat.
6. Eggplant with Chinese ginger

You can add more or less ginger to your taste.
You will need: 1 eggplant, 75 ml soy sauce, 1 tbsp. balsamic, 4 garlic cloves, 20 g ginger, 1 tsp. starch.
Cooking: Cut the eggplant into cubes and fry over high heat until golden brown. Add minced garlic and ginger and cook for 1 more minute. Mix soy sauce, balsamic, starch and spices to taste. Pour over eggplant, simmer until thickened and remove from heat.
7. Eggplant with Chinese ketchup

A quick and convenient cooking method even for novice housewives.
You will need: 2 eggplants, 2.5 tbsp. starch, 2 tbsp. ketchup, 2 tbsp. soy sauce, 1 garlic clove, 1 tsp. sugar, 1 tbsp. sesame seeds, 50 ml of water.
Cooking: Cut the eggplant into cubes, roll in starch and fry over high heat until golden in plenty of oil. Throw them in a colander. Dilute another 0.5 tsp. spoons of starch in water.
Put chopped garlic in a pan with a little oil. After 20 seconds, add ketchup, soy sauce, sugar, sesame seeds and starch water. Stew the sauce for 2 minutes, put the eggplant and stew for another 2 minutes. Turn off the stove.
8. Eggplant with Chinese potatoes

Very hearty and tasty vegetable stew in Chinese style.
You will need: 2 eggplants, 3 potatoes, 2 carrots, 2 bell peppers, 1 onion, 1 bunch of green onions, 50 ml of water, 1 tbsp. tomato paste, 2 tbsp. apple cider vinegar, 2 tbsp. soy sauce, 1 tbsp. honey, spices, 40 g of starch.
Cooking: Cut the eggplant into cubes, roll them in starch and fry over high heat. Separately, fry the chopped potatoes until tender. And separately – onions with carrots and peppers. Heat some oil and add tomato paste, honey, soy sauce and vinegar.
Add spices to taste. Dilute 1 tsp. starch in water and pour in the same. Stew the sauce for a minute, put all the vegetables in it, add chopped green onions and simmer everything together for another 3 minutes.
9. Eggplant with Chinese zucchini

An original lean dish with a very bright and rich taste.
You will need: 1 eggplant, 1 zucchini, 2 bell peppers, 1 onion, 1 tbsp. starch, 1 tbsp. soy sauce, 1 tbsp. rice vinegar, 1 garlic clove, 1 tsp. ginger, spices.
Cooking: Cut the eggplant into cubes, roll in starch, fry until golden brown over high heat and set aside. Saute the onion in the same pan for a couple of minutes. Add peppers and zucchini, and fry for a couple more minutes. Return the eggplant and continue to fry everything together for another 3 minutes. Add the remaining ingredients, mix and after 1-2 minutes remove the dish from the heat.
10. Eggplant with Chinese beef

You can take other meat, but in the classic recipe it is beef.
You will need: 2 eggplants, 700 g beef, 2 bell peppers, 2 carrots, 1 hot pepper, 1 onion, 2 tbsp. soy sauce, 1 tbsp. lemon juice, 1 tbsp. sugar, spices.
Cooking: Cut the beef into strips and lightly fry it. Separately chop all the vegetables into strips. Fry the eggplant and also set aside. Fry the rest of the vegetables, add beef and eggplant to them, and fry together for a couple more minutes. Mix soy sauce, sugar, lemon juice and spices to taste, pour over vegetables and simmer for 5 minutes. Remove the dish from the fire.
