
In the season of cheap vegetables, be sure to prepare a couple of jars of tomatoes in your own juice for the winter. They can be served as an appetizer or used as the base for a variety of dishes and sauces. We share 20 delicious recipes!
1. Tomatoes in their own juice – a classic recipe

If the tomatoes are scalded with boiling water, then the peel will be removed much easier.
You will need: 10 kg of tomatoes, 2 bay leaves, 4 peas of allspice, 40 g of sugar, 60 g of salt.
Cooking: Sort the tomatoes into small and large. Large ones – cut and pass through a juicer, add spices, salt, sugar and boil for 10 minutes. And peel the small tomatoes and put them in jars, pour boiling tomato juice and sterilize for 15 minutes. Roll it up, turn it upside down and leave it warm for a day.
2. Tomatoes in their own juice with spices and garlic

Replace the juicer with a meat grinder, and wipe the finished juice through a sieve.
You will need: 12 kg of tomatoes, 5 cloves of garlic, 1 tsp. a mixture of peppercorns, 2 cloves, 3 bay leaves, 4 tbsp. sugar, 3 tbsp. salt.
Cooking: Sort the tomatoes into two categories: large and small. Large ones – cut and pass through a juicer. Mix the resulting tomato juice with sugar, salt, spices and boil for 10 minutes. Place small tomatoes in prepared jars, add chopped garlic cloves and pour over everything with hot juice. Sterilize for 15 minutes, roll up and wrap for a day with a warm blanket.
3. Tomatoes in their own juice with vinegar and salt

Recipe for double filling.
You will need: 10 kg of tomatoes, 50 ml of vinegar, 2 tbsp. salt, 3 liters of water.
Cooking: Sort the tomatoes into small and large. Small tomatoes – put in sterilized jars, pour boiling water over them and leave for 30 minutes. Large tomatoes – cut and pass through a juicer. Pour the tomato juice into a saucepan, add salt and boil for 10 minutes. Drain the water from the jars, and pour vinegar and hot juice into the tomatoes. Roll up and turn upside down.
4. Tomatoes in their own juice with citric acid and garlic

In terms of weight – citric acid will need 2 g.
You will need: 10 kg of tomatoes, 4 cloves of garlic, 0.5 tsp. citric acid, 50 g of salt.
Cooking: Sort the tomatoes: small and dense – leave whole, and ripe and large – pass through a juicer. Mix the juice with citric acid, salt and boil for 10 minutes. Peel whole tomatoes and put them together with chopped garlic in sterilized jars. Fill them with hot tomato juice and sterilize for 15 minutes. Carefully remove the jars, roll up and turn upside down.
5. Tomato slices in their own juice for the winter

An excellent preparation of tomatoes for all occasions!
You will need: 8 kg of tomatoes, 4 bay leaves, 10 black peppercorns, 2 tbsp. sugar, 40 g salt.
Cooking: Take half of the tomatoes, and squeeze the juice from the rest. Pour the tomato juice into a saucepan, add salt, sugar, spices and boil for 15 minutes. Cut whole tomatoes in half or quarters, place in clean jars, pour boiling juice, sterilize for 10 minutes and roll up.
6. Tomatoes in their own juice without vinegar and sterilization

This option will definitely please you with its simplicity and delicious result.
You will need: 10 kg of tomatoes, 4 bay leaves, 3 black peppercorns, 2 cloves, 30 g of sugar, 45 g of salt, 3 liters of water.
Cooking: Sort the tomatoes into two parts. Small ones – peel, put in sterilized jars, pour boiling water to the top and put aside for 30 minutes. And large and overripe tomatoes – skip through a meat grinder. Mix the resulting tomato juice with spices, sugar, salt and boil for 10 minutes. Drain water from small tomatoes, pour boiling juice into jars and roll up for the winter.
7. Tomatoes with Bulgarian and hot peppers in their own juice

All vegetables should be juicy and beautiful!
You will need: 10 kg of tomatoes, 1 kg of bell pepper, 1 pod of hot pepper, 3 bay leaves, 5 allspice peas, 60 ml of vinegar, 1 tbsp. sugar, 2 tbsp. salt.
Cooking: Peel and cut the bell pepper into small pieces, and chop the hot pepper together with the seeds. R tomatoes Sort into small and large. Pour spices into prepared jars, put pieces of bell pepper and small tomatoes. Cut large tomatoes and pass through a juicer. Pour the tomato juice into a saucepan with a thick bottom, add sugar, salt, hot pepper and boil for 10 minutes. Add vinegar and pour into jars with vegetables. Sterilize for 15 minutes, roll up and turn upside down.
8. Tomatoes in own juice with basil and coriander

Such a blank is perfectly stored even just in the pantry.
You will need: 8 kg tomatoes, 50 g basil, 1 tsp. ground coriander, 3 tbsp. apple cider vinegar, 40 g sugar, 25 g salt.
Cooking: Sort the tomatoes into small and large. Small tomatoes, along with sprigs of basil, are placed in sterilized jars, and large ones are cut and passed through a juicer. Mix tomato juice with ground coriander, sugar, salt and boil for 10 minutes. Pour boiling juice into jars with tomatoes and sterilize for 10 minutes. Carefully remove the jars from the sterilization bath, add vinegar and roll up for the winter.
9. Cherry tomatoes in their own juice with balsamic vinegar

It tastes better than regular vinegar!
You will need: 5 kg cherry tomatoes, 5 kg large tomatoes, 1 tsp. a mixture of peppercorns, 2 bay leaves, 50 ml of balsamic vinegar, 1 tbsp. sugar, 2 tbsp. salt, 3 liters of water.
Cooking: Place cherry tomatoes in clean jars, cover with boiling water and set aside for 20 minutes. Cut large tomatoes and pass through a juicer. Mix the resulting juice with sugar, salt and spices, boil for 10 minutes. Drain the water from the cherry tomatoes, pour vinegar, hot tomato juice into it and roll it up. Wrap the jars with a warm blanket, and after a day, transfer them to a cool place.
10. Cherry tomatoes with lemon juice

If the juice is too thick, then add a little boiled water.
You will need: 3 kg cherry tomatoes, 4 kg large tomatoes, 1 lemon, 4 bay leaves, 5 black peppercorns, 20 g sugar, 30 g salt.
Cooking: Rinse the lemon with hot water, cut in half and squeeze out the juice. Fill the prepared jars with cherry tomatoes, and cut large tomatoes and pass through a juicer. Pour the tomato juice into a saucepan with a thick bottom, add spices, sugar, salt and boil for 10 minutes. Pour hot juice over cherry tomatoes in a jar, sterilize them for 10 minutes, add lemon juice and roll up for the winter.
11. Tomatoes in their own juice with vinegar and oil

For convenience, get special tongs for sterilization.
You will need: 8 kg of tomatoes, 50 g of basil, 2 tbsp. olive oil, 3 tbsp. vinegar, 2 tbsp. sugar, 25 g salt.
Cooking: Sort the tomatoes into small and large. Small ones – peel and put in jars along with basil sprigs. Large ones – cut and pass through a juicer. Mix the juice with sugar, salt, butter and boil for 15 minutes. Pour hot tomato juice into jars with tomatoes, sterilize for 10 minutes, add vinegar and roll up.
12. Tomatoes in own juice with lemon juice and olive oil

It is better not to change olive oil for vegetable oil.
You will need: 10 kg of tomatoes, 5 cloves of garlic, 3 tbsp. olive oil, 1 lemon, 40 g sugar, 30 g salt.
Cooking: Lemon scald with boiling water, cut in half and squeeze out the juice. Sort the tomatoes into two categories: soft and dense. Squeeze out the juice from the soft ones, and put the dense ones in clean jars. Pour the resulting tomato juice into a saucepan, add salt, sugar, oil and finely chopped garlic. Boil for 15 minutes, pour it into jars of tomatoes and sterilize for 10 minutes. Add lemon juice, roll up and wrap for a day with a warm blanket.
13. Tomato slices in their own juice with herbs

For example, fragrant cilantro sets off tomatoes very tasty.
You will need: 10 kg of tomatoes, 50 g of any greens to taste, 2 cloves, 5 peas of allspice, 3 tbsp. vinegar, 1 tbsp. sugar, 2 tbsp. salt.
Cooking: Sort the tomatoes into firm and soft. Dense – cut into pieces and put in jars together with chopped greens, and soft ones – pass through a juicer. Mix tomato juice with sugar, salt, spices and boil it for 10 minutes over low heat. Pour hot juice into jars of tomatoes, sterilize for another 10 minutes, add vinegar and roll up for the winter.
14. Tomato slices in their own juice with vinegar and sugar

Cut the tomatoes into quarters, halves or random pieces.
You will need: 6 kg tomatoes, 2 cloves, 0.5 tsp ground black pepper, 0.5 tsp ground coriander, 2 tbsp. vinegar, 2 tbsp. sugar, 1 tbsp. salt.
Cooking: Sort the tomatoes into firm and soft. Dense – cut into pieces and place in prepared jars, and soft tomatoes – cut and pass through a juicer. Mix the resulting tomato juice with spices, sugar and salt. Boil for 15 minutes, pour into jars of tomatoes and put them in a pot of hot water. Sterilize the workpiece for 10 minutes, pour in vinegar and roll up.
15. Tomatoes in their own juice with horseradish for the winter

When cooking, be sure to turn on the hood.
You will need: 10 kg of tomatoes, 1 tsp. grated horseradish root, 2 tbsp. vegetable oil, 2 tbsp. apple cider vinegar, 50 g sugar, 1.5 tbsp. salt.
Cooking: Sort the tomatoes into two categories: firm and soft. Dense – peel and place in prepared jars. Soft – cut and pass through the juicer. Pour the juice into a saucepan, add butter, sugar, salt and boil for 10 minutes. Pour boiling tomato juice into jars with tomatoes and add grated horseradish. Sterilize for 10 minutes, pour in vinegar, roll up and turn upside down.
16. Tomatoes in their own juice without sugar, salt and vinegar

No additives or spices – only tomatoes!
You will need: 10 kg of tomatoes.
Cooking: Sort the tomatoes into soft and firm. Squeeze out the juice from the soft ones, and place the dense ones in prepared jars. Boil tomato juice for 10 minutes and pour it into jars with tomatoes. Sterilize the blanks for 10 minutes, roll up and wrap for a day with a warm blanket.
17. Tomatoes in own juice with celery

We recommend cooking from Slivka tomatoes.
You will need: 8 kg of tomatoes, 1 stalk of celery, 4 peas of allspice, 3 tbsp. vinegar, 2 tbsp. sugar, 25 g salt.
Cooking: Pass half of the tomatoes through a juicer, add sugar, salt and boil for 10 minutes. The remaining tomatoes – peel. Place allspice, chopped celery and whole tomatoes in clean jars. Fill them with hot juice, sterilize for 15 minutes and carefully remove them from the sterilization bath. Pour in vinegar, roll up and turn upside down.
18. Tomatoes in own juice with garlic and basil

Any kind of basil will do.
You will need: 10 kg of tomatoes, 4 cloves of garlic, 50 g of basil, 2 tbsp. apple cider vinegar, 2 tbsp. sugar, 1 tbsp. salt.
Cooking: Sort the tomatoes into small and large. Small ones – put in jars, and large ones – pass through a meat grinder. Mix the resulting tomato mass with sugar, salt, chopped garlic and basil. Boil for 15 minutes, pour into jars of tomatoes and sterilize for 10 minutes. Add vinegar, roll up and turn upside down.
19. Tomatoes in their own juice with hot peppers and spices

Remove the seeds of hot pepper and the workpiece will turn out less hot.
You will need: 10 kg of tomatoes, 1 pod of hot pepper, 4 cloves of garlic, 0.5 tsp. a mixture of peppercorns, 0.5 tsp ground coriander, 2 tbsp. sugar, 1 tbsp. salt.
Cooking: Sort the tomatoes into firm and soft. Dense – place in clean jars, soft – cut and pass through a juicer. Mix tomato juice with sugar, salt, pepper mixture, coriander, crushed garlic and hot pepper. Boil everything together for 15 minutes, pour into jars of tomatoes and sterilize for 10 minutes. Roll up and wrap for a day with a thick towel.
20. Shredded tomatoes in their own juice without sterilization

From such a blank, you can cook any sauces, frying and tomato soups.
You will need: 10 kg of tomatoes, 5 cloves of garlic, 1 tsp. citric acid, 2 tbsp. sugar, 1 tbsp. salt.
Cooking: Sort the tomatoes into firm and soft. Dense – cut into small pieces, and from soft ones – squeeze the juice. Pour the tomato juice into a large saucepan, add salt, sugar and boil for 10 minutes. Add chopped tomatoes, pressed garlic, citric acid and boil for 10 minutes. Arrange the blank in sterilized jars and roll up for the winter.
