
The most important component of any buffet is appetizers. And here it is important to consider not only their taste, but also the presentation. Then all kinds of skewers, small glasses, tartlets, bruschettas and much more will come to your aid. We tell 20 original recipes!
1. Mushroom pate

Serve it on bruschettas, in tartlets or stuff boiled eggs with it.
You will need: 200 g mushrooms, 60 g onions, 30 g butter, 100 g cream cheese, 20 ml soy sauce, 1 garlic clove, 20 ml olive oil.
Cooking: Finely chop the mushrooms with onion and garlic, and fry in a mixture of two oils until golden. Place all ingredients in a blender, season to taste and blend until smooth.
2. Stuffed cherry tomatoes with shrimps

Ordinary tomatoes are too large for a buffet table, but small cherry tomatoes are just right.
You will need: 30-35 cherry tomatoes, 1 egg, 50 g shrimp, 1 tbsp. cream cheese, spices, herbs.
Cooking: Cut off the tops of the cherry tomatoes and carefully scoop out the center. Boil the shrimp, boil the egg until cooked and finely chop everything. Add some herbs and spices, mix with cream cheese and stuff tomatoes with this stuffing.
3. Eggplant rolls

Especially for a buffet table, it is better to connect such rolls with skewers so that nothing definitely falls apart.
You will need: 1 eggplant, 250 g cream cheese, 1 tomato, 2 cloves of garlic, 0.5 bunch of herbs, spices, 1 chili.
Cooking: Cut the eggplant into thin slices and fry on both sides until soft. Finely chop the tomato, chili, garlic and herbs, mix with cream cheese and season. Put the filling on the eggplant slices and roll up the rolls.
4. Stuffed cucumbers

This appetizer is especially good in the hot season, when you want something lighter.
You will need: 1-2 cucumbers, 50 g of hard cheese, 1 egg, 1 clove of garlic, 4 sprigs of herbs, 1.5 tbsp. sour cream.
Cooking: Boil and finely chop the egg, chop the garlic and herbs, and grate the cheese. Cut the cucumbers into 4-5 cm cylinders and take out the pulp, a little short of the bottom. It should look like a glass. Finely chop this pulp, mix with the rest of the filling, season everything with sour cream and stuff the cucumbers.
5. Beetroot Shrimp Appetizer

If you want to surprise everyone at the buffet – choose this recipe!
You will need: 2 beets, 200 g shrimp, 2 eggs, 1 melted cheese, 120 g mayonnaise, 2 garlic cloves.
Cooking: Bake the beets until tender, grate, add crushed garlic and half of the mayonnaise. Boil eggs, grate along with melted cheese and the remaining mayonnaise. Lay out both masses in layers in shots and stick boiled shrimp on top.
6. Tartlets with chicken and mushrooms

The classic combination of chicken fillet and champignons is ideal for filling tartlets.
You will need: 250 g chicken fillet, 150 g champignons, 0.5 onions, 1 egg, spices, mayonnaise, tartlets.
Cooking: Boil the egg and chicken separately and chop finely. Just finely chop the mushrooms with onions, fry until the moisture evaporates and mix all the ingredients. Add spices, season the filling with mayonnaise and put in tartlets.
7. Canape with quail eggs

Small quail eggs seem to be made for beautiful buffet appetizers.
You will need: 100 g of bread, 100 g of hard cheese, 3 tbsp. mayonnaise, 10 quail eggs, 20 g of bell pepper.
Cooking: Boil eggs 4 minutes after boiling and peel. Cut the bread and dry it until golden brown in a pan. Mix grated cheese with mayonnaise and spread on bread. Top with an egg and a slice of bell pepper.
8. Appetizer of zucchini with tomatoes

The best summer snack for a buffet table if you follow your diet and figure.
You will need: 2 zucchini, 4 tomatoes, 4 tbsp. sour cream, 2 cloves of garlic, 40 g of hard cheese.
Cooking: Cut the zucchini and tomatoes into circles, fry the zucchini on both sides. Mix sour cream with crushed garlic and brush the zucchini. Lay out the tomatoes, brush with sour cream again, and so alternate the layers. Sprinkle everything with grated cheese and send for 10 minutes in the oven at 180 degrees.
9. Stuffed cherry tomatoes with salmon and avocado

Just a win-win filling for cherry tomatoes. Very juicy and tasty!
You will need: 30 cherry tomatoes, 1 avocado, 50 g salmon Xia, 1 tbsp. cream cheese, lemon juice.
Cooking: Cut off the tops of the cherry tomatoes and scoop out the middle. Mash the avocado with a fork and drizzle with lemon juice. Finely chop the salmon, mix everything with cream cheese and fill the tomatoes with the stuffing.
10. Cheese balls with grapes

To make it convenient to take such an appetizer during a buffet table, serve it with skewers.
You will need: 14 grapes, 140 g curd cheese, 60 g hard cheese, 140 g pistachios.
Cooking: Finely chop the pistachios or grind them in a coffee grinder. Mix cottage cheese and grated hard cheese. Cover the grapes with cheese mass on all sides and roll the balls in pistachios.
11. Tartlets with chicken and pineapple

Delicious, spicy, with juicy and original filling. Guests will be delighted!
You will need: 300 g chicken, 2 tomatoes, 300 g pineapples, 2 garlic cloves, mayonnaise, tartlets.
Cooking: Boil the chicken until cooked and cut all the ingredients into small cubes. Add crushed garlic and mayonnaise to taste, and put the stuffing in tartlets.
12. Tuna balls

To taste, such an appetizer resembles a Mimosa salad, but in terms of serving, it is much better suited for a buffet table.
You will need: 200 g tuna, 1 carrot, 2 eggs, 1 potato, 70 g hard cheese, 2 tbsp. soy sauce, 1 tbsp. mayonnaise, sesame seeds, greens.
Cooking: Boil eggs, carrots and potatoes until tender, grate all the ingredients, chop the greens and mash the tuna with a fork. Mix everything together, season with mayonnaise and soy sauce, form small balls and roll them in sesame seeds.
13. Stuffed champignons with spinach

Be sure to choose large mushrooms with whole beautiful hats.
You will need: 200 g curd cheese, 2 handfuls of spinach, 8-10 champignons, 20 g parmesan, 2 garlic cloves, spices.
Cooking: Finely chop spinach and garlic, mix with curd cheese and season. Separate the legs from the mushrooms and stuff the caps with the filling. Sprinkle with parmesan and bake in the oven for 25-30 minutes at 190 degrees.
14. Canape with herring and apples

Such a simple, but such a tasty and popular snack for any buffet table. Instead of an apple, you can take a cucumber or kiwi.
You will need: 100 g bread, 150 g herring, 1 apple, 1 tsp. mustard, 50 g butter, 10 olives, 25 g greens.

You will need: 8 champignons, 1 carrot, 1 onion, 1 tomato, 0.5 bell pepper, 2 cloves of garlic, 1 tbsp. soy sauce, 2 tbsp. olive oil, spices, herbs.
Cooking: Very finely chop all the vegetables and mushroom legs, add chopped herbs and spices, and season everything with soy sauce and olive oil. Put the filling in the hats and bake the mushrooms in the oven for 15 minutes at 190 degrees.
17. Italian bruschetta with tomatoes

Classic Italian bruschetta with juicy fresh filling.
You will need: 1 baguette, 2 tomatoes, 2 garlic cloves, 30 g basil, 30 ml olive oil, 70 g mozzarella, 1 tsp. balsamic vinegar, spices.
Cooking: Dry the baguette slices in a frying pan and rub with garlic. Finely chop the tomatoes, mozzarella and basil, mix and drizzle with olive oil and vinegar. Sprinkle everything with spices and put on pieces of baguette.
18. Cucumbers with herbs and cream cheese

Long-fruited cucumbers are best suited, which can be cut into identical cylinders.
You will need: 2 cucumbers, 250 g cream cheese, 50 g spinach, 10 g basil, 2 green onions, 50 g bell peppers.
Cooking: Cut the cucumbers and take out the middle of them, without reaching the bottom. Finely chop all the greens and bell pepper, mix with cream cheese and stuff the cucumbers.
19. Tartlets with cod liver

You will need: 1 can of cod liver, 1 egg, 0.5 cucumber, mayonnaise, herbs, tartlets.
Cooking: Boil the egg and cut it into small cubes with cucumber. Add mashed cod liver and a little mayonnaise with herbs, and put the mass into tartlets.
20. Stuffed champignons with crab sticks

Not the most obvious, but very tasty filling for stuffing mushrooms.
You will need: 12 mushrooms, 1 onion, 200 g crab sticks, 100 ml cream, 100 g hard cheese, spices.
Cooking: Finely chop the onion and mushroom legs, and fry until golden. Cut the crab sticks into cubes, add there, and fry for another 2 minutes. Pour in the cream, add spices, bring everything to a boil and put the stuffing in the mushroom caps. Sprinkle with grated cheese and bake in the oven for 20 minutes at 180 degrees.
