The lightest, most delicious and healthy desserts are cottage cheese desserts. At the same time, they are also very diverse – from the simplest mousses to cookies and pies. In this selection of recipes, we have collected the most interesting and at the same time affordable options for every day or a festive table!
1. Curd dessert with oranges
So tender it literally melts in your mouth!
You will need: 300 g cottage cheese, 3 oranges, 250 ml 33% cream, 1 glass of orange juice, 3 tbsp. honey, 4 tsp gelatin.
Cooking: Pour 0.5 cups of water into gelatin and leave for half an hour. Then heat until dissolved. Remove the zest from the orange and boil in a small amount of water for 15 minutes. Whisk cottage cheese, honey and orange juice with a blender. Add zest with gelatin and mix.
Separately, whip the cream into foam and gently fold into the curd. Arrange circles of oranges in the form, pour over the curd mass and send it to the refrigerator overnight.
2. Curd cake
A classic you can’t resist!
You will need: 270 g cottage cheese, 150 g butter, 250 g sugar, 3 eggs, 100 g raisins, 1 tsp. baking powder, 300 g flour.
Cooking: Beat soft butter with sugar with a mixer, add grated cottage cheese and beat again. Add eggs, and then – sifted flour with baking powder. At the very end, add raisins to the dough, put in a mold and bake in the oven for about an hour at 170 degrees.
3. Ice cream from cottage cheese
A minimum of calories, a lot of benefits and great taste – what you need!
You will need: 300 g of fatty cottage cheese, 1 banana, 70 ml of milk.
Cooking: Blend all ingredients in a blender until smooth and fluffy. Put the ice cream in a container and send it to the freezer for a couple of hours. Once every half an hour, take it out to mix.
4. Cheese pudding in the microwave
Such an unusual and bold culinary experiment turned out to be very successful in practice.
You will need: 100 g cottage cheese, 1 egg, 1 tbsp. sugar, 1 tbsp. semolina, spices.
Cooking: Rub the egg with sugar, add spices and mix. Add cottage cheese and beat the mass until smooth. Add semolina, mix, pour the mass into silicone molds and send it to the microwave at maximum power. Cook for 3 minutes, then let the pudding rest for 2 minutes without opening the door, and cook for another 2 minutes.
5. Curd sweets
Real PP candy in a hurry. Despite the presence of butter, they are very low in calories.
You will need: 300 g cottage cheese, 2 tbsp. honey, 1 tbsp. butter, 1 handful of nuts, 2 tbsp. coconut flakes.
Cooking: Beat cottage cheese with butter and honey until smooth. Stir in the coconut flakes and form into curd balls. In each put a piece of walnut in the form of a filling. Roll the balls in shavings, cocoa or other breading.
6. Lazy dumplings with pumpkin
Serve them with sour cream, jam or syrup to taste.
You will need: 130 g pumpkin, 160 g flour, 200 g cottage cheese, 1 egg, 50 g sugar.
Cooking: Beat cottage cheese, pumpkin, sugar and egg with a blender until smooth. Gradually add flour, knead the dough and roll out the sausages. Cut them into lazy dumplings and boil them in boiling water for about 5 minutes after surfacing.
7. Chocolate curd dessert
We advise you to use dark cocoa powder with a maximum percentage of cocoa beans in the composition.
You will need: 300 g cottage cheese, 400 ml sour cream, 200 g sugar, 5 tbsp. cocoa, 20 g gelatin.
Cooking: Pour gelatin with warm water and leave to swell. Beat cottage cheese, sour cream and sugar with a mixer until smooth. Warm the gelatin until dissolved and send to the curd mixture. Separate half of the curd mass, and stir in cocoa in the second. Randomly put both masses into a mold, creating patterns, and send the dessert to the refrigerator overnight.
8. Curd muffins with cherries
If you are using frozen berries, then mix them with a spoonful of starch to remove excess juice.
You will need: 200 g flour, 150 g cherries, 2 eggs, 150 g cottage cheese, 60 ml vegetable oil, 80 g sugar, 150 ml milk, 1 tsp. baking powder.
Cooking: Mix sifted flour, baking powder and sugar. Grind the cottage cheese and beat it with milk, eggs and vegetable oil. Gently mix both mixtures, add cherries and spread the mass into molds. Bake muffins in the oven for half an hour at 190 degrees.
9. Curd dessert with marshmallows
A very interesting dessert based on cottage cheese and sour cream.
You will needI: 200 g cottage cheese, 2 tbsp. sour cream, 4 tsp jams, 6 marshmallows, butter.
Cooking: Grease small molds with butter. Mix cottage cheese with sour cream and put half of the mass into molds. Lubricate with jam, drown inside a piece of marshmallow and lay out the remaining half of the cottage cheese. Lightly press down, send the dessert to the refrigerator, and then decorate to taste.
10. Cottage cheese and banana blancmange
Another variation of the classic curd dessert with gelatin.
You will need: 350 g cottage cheese, 100 ml milk, 150 g sour cream, 50 g sugar, 15 g gelatin, 1 banana.
Cooking: Prepare gelatin according to instructions. Grind the cottage cheese and beat with a mixer with sugar, milk and sour cream. Add gelatin to the mass, stir in the banana slices, put everything in molds and send it to the refrigerator until it hardens.
11. Cottage cheese casserole with lemon
Pleasant citrus sourness perfectly sets off the delicate texture of the casserole.
You will need: 250 g cottage cheese, 4 tbsp. sugar, 0.5 lemon, 1 egg, 2 tbsp. sour cream, 2 tbsp. semolina, 1 tsp baking powder.
Cooking: Grind the cottage cheese through a sieve and add the egg with sugar. Add lemon zest, sour cream, baking powder and semolina there, and mix. At the end, stir in the peeled and chopped lemon pulp, put the mass into a mold and cook in the oven for 35-40 minutes at 180 degrees.
12. Cottage cheese cookies with nuts
By the way, cookies are prepared completely without oil, so there are few calories, and it’s easier with the ingredients.
You will need: 250 g cottage cheese, 1 egg, 140 g sugar, 230 g flour, 1 tsp. baking powder, 50 g walnuts.
Cooking: Beat cottage cheese with egg and sugar until smooth. Add the sifted flour with baking powder, and finally stir in the chopped nuts. Form balls, put on parchment and bake cookies for about 15-20 minutes at 170 degrees.
13. Cottage cheese and apple soufflé
Only three ingredients – and a wonderful PP dessert is ready. Sprinkle it with cinnamon or cocoa before serving.
You will need: 200 g cottage cheese, 1 sweet apple, 1 egg.
Cooking: Peel the apple, grate and mix with grated cottage cheese. Stir in the egg there and spread the mass into molds. Cook the souffle for 5 minutes in the microwave or 15 minutes in the oven at 180 degrees.
14. Curd dessert with white chocolate
Airy, light, very sweet and tender. Serve with fresh berries and mint.
You will need: 200 g cottage cheese, 50 g white chocolate, 1 tsp. gelatin, 50 ml of water.
Cooking: Prepare gelatin in water according to instructions. Beat cottage cheese until smooth, add gelatin and beat again. Melt the white chocolate, gently stir it into the curd, spread the mass into molds and put in the refrigerator to harden.
15. Homemade curd cheeses
If desired, you can cover them with chocolate icing or simply pour over melted chocolate.
You will need: 250 g cottage cheese, 4 tbsp. honey, 100 g coconut flakes, 1 sachet of vanilla sugar.
Cooking: Grind the cottage cheese and mix it with the rest of the ingredients. If the cottage cheese is very wet, squeeze it first. Form small curds, put on parchment and send for half an hour in the freezer.
16. Cottage cheese gingerbread
A simple and quick dessert for tea or coffee for lovers of homemade cakes.
You will need: 500 g cottage cheese, 1 cup flour, 3 eggs, 0.5 cup sugar, 130 g butter.
Cooking: Grind cold butter, flour and a couple of tablespoons of sugar into crumbs. Mix the rest of the sugar with eggs, grated cottage cheese and a handful of flour. Lay out crumbs, curd mass and again crumbs in layers. Bake the gingerbread in the oven until golden at 160 degrees.
17. Cottage cheese cake with cookies and chocolate without baking
This beautiful striped cake is easy to make even if you don’t have an oven at all.
You will need: 300 g of chocolate cookies, 500 g of cottage cheese, 300 g of sour cream, 150 g of sugar, 100 g of chocolate, 20 g of gelatin.
Cooking: Prepare gelatin according to instructions. Beat cottage cheese with sugar and sour cream with a mixer, and add dissolved gelatin to it. Put cookies on the bottom of the form, fill with gelatin, and so repeat several layers. Send the cake to the refrigerator for 4 hours and then the fields with melted chocolate.
18. No Bake Banana Cheesecake
Yes, cottage cheese. So tasty that it is simply impossible to resist, and it is prepared easier than the classic one.
You will need: 350 g shortbread cookies, 150 g butter, 3 bananas, 450 g cottage cheese, 2 tbsp. lemon juice, 200 ml cream, 2 tbsp. powdered sugar, 1.5 tbsp. gelatin.
Cooking: Crush the cookies in the bleu dere, mix with melted butter and put on the bottom of the mold. Steam the gelatin according to the instructions. Grind two bananas with lemon juice in a blender, and add cottage cheese, cream and powdered sugar. Beat the cream again, add gelatin to it and pour it over the cookie base. Refrigerate the cheesecake overnight and garnish with the remaining banana before serving.
19. Cottage cheese mannik with dried apricots
Delicate and fragrant, with an airy porous texture and sweet dried apricots.
You will need: 450 g cottage cheese, 100 g sour cream, 250 g semolina, 100 g dried apricots, 1 tsp. soda, 3 eggs, 180 g sugar.
Cooking: Beat eggs with sugar until fluffy foam, add grated cottage cheese with sour cream and mix. Add slaked soda and semolina, and mix thoroughly again. Leave the dough for 20 minutes, add chopped dried apricots to it, put it in a mold and bake mannik in the oven for 40 minutes at 180 degrees.
20. Curd dessert with cherries
It can be served for the holiday, for a children’s sweet table or just for breakfast.
You will need: 200 g cottage cheese, 2 tbsp. Greek yogurt, 50 g oatmeal, 4 tbsp. cherries, 25 g almonds, 2 tbsp. powdered sugar, 2 tbsp. brown sugar.
Cooking: Beat cottage cheese with yogurt and powdered sugar. Toast the almonds and oatmeal in a dry pan, add sugar and fry until caramelized, about 5 minutes. Lay out the layers of cereal, curd mass, cherries and again cottage cheese. Repeat layers as desired.
