1. Salad with tomatoes and onions for the winter
We advise you to take dense and elastic tomatoes so that they do not fall apart during cooking.
You will need: 600 g tomatoes, 1 onion, 1 tbsp. vegetable oil, garlic, parsley, spices, 1 tbsp. vinegar, 1 tbsp. salt, 2 tbsp. sugar, 1 liter of water.
Cooking: Cut the tomatoes into circles, the onion into half rings, and finely chop the greens with garlic. Put vegetables in jars in layers, add spices and pour marinade from boiling water, oil, salt, sugar and vinegar.
2. Cherry tomato salad for the winter
A very original recipe for tomatoes with soy sauce and cloves.
You will need: 250 g cherry tomatoes, 1 onion, 2 garlic cloves, 1 clove, 3 tbsp. soy sauce, 1 tbsp. vegetable oil, 1 tbsp. vinegar, spices.
Cooking: Put spices and garlic in a jar, and top with cherry tomato halves and onion slices. Pour boiling water, wait until it cools down and pour the water into the pan. Bring it to a boil, add oil, soy sauce, spices and vinegar, pour over the salad and roll up.
3. Korean tomato salad
Instead of sterilization, you can try adding a crushed aspirin.
You will need: 1 kg of tomatoes, 150 g of pepper, chili, garlic, 40 g of sugar, 20 g of salt, 50 ml of vinegar, 100 ml of vegetable oil, 20 g of mustard, 30 g of cilantro and parsley, spices.
Cooking: Cut the tomatoes into slices, and pass the pepper, chili and garlic through a meat grinder. In the same mass, add all the other ingredients for the marinade and chopped herbs. Layer the tomatoes and vegetable mixture in a jar and roll up.
4. Salad of yellow tomatoes for the winter
Pleasant sweet and sour taste and very bright color.
You will need: 400 g yellow tomatoes, 2 garlic cloves, 1 tsp each sugar and salt, herbs, 2 tbsp. vinegar, mustard seeds, spices, 30 ml of vegetable oil.
Cooking: Coarsely chop the tomatoes and sprinkle them with all the spices. Add crushed garlic and chopped herbs, mix everything gently and pour oil and vinegar. Leave for an hour, and then roll up in banks.
5. Salad with tomatoes and cucumbers for the winter
A wonderful fresh salad for fried potatoes or baked meat.
You will need: 3 tomatoes, 3 cucumbers, 2 onions, 2 cloves of garlic, dill, spices, 2 tsp each. salt and sugar, 4 tsp. vinegar, 3 tbsp. vegetable oil.
Cooking: Pour the oil into jars and layer thinly sliced vegetables. Add garlic and herbs, and then – all the spices to taste. Pour in vinegar, pour boiling water over the salad and roll up.
6. Salad of tomatoes and peppers
One of the fastest and most delicious preparations with tomatoes for the winter!
You will need: 2 kg of tomatoes, 3 sweet peppers, 1 chili, 4 onions, 0.5 bunch of parsley, 1.5 tbsp. salt, 2.5 tbsp. sugar, 25 ml of vinegar, 1.5 liters of water, spices.
Cooking: Randomly chop the vegetables and arrange in jars in layers along with the chili and parsley. Boil water with spices and vinegar, fill the salad with boiling marinade and roll up.
7. Tomato salad with zucchini for the winter
Serve the salad on its own or use it when stewing meat and potatoes.
You will need: 1.5 kg of tomatoes, 1 kg of zucchini, 500 g of onion, 200 g of garlic, 75 ml of vegetable oil, 50 g of sugar, 40 g of salt, spices.
Cooking: Peeled zucchini cut into small cubes and put in a stew in oil with salt and sugar. After 10 minutes, add chopped tomatoes, and after another 10 – onions with spices. At the very end, add garlic, simmer for another 5 minutes and arrange in jars.
8. Salad with tomatoes and eggplant for the winter
Pure vegetables and nothing more!
You will need: 1.5 kg of tomatoes, 1 kg of eggplant, 3 tbsp. sugar, 1 tbsp. salt, 1 head of garlic, 1 tbsp. vinegar, 4 tbsp. oils, spices.
Cooking: Peel 1 kg of tomatoes, chop in a blender and boil for 15 minutes. Add the eggplant sliced in circles, coarsely chopped remaining tomatoes, oil, garlic and spices. Boil everything together for half an hour, add vinegar, and after 5 minutes remove from heat and roll up.
9. Tomato and cabbage salad for the winter
A simple and practical appetizer for any meal.
You will need: 300 g cabbage, 150 gtomatoes, 100 g of carrots, onions and peppers, 30 ml of vegetable oil, 20 g of sugar, 10 g of salt.
Cooking: Chop the cabbage, grate the carrots, cut the peppers and onions into strips, and the tomatoes into thin slices. Add the rest of the ingredients, except for the vinegar, simmer for 20 minutes and then add it. Fill jars with salad.
10. Tomato salad with apples
No vinegar, no aspirin, no citric acid!
You will need: 1.5 kg of tomatoes, 3 apples, 1 tbsp. salt, 4 tbsp. sugar, 1.5 liters of water.
Cooking: peel the apples and cut them into slices, and the tomatoes into large slices. Carefully spread everything in jars, pour boiling water over it and leave it under the lid for 20 minutes. Drain the water, bring it back to a boil with salt and sugar, pour over the salad and roll up.
11. Salad with tomatoes and celery

You will need: 3 kg of tomatoes, 1 kg of onion, 500 g of celery stalks, 2 chili, 2 heads of garlic, 2 liters of water, 50 g of salt, 100 g of sugar, 15 ml of vinegar, spices.
Cooking: Cut all vegetables, including chili and garlic, into slices and arrange in layers. Boil water with salt, sugar and spices, add vinegar at the end, pour over the salad and roll up.
12. Tomato salad with carrots for the winter
Juicy, bright and fragrant salad with tomatoes – go for an appetizer or a full-fledged side dish.
You will need: 500 g of pepper, 1 kg of tomatoes, carrots and onions, 120 ml of vegetable oil, 130 g of sugar, 1.5 tbsp. salt, 60 ml of vinegar, spices.
Cooking: Randomly chop all the vegetables, grate the carrots with a vegetable peeler and cover everything with spices, salt and sugar. Pour in oil, simmer for 30 minutes, add vinegar and after 10 minutes put the salad in jars.
13. Tomato salad with mushrooms for the winter
If using forest mushrooms, weld them separately first.
You will need: 500 g of onions, 1 kg of tomatoes, mushrooms and peppers, 700 g of carrots, 150 g of sugar, 50 g of salt, 100 ml of vinegar, 300 ml of vegetable oil.
Cooking: Coarsely chop and fry the mushrooms. Chop the tomatoes, simmer for 5 minutes with butter, and add the rest of the vegetables, sugar, salt and spices. Stew everything together for another 40 minutes, at the end add vinegar and put the salad in jars.
14. Tomato salad with pineapple
Spicy vegetable appetizer with chopped tomatoes.
You will need: 1 kg of tomatoes, 350 g of carrots and peppers, 250 g of onions, 300 g of canned pineapples, 5 cloves of garlic, 60 g of sugar, 1 tbsp. salt, 0.5 cups of vegetable oil, spices, 1 tablespoon of vinegar.
Cooking: Grind the tomatoes with a blender and chop the rest of the ingredients very finely. Stew everything together for about 40 minutes with butter, sugar and salt. At the end, add spices and vinegar, and then pour the salad into jars.

Cooking: Boil the broccoli florets for 2-3 minutes in boiling water, and simply cut the rest of the vegetables thinner. Arrange them beautifully in jars along with chopped herbs and garlic. Boil water with oil and spices, pour salad, add vinegar and roll up.
17. Tomato salad without vinegar
And without oil and sterilization!
You will need: 3 kg of tomatoes, 2 kg of cabbage, 1 kg of pepper, 2 bunches of basil, 1 head of garlic, 1 chili, spices, salt.
Cooking: Coarsely chop all the vegetables and chop the basil and garlic. Stew everything together for 10 minutes, add chili and spices to taste, and after 5 minutes roll into jars.
18. Tomato salad with nuts for the winter
It is believed that this is a classic Egyptian recipe.
You will need: 1.5 kg of tomatoes, 500 g of walnuts, 700 g of onions, 40 g of salt, herbs, spices.

You will need: 4 kg of green tomatoes, 1 kg of peppers, onions and carrots, 1 cup of vegetable oil, 1 cup of sugar, 0.5 cups of vinegar, 2 tbsp. salt.
Cooking: Cut the tomatoes into slices, grate the carrots and chop the onion and pepper. Mix everything together, add oil, vinegar and spices, and simmer for 15-20 minutes, stirring occasionally. Divide the salad into jars.
