1. Samsa from puff pastry with minced meat

You will need: 500 g puff yeast dough, 200 g minced meat, 1 onion, 1 egg yolk, 2 garlic cloves, herbs, sesame seeds, spices.
Cooking: Mix minced meat with chopped onion, garlic, herbs and spices. Roll up the layer of puff pastry into a roll, cut into pieces and roll into circles. Place a filling on each and fold three edges in toward the center to form a triangle. Lay the blanks on parchment with the seam down, grease with yolk, sprinkle with sesame seeds and bake the samsa in the oven for 30 minutes at 180 degrees.
2. Samsa from homemade yeast dough with beef

We tell you how to make a universal yeast dough.
You will need: 1.5 cups of kefir, 5 cups of flour, 1 egg, 1 tsp. dry yeast and salt, 1 tbsp. sugar, 150 g butter, 1 egg yolk, sesame seeds, 500 g beef, 2 onions, spices.
Cooking: Finely chop beef and onion, mix with spices. Mix kefir, salt, sugar and egg, and leave for 20 minutes. Add flour and knead a stiff dough. Divide it into 2 parts, roll into layers and grease each with butter. Fold on top of each other, roll into a roll and send for 2 hours in the refrigerator.
Cut the dough rolls into pieces and roll into cakes. Lay out the filling on each and form triangles. Put them on parchment seam down, grease with yolk, sprinkle with sesame seeds and bake for half an hour at 180 degrees in the oven.
3. Samsa from unleavened dough with herbs

Express version without yeast and puff pastry.
You will need: 3 cups of flour, 200 ml of water, 1 pinch of salt, 3 eggs, 2 bunches of herbs, 100 g of hard cheese, 200 g of butter, spices.
Cooking: Rub the butter with flour into crumbs, add water, salt, and knead the dough. Boil hard-boiled eggs and grate them with cheese, add chopped herbs and mix. Divide the dough into pieces, roll into layers and lay out the filling on each. Wrap the samsa in triangles and put in the oven for 20 minutes at 200 degrees.
4. Samsa from pita bread with chicken

And one more quick recipe when you don’t want to bother with the dough at all.
You will need: 2 sheets of pita bread, 350 g minced chicken, 1 onion, 1 egg, 40 g butter, sesame, spices.
Cooking: Cut the pita bread into strips about 10 cm wide and brush with butter. Mix minced chicken with spices and chopped onion, put on each strip and roll them into triangles. Lubricate the samsa with a beaten egg, sprinkle with sesame seeds and send for 25 minutes in the oven at 190 degrees.
5. Samsa with meat in the oven

Best suited beef or lamb – this is a more classic option.
You will need: 500 g puff pastry, 600 g meat, 2 onions, 1 bunch cilantro, 1 egg, 1 bunch parsley, 1 chili pepper, garlic, sesame seeds, spices.
Cooking: Roll out the dough in a layer, roll it into a roll and cut into balls. Roll each into a cake. Mix minced meat, onion, herbs, chili, garlic and spices. Put the filling on the cakes and form triangles. Lay the samsa seam side down on parchment, brush with egg and sprinkle with sesame seeds. Bake in the oven for 35 minutes at 180 degrees.
6. Samsa with chicken and mushrooms

7. Samsa with cheese and herbs

The classic green filling is incredibly juicy and fragrant.
You will need: 1 kg of puff yeast-free dough, 220 g of Adyghe cheese, 60 g of sorrel, green onions and spinach, 15 g of cilantro and parsley, spices.
Cooking: Finely chop all the greens and mix with grated cheese. Season to taste. Roll out the dough, cut into squares, put the filling on each and fold in half into triangles. Pinch the edges and bake the samsa for 20-25 minutes in the oven at 180 degrees.
8. Samsa with cottage cheese

We recommend using soft cottage cheese, but its fat content can be any.
You will need: 250 g puff yeast dough, 100 g cottage cheese, 80 g hard cheese, 1 egg, 1 tbsp. chopped greens, sesame seeds, spices.

9. Samsa with cheese and spinach

You will need: 450 g yeast-free puff pastry, 200 g cheese, 100 g frozen spinach, 25 g greens.

You will need: 250 g flour, 150 ml water, 150 g butter, 1 pinch of salt, 3 apples, 100 g brown sugar, 40 g walnuts, spices.
Cooking: Knead the dough from flour, salt, water and 100 g of butter. Send it to the refrigerator. Peel and finely chop the apple, and fry it with sugar in the remaining oil until caramelized. 12. Samsa with pumpkin

You will need: 3 cups flour, 1 egg, 100 g butter, 200 ml water, 1 pinch of salt, 1 cup rice, 4 eggs, 1 bunch green onions, spices.
Cooking: Boil the rice ahead of time to cool it down. Separately, boil the eggs, finely chop them with green onions, mix with rice and season to taste. From the rest of the ingredients, knead the elastic dough, divide into parts and roll out. Put the filling on each cake, shape the samsa and send it to the oven for 25-30 minutes at 180 degrees.
17. Samsa with fish

You can use any fish you like, from xeka to salmon.
You will need: 500 g yeast-free puff pastry, 300 g fish fillet, 1 onion, 1 egg yolk, flax or sesame seeds, spices.

18. Samsa with lamb
