
The long-awaited warm days are approaching, and you want some simple and understandable food. We share 20 recipes for light salads – with vegetables, fruits, chicken and tuna. In our selection you will definitely find several options to your taste!
1. Salad with crab sticks

For dressing, we recommend sour cream, yogurt or dietary homemade mayonnaise.
You will need: 300 g cabbage, 120 g crab sticks, 2 tomatoes, 1 cucumber, green onions.
Cooking: Finely chop the cabbage, chop the crab sticks and chop the green onion. Cut the cucumber into strips, and the tomatoes into medium-sized slices, and mix the salad.
2. Salad with chicken and Korean carrots

If you need a more satisfying option – add a handful of crackers or nuts.
You will need: 400 g smoked or boiled chicken, 300 g Korean carrots, 250 g canned corn, 3 tbsp. sour cream.
Cooking: Cut the chicken into thin strips along the grain. Mix the ingredients and dress the salad with sour cream or yogurt to taste.
3. Light green bean salad

Add a couple of green olives if you like.
You will need: 300 g green beans, 3 eggs, 2 garlic cloves, green onions, 100 g cheese, 1 tbsp. olive oil.
Cooking: Boil the eggs and beans until tender, chop the eggs into cubes, and grate the cheese on a coarse grater. Add chopped garlic and green onions, and drizzle olive oil over the salad.
4. Salad with tuna and pickled cucumbers

When you want a richer and brighter taste.
You will need: 240 g tuna, a quarter of a red onion, 3 pickles, half a lemon, 3 tbsp. yogurt, 1 tbsp. grainy mustard, spices and herbs.
Cooking: Cut the onion and pickles into very small cubes, and mash the tuna. Mix yogurt with lemon juice and mustard, dress the salad, season to taste and sprinkle with herbs.
5. Salad with cabbage and green peas

Frozen peas scalded with boiling water are perfect.
You will need: 300 g cabbage, 2 cucumbers, 2 tomatoes, 200 g peas, herbs and green onions, 2 tbsp. olive oil, 1 tbsp. lemon juice.
Cooking: Finely chop the cabbage and mash it with your hands. Cut the cucumbers and tomatoes into strips, chop the greens and add the peas to the salad. Drizzle with olive oil and lemon juice.
6. Light salad with chicken and celery

Boiled chicken fillet will fit better here.
You will need: 600 g chicken, 3 celery stalks, 200 g grapes, green onions, 1 tsp. granular mustard, sour cream, spices.
Cooking: Cut the boiled chicken and celery into small cubes, and cut large grapes in half. Dress the salad with sour cream with mustard and spices.
7. Salad of radish with pepper

One of the most useful recipes that will give you a powerful vitamin boost.
You will need: 2 black radishes, 2 carrots, 2 cucumbers, 1 pepper, 0.5 onions, spices, 4 tbsp. sour cream, 1 tsp mustard.
Cooking: Rub the radish and carrots on a coarse grater, mix well and knead with spices with your hands. Finely chop the rest of the vegetables, toss the salad and season.
8. Light beet and apple salad

How much easier!
You will need: 1 beetroot, 1 apple, 1 tbsp. raisins, 1 tsp lemon juice, mint, walnuts, sour cream.
Cooking: Bake the beets until cooked, cut into cubes and sprinkle with lemon juice. Cut the apples in the same way, add the raisins and nuts and mix the salad. Top it with sour cream and garnish with mint.
9. Salad with chicken and kiwi

A very unusual recipe when you want originality.
You will need: 200 g chicken, 150 g carrots, 3 eggs, 3 kiwi, 2 apples, sour cream.
Cooking: Boil chicken and eggs. Cut the chicken and kiwi into small cubes, and grate the rest of the ingredients on a coarse grater. Layer chicken, kiwi, carrot, apple and eggs, brushing each with sour cream and spices.
10. Salad with egg and cauliflower

An original salad that is suitable for dinner and for the holiday.
You will need: 2 eggs, 400 g cauliflower, 1 carrot, 2 cucumbers, 1 stalk of celery, 8 radishes, 1 bunch of green onions, olives, sour cream.
Cooking: Boil cauliflower florets until soft, and Boil flax and cut eggs. Randomly chop the rest of the vegetables, add chopped green onions and olives, and drizzle the salad with sour cream.
11. Light salad with cottage cheese

To be honest, a few tablespoons of cottage cheese will decorate almost any vegetable salad.
You will need: 100 g cottage cheese, 6 radishes, 3 cucumbers, 1 carrot, 0.5 bunch of lettuce, 1 tbsp. yogurt.
Cooking: Randomly chop the lettuce leaves, grate the carrots, and cut the radishes and cucumbers into circles. Add grainy cottage cheese and a little yogurt for flavor to the salad.
12. Salad with tuna and avocado

Garnish with mint sprigs or basil leaves.
You will need: 1 avocado, 1 cucumber, 1 celery stalk, green onion, half a bunch of cilantro, 1 tbsp each olive oil and lemon juice, 100 g tuna, spices.
Cooking: Cut the celery, avocado and cucumber into small cubes, and add the chopped tuna. Chop green onions and cilantro there, and fields the salad with oil, lemon juice and spices.
13. Salad with spinach and tomatoes

This recipe calls for fresh spinach.
You will need: 1 bunch of spinach, 150 g of cottage cheese, 2 tomatoes, basil, a handful of nuts, spices.
Cooking: Rinse the spinach well and chop it a little. In the same way, chop the basil, chop the tomatoes coarsely and add cottage cheese to the salad. Sprinkle everything with spices and chopped nuts.
14. Light Shrimp Salad

We offer a more refined recipe.
You will need: 150 g lettuce leaves, 100 g arugula, 500 g shrimp, 4 tbsp. olive oil and lemon juice, 150 g cherry tomatoes, 2 tbsp. soy sauce and white wine, spices.
Cooking: Boil the shrimp for 3 minutes, peel and fry until golden brown in olive oil. Pour them with lemon juice and soy sauce and leave. Arbitrarily pick greens, cut cherry tomatoes in half and add shrimp there. Combine remaining oil, lemon juice, soy sauce and wine for dressing.
15. Salad with chicken and Chinese cabbage

Grated hard cheese is also good.
You will need: 200 g chicken, 200 g Chinese cabbage, 2 tomatoes, 3 tbsp. sour cream, 100 g of soft cheese or cottage cheese.
Cooking: Boil the chicken and cut it into cubes along with the tomatoes. Randomly chop the Chinese cabbage and chop the cheese, mix the salad, and then season it with sour cream.
16. Salad with chicken and rice

This salad will be a great replacement for the main course for lunch or dinner!
You will need: 200 g chicken, 70 g rice, 2 peppers, 100 g peas, a handful of olives, green onions, herbs, spices, 1 tbsp. wine vinegar, 2 tbsp. olive oil, 1 tsp Dijon mustard.
Cooking: Boil the chicken and rice, and randomly chop all the ingredients. Take canned peas or boil frozen peas. Add chopped herbs and green onions there, and prepare a dressing from oil, vinegar and mustard.
17. Salad with corn and pineapple

You can serve it as is or drizzle with your favorite dressing.
You will need: 1 can of pineapples, 1 can of corn, 1 pepper, 400 g of chicken, green onions.
Cooking: Boil the chicken until tender and cut into cubes along with pineapple and pepper. Add canned corn and chopped green onions to the salad, and mix.
18. Salad with tuna and apple

Sprinkle it on top with chopped nuts, sesame seeds or flaxseeds.
You will need: 1 onion, 1 apple, 1 avocado, 240 g tuna, 2 tsp. sour cream, 1 tsp lemon juice, mustard and spices, salad mix.
Cooking: Dice apples and sprinkle with lemon juice. Similarly, chop the avocado, finely chop the onion and mash the tuna with a fork. Add salad mix and greens, mix everything and season with sour cream and mustard.
19. Light fruit salad

Yogurt goes well with any piece of fruit, so experiment to your heart’s content.
You will need: 200 ml of yogurt, 2 tangerines, 2 apples, 2 kiwis, 1 banana.
Cooking: Cut the kiwi, banana and apples into cubes, and sort the tangerines into slices and peel them from the films. Mix fruit, pour over yogurt and serve immediately.
20. Salad with rice, beets and feta

Instead of rice, you can take bulgur.
You will need: 90 g rice, 1 onion, 2 beets, 40 g feta, garlic and herbs, spices, 1 tsp. olive oil, mustard and lemon zest.
Cooking: Boil the rice until cooked, and bake the beets in the oven, and then cut into small cubes. Crumble feta into salad, add chopped greens and fields with dressing with lemon zest.
