1. Salad of boiled sausage with cheese
A very simple and quick salad that even children can cook!
You will need: 50 g of boiled sausage and hard cheese, 3-4 ripe tomatoes, 1 pickled cucumber, 1 fresh cucumber, 1 can of green peas, 4 hard-boiled eggs, 2 tbsp. l. lemon juice and vegetable oil, 1 tsp. Dijon mustard.
Cooking: Grate boiled sausage, pickled cucumber and cheese on a coarse grater, cut fresh cucumber into strips, eggs into small cubes. Beat mustard, oil and lemon juice with a fork, pour into a salad bowl, garnish with tomato slices and sprinkle a little more dressing.
2. Salad with scrambled eggs and “Doctor’s” sausage
The main ingredient of this salad is an egg omelette, for its preparation it is necessary to beat the eggs with salt and fry a few thin cakes.
You will need: 3 raw chicken eggs, 130 g of hard cheese and boiled sausage, 2 carrots, 3 cloves of garlic, 1 mango or sour apple, mayonnaise.
Cooking: Cut the mango fruit (or apple) without skin and core into small pieces, fields with lemon juice. From beaten eggs with a pinch of salt, fry four thin pancakes, roll them into tubes and cut into thin noodles. Combine with grated sausage, raw or boiled (as you prefer) carrots, garlic and cheese. Such a salad can be a great breakfast dish, but in this case, you should not put garlic in it!
3. Salad “Beans” with boiled sausage and cheese
Boiled sausage with small pieces of cheese is ideal for this salad, but if there is none, then just add a little grated cheese.
You will need: 210 g boiled sausage with cheese, 1 can of red beans, 2 tomatoes, 2-3 hard-boiled eggs, 2 cloves of garlic, 2 tbsp. l. Greek yogurt and mayonnaise.
Cooking: Combine finely chopped sausage, eggs and tomatoes in a bowl with washed beans and garlic. Mix natural yogurt with mayonnaise, add spices, if necessary, season the salad.
4. Salad with boiled sausage and grapes
A very interesting and original salad, consisting of boiled sausage, grapes and Dor-blue cheese.
You will need: 120 g of blue cheese, 1 bunch of dark and light seedless grapes, 0.5 bunch of lettuce, 200 g of boiled sausage or ham, 3 tbsp. l. olive oil, 2 tbsp. l. chopped walnuts, 2 tbsp. l. lemon or lime juice.
Cooking: Cut boiled sausage or ham into small cubes, fry in oil until golden brown. Put the grapes cut into halves into a salad bowl, tear the lettuce with your hands, lay it on top of the grapes. Send nuts, fried sausage and crumbled Dor-blue cheese there, sprinkle with lime juice.
5. Salad with “Ostankino” sausage and vegetables
This colorful salad is mostly made up of vegetables that are stacked in layers. So that the taste of boiled sausage is not interrupted by other ingredients, it should be fried in butter until golden brown.
You will need: 2 boiled potatoes, 1 purple onion, 2 pickled and fresh cucumbers each, 1 can of green peas, 250 g of Ostankino sausage, 2 boiled carrots, 1 beetroot baked in foil, 5 hard-boiled eggs, 3-4 tbsp. l. sour cream and mayonnaise, mustard grains, 2 tbsp. l. lemon juice, 0.5 tsp each. salt and sugar.
Cooking: Cut the onion into quarters of rings, pour 0.5 cups of boiling water, add lemon juice, salt and sugar. At the bottom of a deep salad bowl, lay a layer of grated potatoes, fields with sour cream sauce, mayonnaise and mustard.
Next, spread in layers, smearing with sauce, finely chopped and fried sausage, onion, squeezed from the marinade, a mixture of chopped pickles and fresh cucumbers, grated carrots, green peas, grated egg whites and beets. Cooking: Finely chop cucumbers, mangoes and peeled grapefruit slices, eggs and Veal sausage. Grate cheese curds, combine with peas and mayonnaise. Garnish with mango slices, green peas and grated yolk.
8. Swiss cheese salad with sausage
Dressing for this unusual and delicious salad is made from onions, wine vinegar, mustard powder and olive oil.
You will need: 380 g Swiss cheese, 3 pickled cucumbers, 1 onion, 410 g boiled sausage, 2 tbsp. l. olive oil, a pinch of ground pepper, 3.5 tbsp. l. wine vinegar, 5-6 radishes.
Cooking: Chopped onion, oil, mustard powder, pepper, a little salt put in a jar and shake vigorously 7-8 times. Onion-mustard sauce pour diced cheese, cucumbers, sausage. Arrange radish slices on top.
9. Potato salad with boiled sausage and flax seeds
In addition to boiled sausage, smoked sausages can be added to potato salad.
You will need: 4 boiled potatoes, 80 g of boiled sausage and sausages, 2 green onions, 2 tsp. flax seeds, 1.5 tsp. mustard powder, 2 tbsp. l. olive or sesame oil, 2-3 tbsp. l. mayonnaise.

Cooking: Crumble dry vermicelli with your hands into a bowl, add finely chopped sausage, cucumbers and boiled eggs there. Mix mayonnaise with toasted sesame seeds and Dijon mustard, combine with the rest of the salad ingredients, garnish with berries.
11. Beet salad with “Milk” boiled sausage

You will need: 1 large pomegranate, 3 potatoes, 220 g of boiled sausage “Milk”, 1 medium beetroot, 1 carrot, 2 purple onions, 120 ml of mayonnaise and sour cream, 2-3 tbsp. l. cashew nuts.
Cooking: Wrap the vegetables in foil and bake in the oven, peel, grate on a coarse grater, divide each product into two halves. Cut the onion into cubes, marinate in water with the addition of sugar, vinegar, salt. Whisk sour cream with mayonnaise, use to brush the layers in the salad.
The first layer is potatoes, chopped sausage, squeezed pickled onions, fields with sauce. The second layer is half the pomegranate seeds, carrots, nut crumbs, beets, brush again with a mixture of mayonnaise and sour cream. The third tier of salad – the remaining potatoes, sausage, onions, cover with sauce. Sprinkle with nuts and remaining pomegranate seeds.
12. Salad of cabbage and boiled sausage with cheese

17. Salad with boiled and smoked sausage

You will need: 7-8 cherry tomatoes, 3 cucumbers, 1 large apple (sour), 200 g smoked sausage, 330 g boiled sausage, 140 g cheese, 3 garlic cloves, 1 medium white radish, 3 tbsp. l. sour cream, 0.5 tsp wasabi, 2 tsp lime juice, cilantro.
Cooking: Clean fresh vegetables and an apple from seeds and skins, cut into thin strips, add grated boiled sausage, garlic, radish and cheese, add smoked sausage sticks. Whisk sour cream with lime juice, chopped herbs and wasabi, mix with salad.
18. Korean carrot salad with Ostankino sausage
“Ostankino” sausage in this recipe can be replaced with any other boiled sausage, but always fresh and of good quality.
You will need: 280 g Korean style carrots, 210 g boiled sausage, 180 g Gouda cheese, 5-6 boiled eggs, 3 tbsp. l. sour cream, 1 kiwi fruit for decoration.
