By itself, fish is a rather insipid product, especially white. Therefore, it is so desirable to supplement it with spices and, of course, sauces. Especially for you, we have collected 20 recipes for fish sauces for every taste and for all occasions. Try and choose!
1. Tomato sauce for fish
To make this sauce more harmoniously combined with fish, it is prepared on the basis of fish broth.
You will need: 4 tomatoes, 1.5 cups of fish broth, 1 bunch of parsley, 0.5 onions, 0.5 carrots, 1 tbsp. flour, 1 tbsp. butter, 2 tbsp. vegetable oil, spices.
Cooking: Finely chop the onion, grate the carrots and fry until soft in a mixture of butter and vegetable oils. Peel the tomatoes from the skins, also grate and send to the vegetables. Add flour and spices, mix, pour in the broth, bring the sauce to a boil and reduce to the desired consistency.
2. Lemon sauce for fish
Everyone knows that lemon is an amazing addition to fish. And here is another confirmation of this!
You will need: 1 egg, 0.5 lemon, 1 tsp mustard, 60 g butter, 40 ml water, spices.
Cooking: Mix mustard, egg and water, add butter with spices and heat the mixture on the stove until the butter melts. Add lemon juice and a little zest, and boil the sauce for another minute.
3. Sour cream sauce for fish
This simple and pleasant sauce goes equally well with white and red fish.
You will need: 200 g sour cream, 3 tbsp. soy sauce, 0.5 lemon, 4 sprigs of dill and parsley, 1 handful of walnuts.
Cooking: Remove the zest from the lemon and squeeze out the juice. Finely chop greens and walnuts. Place all ingredients in a blender and blend sauce until smooth.
4. Creamy fish sauce
Such a creamy sauce especially harmoniously complements the most tender salmon.
You will need: 200 ml cream, 1 bay leaf, 1 garlic clove, 50 g dill, 20 g butter, spices.
Cooking: Add bay leaf and spices to the cream, bring almost to a boil. Then add crushed garlic, stir and boil for another 5 minutes. At the end, add butter and chopped dill, and boil the sauce until the butter dissolves.
5. Sauce for fish in milk
Fish with milk sauce is light and dietary. Suitable even for children!
You will need: 200 ml milk, 2 tbsp. flour, 2 tbsp. butter, 70 g of hard cheese, spices.
Cooking: Fry the flour in butter until golden brown, slowly pour in the milk, stir and bring to a boil. Add spices and grated cheese, and cook the sauce until the cheese is dissolved, stirring.
6. Cheese sauce for fish
And even better sauce will turn out if you mix several different types of cheese at once to taste.
You will need: 150 g of hard cheese, 200 ml of cream, 4 cloves of garlic, 0.5 bunch of herbs, 30 g of butter, 1 tbsp. flour.
Cooking: Fry chopped garlic in butter, add flour and mix. Gradually pour in the cream, stir the sauce again and heat almost to a boil. Add grated cheese and cook until it dissolves. At the end, add chopped greens.
7. Mushroom sauce for fish
Mushroom sauce for fish is best prepared on a creamy or sour cream base. So let’s do it!
You will need: 150 g mushrooms, 2 tbsp. butter, 2 tbsp. flour, 2 cups fish broth, 3 tbsp. sour cream, spices.
Cooking: Cut the mushrooms and fry in butter until the liquid evaporates. Add flour and mix, and then add sour cream. Fry for another minute and pour the sauce with broth. Simmer for 15 minutes covered over low heat and season.
8. Sauce for fish with herbs
Not only very tasty, but also very fast, because it is prepared in a couple of minutes.
You will need: 200 g dill, 1 lemon, 1 head of garlic, 4 tbsp. olive oil, spices.
Cooking: Remove the zest from the lemon and squeeze out the juice, finely chop the dill and peel the garlic. Place all ingredients in a blender and blend sauce until smooth.
9. Asian fish sauce
Simple composition, quick preparation and such an unusual taste.
You will need: 1 orange, 1 tbsp. soy sauce, 1 garlic clove, 0.5 chili pepper, 1 tbsp. grated ginger.
Cooking: Squeeze the juice from the orange, mix with soy sauce and add crushed garlic, ginger and chopped chili. Boil the sauce on the stove over low heat for 3-4 minutes.
10. Spicy fish sauce
Spicy sauces for fish should be chosen carefully so as not to drown out its taste. This one fits perfectly!
You will need: 2 chili peppers, 2 cm ginger, 2 garlic cloves, 80 ml rice vinegar, 4 tbsp. sugar, 2 tsp starch, 1 tsp salt.
Cooking: Grind garlic, chili and ginger, pour in 200 ml of water and add salt with sugar and vinegar. Boil the sauce for 5 minutes until sugar dissolves, add starch and cook for another 1-2 minutes until thickened.
11. Orange sauce with wine for fish
If the classic lemon for fish is already tired, then try this option!
You will need: 2 oranges, 100 ml white wine, 100 g butter, 1 tsp. honey, spices.
Cooking: Squeeze the juice from two oranges, and remove the zest from one. Mix, add honey, wine and spices. Heat the sauce in a water bath until the honey dissolves. Add the butter and continue heating until it melts.
12. Sauce for fish with egg
The perfect accompaniment to baked or boiled lean white fish.
You will need: 50 g butter, 2 sprigs of parsley, 1 egg, 0.5 tsp. lemon juice.
Cooking: Hard boil an egg and chop finely with a knife. Add chopped herbs, melted butter and lemon juice, and beat everything with a blender.
13. Sauce for fish with capers
This is quite a high-calorie, but very tasty and original sauce.
You will need: 150 ml 20% cream, 2 tbsp. capers, 1 tbsp. butter, 10 g dill, 1 tsp. mustard, spices.
Cooking: Fry capers in butter, add mustard and chopped dill. Mix everything, pour in the cream and boil the sauce over high heat for 1-2 minutes. Add spices to taste.
14. Sauce for fish with pickles
Even store-bought pickled or pickled cucumbers will do.
You will need: 100 ml sour cream, 2 pickled cucumbers, 3 cloves of garlic, 4 sprigs of herbs, spices.
Cooking: Grind cucumbers in a blender and drain excess liquid. Add garlic, herbs and spices, and chop again. Mix cucumber mass with sour cream.
15. Vinegar based fish sauce
Universal balsamic sauce with herbs is also suitable for fish.
You will need: 100 ml balsamic vinegar, 100 ml water, 50 ml olive oil, 1 tbsp. flour, 1 clove of garlic, 1 bunch of herbs, 1 tbsp. chopped nuts, spices.
Cooking: Lightly fry flour in olive oil, stirring occasionally. Pour in warm water and stir again. Bring the mixture to a boil and boil for a minute. Grind greens, garlic and nuts in a blender, add spices and send to the sauce. Stew for 5 minutes under a lid over low heat and mix everything with balsamic vinegar.
16. Sauce for fish based on olive oil
The whole secret of this sauce is in spices and herbs, so add them from the heart!
You will need: 100 ml olive oil, 1 lemon, 50 ml water, 15 g cilantro, 1 chili pepper, 1 garlic clove, spices.
Cooking: Grind the garlic, chili and cilantro in a blender. Add lemon juice, some zest, spices, olive oil and water for consistency, and beat again.
17. Sesame sauce for fish
An additional plus of this sauce is that it keeps well in the refrigerator.
You will need: 6 tbsp sesame, 5 tbsp. olive oil, 4 tbsp. sugar, 2 tbsp. soy sauce, 2 tbsp. rice vinegar, 2 tsp sesame oil.
Cooking: Roast the sesame seeds in a dry frying pan until golden brown and grind in a blender. Add all other ingredients and beat the sauce well for a couple of minutes.
18. Teriyaki sauce for fish
Delicious teriyaki sauce for fish, which is easy to make yourself.
You will need: 150 ml soy sauce, 1 tbsp. honey and wine vinegar, 1 tsp each. ginger and garlic powder, 4 tsp sugar, 3 tsp starch, 2 tsp olive oil, 80 ml of water.
Cooking: Mix all the ingredients, except starch and water, and heat on the stove, stirring constantly, until the honey and sugar dissolve. Dissolve starch in water, pour into sauce, stir and remove from heat. Let it sit for 20 minutes.
19. Pesto sauce for fish
Pesto is good because it goes with any food, and even with fish.
You will need: 30 g basil, 10 g parsley, 40 g parmesan, 40 g pine nuts, 2 garlic cloves, 100 ml olive oil, 1 tsp. wine vinegar, 0.5 tsp. sea salt.
Cooking: Dry the pine nuts in a dry frying pan and grate the parmesan. Send all the ingredients to a blender and grind.
20. Sauce with capelin caviar for fish

You will need: 100 g of capelin caviar, 100 g of smoked pink salmon, 300 ml of sour cream, spices, herbs.
Cooking: Cut pink salmon and chop ze laziness. Place all ingredients in a blender and blend sauce until smooth.
