1. Salad of tomatoes, cucumbers and bell peppers with sterilization

An easy way to prepare a delicious salad for the winter.
You will need: 2 kg of tomatoes, 2 kg of cucumbers, 2 kg of bell peppers, 1 kg of onions, 100 ml of vegetable oil, 60 ml of vinegar, 1 tsp. black peppercorns, 120 g sugar, 100 g salt, 3 liters of water.
Cooking: Cut the vegetables into small pieces and arrange in prepared jars. Boil water separately, add sugar, salt, black pepper and boil for 3 minutes. Pour this brine into jars of vegetables, carefully place them in a pot of water and sterilize for 10 minutes. Pour vinegar and oil into each jar. Roll up and turn upside down.
2. Salad of cucumbers and tomatoes with tomato sauce

Vegetables should be cooked in an enameled or steel bowl.
You will need: 3 kg cucumbers, 1.5 kg tomatoes, 1 cup tomato sauce, 400 g onions, 3 tbsp. vinegar, 3 tbsp. vegetable oil, 0.5 tsp ground black pepper, 80 g sugar, 60 g salt.
Cooking: Cut all the vegetables, mix with sugar, salt and ground pepper. Cover with a lid and set aside for 2 hours to release the juice. Then put the workpiece on low heat and boil for 5 minutes. Add tomato sauce, vinegar, oil and cook for another 5-7 minutes. Arrange the salad in sterilized jars, roll up and wrap for a day with a warm blanket.
3. Salad of tomatoes, bell peppers and cucumbers without onions

Soak cucumbers in cold water for 2-3 hours.
You will need: 1 kg cucumbers, 1 kg tomatoes, 3 bell peppers, 20 g parsley, 1 tsp. black peppercorns, 2 tbsp. vegetable oil, 2 tbsp. vinegar, 1 tbsp. granulated sugar, 30 g of salt, 2 liters of water.
Cooking: Cut all the vegetables and greens, mix them with black pepper and put them in clean jars. Separately, boil water with sugar and salt, boil for 2 minutes and pour it into jars with vegetables. Sterilize them for 10 minutes, pour oil and vinegar into each blank. Roll up and leave for a day in a warm place.
4. Vegetable salad with tomatoes and cucumbers for the winter

Don’t cut the vegetables too finely or they will overcook.
You will need: 2 kg cucumbers, 2 kg tomatoes, 1 kg bell peppers, 400 g onions, 3 tbsp. vinegar, 3 tbsp. vegetable oil, 100 g sugar, 80 g salt.
Cooking: Clean and cut all vegetables. Add oil, vinegar, sugar, salt and mix well. Cover the workpiece with a lid and put it aside to infuse for 1.5-2 hours. Boil the salad for 10-15 minutes, put it in sterilized jars and roll up.
5. Salad of tomatoes, cucumbers and bell peppers without sterilization

You can also add ground pepper or cloves.
You will need: 2 kg of tomatoes, 1 kg of cucumbers, 1 kg of bell pepper, 50 g of garlic, 3 medium onions, 60 ml of vegetable oil, 60 ml of apple cider vinegar, 3 tbsp. sugar, 2 tbsp. salt.
Cooking: Cut the tomatoes, cucumbers, bell peppers and onions into small pieces. Mix vegetables with butter, sugar and salt, cover and leave everything for 1.5 hours at room temperature. Then put the workpiece on a slow fire, bring to a boil and boil for 10 minutes. Pour chopped garlic into plates, pour in vinegar and cook for another 5 minutes. Arrange the salad in sterilized jars, roll up and turn them upside down.
6. Tomato and cucumber salad in layers for the winter

The sterilization time starts from the moment when the juice boils in the jars.
You will need: 1 kg of cucumbers, 1 kg of tomatoes, 1 kg of onions, 500 g of carrots, 500 g of bell peppers. 2 tbsp vinegar, 50 ml vegetable oil, 2 dill umbrellas, 1 bay leaf, 80 g sugar, 80 g salt, 2 liters of water.
Cooking: Cut the vegetables into circles and put them in jars in layers in the following sequence: onions, cucumbers, carrots, tomatoes and bell peppers. Separately, boil water with spices, add sugar, salt and boil for 2-3 minutes. Pour this marinade into jars of vegetables, place in a pot of hot water and sterilize for 10 minutes. Carefully remove the jars from the pan, pour in vinegar and oil, and roll up for the winter.
7. Salad of tomatoes, cucumbers, onions and hot peppers

In this recipe, it is better to remove the skin from the tomatoes.
You will need: 1 kg of tomatoes, 1 kg of cucumbers, 500 g of onions, 1/2 bunch of greens, 1 pod of hot pepper, 60 ml of vinegar, 100 ml of vegetable oil, 0.5 tsp. ground black pepper, 40 g sugar, 30 g salt.
Cooking: Vegetables and greens – cut and mix. Add salt, sugar, ground pepper and oil, and leave everything for 1.5 hours under the lid. Put the workpiece on the fire, boil for 5-7 minutes and add vinegar. Boil for another 5 minutes, put the salad in sterilized jars, roll up and turn upside down.
8. Salad of tomatoes and cucumbers with balsamic vinegar for the winter

Most often, jars with a capacity of 500 ml are used for such a blank.
You will need: 2 kg of tomatoes, 1 kg of cucumbers, 500 g of onions, 50 g of garlic, 20 g of dill, 80 ml of vegetable oil, 80 ml of balsamic vinegar, 3 tbsp. sugar, 2 tbsp. salt, ground black pepper and paprika to taste.
Cooking: Chop the tomatoes, cucumbers and peeled onions. Mix everything, add salt, spices and sugar, and leave covered for 1.5-2 hours. Then, over low heat, bring the workpiece to a boil, pour in vinegar, oil and boil for another 10 minutes. Add chopped garlic and dill, boil for another 5 minutes and roll up the salad for the winter.
9. Salad of tomatoes and cucumbers with lemon juice

A light salad that can be put even on a festive table in winter.
You will need: 2 kg of tomatoes, 1 kg of cucumbers, 300 g of onions, 1/2 head of garlic, juice of one lemon, 3 tbsp. vegetable oil, 60 g sugar, 40 g salt.
Cooking: Chop the tomatoes, cucumbers and peeled onions. Mix them with sugar and salt, and leave for 2 hours – so that the juice stands out. Boil the workpiece for 5 minutes, add lemon juice, oil and finely chopped garlic. Cover with a lid and cook for another 5-7 minutes. Arrange the salad in prepared jars and roll up.
10. Tomato and cucumber salad with citric acid for the winter

Solid advantages: the absence of a sharp vinegar smell, mild sourness and a reliable preservative.
You will need: 1 kg of tomatoes, 1 kg of cucumbers, 300 g of bell pepper, 50 g of garlic, 200 g of onion, 60 ml of vegetable oil, 1 tsp. citric acid, 2 tbsp. sugar, 1.5 tbsp. salt.
Cooking: Cut all the vegetables into small pieces, mix with sugar, salt, citric acid and oil. Cover and set aside for 1 hour. Put the workpiece on low heat and boil for 10 minutes. Pour garlic sliced into plates, boil for another 5 minutes and spread the salad in sterilized jars. Roll it up, turn it upside down and wrap it in a warm blanket for a day.
11. Salad of tomatoes, cucumbers and cabbage for the winter

Choose dense, light green cabbage.
You will need: 1 kg of tomatoes, 1 kg of cucumbers, 1 kg of cabbage, 300 g of carrots, 300 g of onions, 100 ml of vinegar, 80 ml of vegetable oil, 80 g of sugar, 50 g of salt.
Cooking: Prepare and cut vegetables. Sprinkle the cabbage with salt and lightly knead with your hands. Mix everything, add sugar and leave the workpiece under the lid for 1 hour. Then boil it for 5 minutes, add oil, vinegar and simmer for another 10 minutes. Fill sterilized jars with lettuce and seal with lids.
12. Salad with cucumbers, tomatoes and sweet peppers in layers

Prepare the marinade in purified water.
You will need: 2 kg of tomatoes, 2 kg of cucumbers, 1 kg of bell peppers, 1 kg of onions, 4 dill umbrellas, 5 allspice peas, 120 ml of vinegar, 100 g of sugar, 40 g of salt, 2 liters of water.
Cooking: Cut the vegetables and arrange them in layers in jars in this order: onions, bell peppers, cucumbers and tomatoes. Separately, boil water with dill, allspice, salt and sugar. Pour this marinade into jars of vegetables, put them in a pot of hot water and sterilize for 10 minutes. Take the jars out of the pan, pour vinegar into them and roll them up.
13. Salad of cucumbers, tomatoes, zucchini and hot peppers

Such a salad cheers up even with its appearance!
You will need: 1 kg of cucumbers, 1 kg of tomatoes, 1 kg of zucchini, 200 g of small hot peppers, 4 cloves of garlic, 200 g of carrots, 60 ml of vinegar, 4 tbsp. vegetable oil, 3 tbsp. sugar, 2 tbsp. salt, 2 liters of water.
Cooking: Cut cucumbers, zucchini, tomatoes and carrots. Mix everything, add whole pods of hot pepper and peeled garlic cloves. Put the vegetables in clean jars and fill them with hot water with sugar and salt. Sterilize for 10 minutes, add vinegar and oil, then another 5 minutes and roll up for the winter.
14. Salad of tomatoes, cucumbers, cauliflower and zucchini

Use only cabbage florets.
You will need: 500 g tomatoes, 500 g cucumbers, 500 g cauliflower, 500 g zucchini, 500 g bell pepper, 200 g carrots, 50 g any greens, 3 medium onions, 1 tsp. black peppercorns, 50 ml apple cider vinegar, 3 tbsp. vegetable oil, 1 tbsp. sugar, 1 tbsp. salt.
Cooking: Prepare and cut vegetables with herbs. Fill the jars in layers in this sequence: greens, cauliflower, bell peppers, zucchini, carrots, cucumbers and tomatoes. Boil water with sugar, salt and black pepper in a separate saucepan. Pour this marinade into jars of vegetables, add vinegar and oil. Sterilize for 10 minutes and roll up the lids.
15. Vegetable salad for the winter without sterilization

Every novice housewife can easily cope with such a recipe.
You will need: 2 kg of tomatoes, 1 kg of cucumbers, 500 g of carrots, 500 g of onions, 0.5 tsp. ground red pepper, 0.5 tsp paprika, 10 black peppercorns, 80 ml of vinegar, 100 ml of vegetable oil, 70 g of sugar, 50 g of salt.
Cooking: Peel the tomatoes and grind in a blender. Grate the carrots, and finely chop the cucumbers and onions. Mix everything, add spices, salt, sugar and butter. Boil the workpiece for 10 minutes, add vinegar and cook for another 5 minutes. Arrange the salad in prepared jars and roll up.
16. Korean salad of tomatoes, cucumbers and zucchini for the winter

Fans of savory snacks will definitely appreciate it!
You will need: 1 kg of tomatoes, 1 kg of cucumbers, 1 kg of zucchini, 600 g of carrots, 200 g of onions, 100 g of garlic, 1 pod of hot pepper, 4 tbsp. vinegar, 50 ml vegetable oil, 1 tsp. ground ginger, 1 tsp spices for Korean carrots, 50 g sugar, 40 g salt.
Cooking: Cut tomatoes, cucumbers, zucchini, hot peppers and onions. Grate carrots on a special grater, mix it with spices, chopped garlic, sugar and salt. Pour in boiling oil and set aside for 10 minutes. Mix all the vegetables together, pour in the vinegar and leave to brew for 1.5-2 hours. Boil the salad for 10 minutes over low heat, arrange in sterilized jars and roll up the lids.
17. Tomato, cucumber and eggplant salad for the winter

Rinse eggplant with salted water first.
You will need: 2 kg of tomatoes, 1 kg of eggplant, 1 kg of cucumbers, 1 kg of bell pepper, 500 g of onion, 1 head of garlic, 120 ml of vinegar, 100 ml of vegetable oil, 5 tbsp. sugar, 4 tbsp. salt.
Cooking: Cut into small pieces and mix together all the vegetables, add sugar, salt, oil and vinegar. Let it brew a little, and then spread the salad into jars, tamping it tightly with a spoon. Sterilize for 10 minutes and roll up.
18. Salad with cucumbers, tomatoes and carrots for the winter

You can quickly chop vegetables using a food processor or blender.
You will need: 1 kg cucumbers, 1 kg tomatoes, 500 g carrots, 300 g onions, 3 tbsp. vegetable oil, 3 tbsp. vinegar, 1 tsp paprika, 1 tbsp. sugar, 1.5 tbsp. salt.
Cooking: Cucumbers and carrots grate on a coarse grater, finely chop the onion and tomatoes. Mix everything, add paprika, sugar, salt, vinegar and oil. Cover with a lid and set aside for 1 hour. Arrange the salad in clean jars, sterilize them for 10 minutes and roll them up.
19. Tomato and cucumber salad with mustard

Appetizing appetizer with spicy notes.
You will need: 2 kg of tomatoes, 2 kg of cucumbers, 1 kg of onions, 1/2 head of garlic, 1 tbsp. mustard powder, 80 ml of vinegar, 4 tbsp. vegetable oil, 100 g sugar, 70 g salt.
Cooking: Cut and mix vegetables, add salt and sugar, and remove the workpiece to infuse for 1 hour. Then, over low heat, bring everything to a boil, add mustard powder, vinegar, oil and boil for another 10 minutes. Arrange the salad in prepared jars, roll up and wrap for a day with a warm blanket.
