1. Salad with cottage cheese, crab sticks and cucumbers
Cucumbers for this salad choose only young ones with dense pulp, and cottage cheese – dry, granular and crumbly.
You will need: 3 cucumbers, 330 g of cottage cheese, 250 crab sticks, 90 g of algin red caviar, 1 handful of chopped dill, 3 tbsp. l. mayonnaise.
Cooking: Alginic red caviar is made from brown seaweed (kelp), so it is not only tasty, but also very healthy. Mix it with chopped dill, crab sticks, cottage cheese, cucumber slices and mayonnaise.
2. Salad with cucumbers and garlic
If you let this salad stand for at least an hour, then fresh cucumbers will acquire the taste and aroma of lightly salted ones. It will turn out an incredibly tasty snack for meat, pilaf or potatoes.
You will need: 0.5 kg of fresh young cucumbers, 3 cloves of garlic, 1 bunch of dill, 2.5 tbsp. l. unrefined sunflower oil, 5-6 drops of table vinegar (9%), 0.3 tsp. salt.
Cooking: Put the cucumbers cut into thin circles in an enamel pan, add garlic and dill, chopped as finely as possible. Pour in a mixture of oil, vinegar and salt.
3. Korean cucumber salad
A very hearty and tasty appetizer with beef meat and Korean-style pickled fresh cucumbers.
You will need: 400 g beef pulp, 3 cucumbers, 1 bell pepper, 2 onions, 3 cloves of garlic, 1 tsp. ground chili pepper, 1 tsp. ground coriander, 0.5 tsp. sugar, 1 tsp sea salt, 4 tbsp. l. soy sauce, 2 tbsp. l. table vinegar, 4 tbsp. l. olive oil.
Cooking: Defrost the beef, but not completely, in a slightly frozen form it will be easier to cut into thin long sticks. Fry in oil, add onion half rings, pour in soy sauce. Cucumbers, too, cut into long strips, sprinkle with salt, leave for 20 minutes to let the juice, then squeeze, mix with the cooled meat, chopped bell pepper, vinegar and spices.
4. Salad “Snow Crab” with cucumbers and sour cream
For salad dressing, you can also use a mixture of 20% sour cream with homemade mayonnaise, in a 1: 1 ratio.
You will need: 1 pack (450 g) crab sticks, 4 boiled eggs, 5 young cucumbers, 5-6 green onions, 7 sprigs of dill, 1 can of corn, 4-5 tbsp. l. sour cream with ground pepper and salt.
Cooking: Cut cucumbers, crab sticks, eggs into equal-sized pieces, put them in a salad bowl along with chopped herbs and corn without liquid. Fields of sour cream seasoned with spices.
5. Beef tongue and cucumber salad
A real delicacy salad, which is prepared in just a few minutes. The main thing is to properly boil and clean the beef tongue in advance!
You will need: 1 beef tongue, 2-3 cucumbers, 130 g toasted walnuts, 160 g cachotta cheese with fenugreek or paprika pieces, mayonnaise.
Cooking: Cut the beef tongue and cucumbers into small cubes, mix with mayonnaise, half of the grated cheese and crushed nuts into large crumbs. Sprinkle the top of the salad with the remaining cachotta.
6. Salad with fresh cucumbers in Flemish style
This simple salad can be safely included in the dietary and healthy menu.
You will need: 2 cucumbers, 2 boiled yolks (chicken), 160 g Greek yogurt, dill.
Cooking: Cucumbers cut into medium pieces, dip in salted boiling water, blanch for 10 minutes, put on a sieve. Beat yogurt with yolks, dill and spices in a blender, mix the sauce with cucumbers.
7. Smashed cucumbers in Chinese
The Chinese are a very inventive people, which is only worth their salad of broken fresh cucumbers!
You will need: 6 medium cucumbers, 2 tbsp. l. rice vinegar, 1 fresh chili pepper, 1.5 tbsp. l. sesame oil, 3 cloves of garlic, 1.5 tbsp. l. sesame seeds, 1 bunch of spicy greens (assorted to taste).
Cooking: Cut the cucumbers in half lengthwise, scoop out the seeds with a spoon. Prepare two cutting boards, put half a cucumber between them, press hard and tap the top board with a meat mallet to flatten the vegetable.
Cut the halves of cucumbers processed in this way into long thin strips diagonally, fields with rice vinegar, after 12-15 minutes, put them on a sieve. Pour over diced cucumbersgarlic and pulp of chili pepper (without stalk and seeds), add sesame oil, herbs, sesame seeds.
8. Salad with boiled eggs and cucumbers
A low-calorie but very satisfying salad that is perfect for breakfast or dinner.
You will need: 2 boiled eggs, 2 cucumbers, 1.5 tbsp. l. low-fat sour cream, 1 tsp. lime juice, 5 sprigs of dill, 1 tsp. mustard seeds.
Cooking: Cut cucumbers and eggs into large pieces, add dill, lime juice and sour cream with mustard. Done, that’s all!
9. Salad with cucumbers, orange and mint
Instead of an orange, you can add tangerine, grapefruit, or a few slices of pomelo to the salad.
You will need: 2 cucumbers, 4 boiled eggs, 1 orange, 1 jar of green peas, 0.5 bunch of green basil, mint, mayonnaise, a pinch of ground hot pepper.
Cooking: Peel the citrus from the films, cut the slices into small pieces, mix with diced eggs and cucumbers. Add green peas, mint and basil, dress salad with chili mayonnaise.
10. Salad with cabbage, cucumbers and avocados
The oily flesh of an avocado makes any salad nutritious and satisfying.
You will need: 0.5 kg of finely chopped cabbage, 2 cucumbers, 1 can of corn, 110 ml of sour cream, 1 tbsp. l. mustard seeds, 1 tbsp. l. toasted sesame seeds, 1 medium avocado.
Cooking: Mix thin cucumber slices with avocado cubes, shredded cabbage, add corn and sesame seeds. Top with sour cream mixed with Dijon mustard.
11. Salad “Sharp” of fresh cucumbers

You will need: 5-6 cucumbers, 1 large bunch of cilantro, 3-4 tsp. without a slide of ground hot pepper, 2 heads of garlic, 0.5 tsp each. salt and sugar, 1.5 tbsp. l. vinegar.

You will need: 400 g cucumbers, 250 ml Greek yogurt, 3 cloves of garlic, 0.5 tsp. sea salt, 4-5 sprigs of fresh mint, 0.3 bunches of herbs (assorted), 0.25 tsp. ground pepper.
Cooking: Season the yogurt with garlic and spices, leave to infuse. Cut the cucumbers lengthwise into two halves, then chop each into thin slices, combine with chopped spicy herbs and mint, pour yoghurt-garlic dressing.
13. Greek salad with fresh cucumbers
Bright and juicy Greek salad is made from quality homemade vegetables that give it a pleasant taste and aroma.
You will need: 5 medium tomatoes, 2 small cucumbers, 1 sweet bell pepper, 1 red onion, 100 g soft cheese, 55 g black olives, 0.5 tsp. oregano, 3.5 tbsp. l. extra virgin olive oil, juice of half a lemon, a pinch of salt.
Cooking: Cut tomatoes and cucumbers into medium pieces, onions into half rings, sweet bell peppers into strips, cheese into large cubes. Mix everything in a deep salad bowl, pour a mixture of lemon juice, oil, salt and oregano.
14. Cheese salad with cucumbers and apples
Delicate and spicy salad made from grated cheese with apples and fresh cucumbers. Very tasty with fresh toast!
You will need: 350 g of hard cheese, 250 g of fresh cucumbers, 3 sour apples, 2.5 tbsp. l. sour cream (20%) and homemade mayonnaise, 2 tsp. mustard seeds.
Cooking: Cut apples without skin and seeds into thin slices, cucumbers into circles, and cheese into small cubes. Mix with mustard, sour cream and mayonnaise.
15. Salad with chicken, cucumbers and cheese
Chicken fillet browned in butter perfectly harmonizes with fresh cucumber.
You will need: 300 g chicken fillet, 2 tbsp. l. butter, 120 g cheddar cheese, 3 boiled eggs, 2 cucumbers, 3 tbsp. l. mayonnaise.
Cooking: Cut the chicken fillet into oblong sticks, fry in oil until golden brown. Cucumbers cut into thin circles, chop the eggs into cubes, rub the cheese on a grater. Dress the salad with mayonnaise and garnish with fried chicken pieces.
16. Cucumber salad with mango, avocado and kiwi
If desired, you can add sour apple or even orange pulp to this exotic salad.
You will need: 2 avocados, 3 cucumbers, 0.5 slightly unripe mangoes, 2 kiwis, 50 g hazelnuts, mayonnaise, 1 red onion, 0.5 cups boiling water, 1 tbsp. l. vinegar, 1/2 tsp. sugar and salt.
Cooking: Cucumbers and fruit pulp cut into small slices. Cut the onion into half rings, pour boiling water with vinegar, sugar and salt dissolved in it, after 10-15 minutes put it on a sieve and squeeze, mix with vegetables and fruits, season with mayonnaise, sprinkle with small pieces of hazelnuts.
17. Salad with cucumbers and sun-dried tomatoes
This salad consists essentially of two components: fresh cucumbers and a surprisingly tasty dressing of sun-dried tomatoes, garlic and corn oil.
You will need: 4 cucumbers, 3 tbsp. l. corn oil, 0.5 tsp. sea salt, 2-3 dried tomatoes, 2 cloves of garlic.
Cooking: Pour the sliced garlic with corn oil, add chopped sun-dried tomatoes and salt, put in the microwave for 1 minute. Pour over large pieces of cucumbers with still warm dressing.
18. Vegetable salad of Oriental cucumbers
The perfect salad with fresh cucumbers for barbecue or baked meat, it is very easy to prepare!
You will need: 2 cucumbers, 1 carrot, 1 sweet pepper, 5 green onions, 2 garlic cloves, 0.25 chili peppers, 0.5 bunches of dill, 1 tbsp. l. white sesame, 1 tbsp. l. apple cider vinegar, 2.5 tbsp. l. soy sauce, 1 tsp. sugar, 1.5 tbsp. l. sunflower oil, 0.5 tsp. salt.
Cooking: Cut the cucumbers lengthwise into thin slices, then cut each into thin strips, cut the bell pepper and chili into half rings, grate the carrots and garlic cloves on a Korean grater. Add toasted sesame seeds, greens and vinegar dressing with sugar, salt, oil and soy sauce to the vegetables.
19. Salad with tuna and cucumbers
Instead of canned tuna, you can take pink salmon, mackerel and even saury in oil.
You will need: 1 can of canned fish in oil, 1 can of corn, 2 fresh cucumbers, 3 boiled eggs, 1 red onion, 60 ml of sour cream (15%).
Cooking: Mash the fish with a fork, mix with corn, diced cucumbers and eggs. Finely chop the onion, pour boiling water over it to remove bitterness, send it to a bowl with fish, season with sour cream.
20. Salad with cucumbers, apples and onions

You will need: 2 sour apples, 1 leek, 3 fresh cucumbers, 1 tsp. Dijon mustard, a pinch of tarragon, 1 tbsp. l. lime juice, 2 tbsp. l. extra virgin olive oil, 0.5 tsp. ground sesame seeds in a coffee grinder.
Cooking: With a sauce of sesame flour, lime juice, olive oil, tarragon and mustard, pour over a mixture of julienned cucumbers and apples. Cut the leek into half rings, mix with mustard seeds, transfer to a salad bowl.
