
In summer, rhubarb compotes are simply indispensable – they quickly quench thirst and tone up. In addition, unlike carbonated drinks, they contain many vitamins and nutrients. We tell 20 simple recipes!
1. Classic rhubarb compote

Rhubarb itself is sour, so it’s best to always cook it with sugar.
You will need: 600 g rhubarb, 2.5 liters of water, a glass of sugar.
Cooking: Clean the rhubarb from the films, cut and boil with sugar for 15 minutes. Turn off, cover and leave for 2 hours. Strain and serve compote chilled.
2. Rhubarb and Lemon Compote

The citrus aroma makes the compote even more appetizing.
You will need: 4 liters of water, 800 g of rhubarb, half a lemon, 1.5 cups of sugar.
Cooking: Peel the rhubarb and cut into cubes. Boil water, add sugar, rhubarb and cook for 10 minutes. Add crushed lemon and continue cooking for another 5 minutes. Insist under the lid for 2 hours. Strain and send to the refrigerator.
3. Compote of rhubarb and apples

For color, you can add some cherries, blackberries or hibiscus.
You will need: 3 liters of water, 500 g of rhubarb, 3 apples, 200 g of sugar.
Cooking: Cut apples and peeled rhubarb. Put everything in a saucepan, add sugar and water. Boil for 20 minutes over low heat. Insist compote under the lid for 2 hours.
4. Rhubarb and currant compote

Any currant to your taste will do.
You will need: 3 liters of water, 500 g of rhubarb, 1 cup of currants, 200 g of sugar.
Cooking: Peel and cut the rhubarb, sort out the currant. Boil water, add sugar, rhubarb, currants and cook for 15 minutes. Leave covered for 2 hours, then strain.
5. Rhubarb and rowan compote

Such a compote can even be rolled up in jars for the winter.
You will need: 2.5 liters of water, 500 g of rhubarb, a glass of chokeberry, 200 g of granulated sugar.
Cooking: Boil water, add sugar, chopped rhubarb and rowan. Boil for 20 minutes after boiling, turn off and leave for 2 hours.
6. Rhubarb mint compote

Refreshing and toning version of compote for this summer.
You will need: 3 liters of water, 600 g of rhubarb, 3 sprigs of mint, 200 g of sugar.
Cooking: Clean the rhubarb from the films and cut into small cubes, chop the mint. Put everything in a saucepan, add sugar, water and cook for 20 minutes. Infuse for 2 hours under the lid, strain and serve.
7. Compote with rhubarb and orange

The amount of sugar can be increased if necessary.
You will need: 3 liters of water, 600 g of rhubarb, 1 orange, 200 g of sugar.
Cooking: Wash the rhubarb, remove the membranes and cut. Scald the orange with boiling water and cut into small pieces. Pour the ingredients with sugar, add water and cook for 20 minutes over low heat. Turn off and insist 2 hours. Serve the compote chilled.
8. Compote with rhubarb, apples and cinnamon

Store compote in a dark, cool place.
You will need: 3 liters of water, 500 g of rhubarb, 2 apples, 1 cinnamon stick, 200 g of sugar.
Cooking: Cut apples and peeled rhubarb, put in a saucepan, add sugar, water, cinnamon and cook for 15 minutes. After 2 hours, strain and refrigerate.
9. Rhubarb compote with ginger and lemon

Choose juicy and bright rhubarb stalks.
You will need: 4 liters of water, 700 g of rhubarb, half a lemon, 20 g of ginger root, 300 g of granulated sugar.
Cooking: Cut the peeled rhubarb into cubes and place in a bowl. Pour sugar, chopped ginger root and cook for 15 minutes. Add chopped lemon and simmer for 5 more minutes. Turn off and insist under the lid for 2-3 hours. Serve chilled.
10. Rhubarb, strawberry and lime compote

Sugar can be replaced with honey.
You will need: 3 liters of water, 500 g of rhubarb, 300 g of strawberries, half a lime, 250 g of sugar.
Cooking: Chop strawberries, peeled rhubarb and lime. Boil water, add sugar, rhubarb and cook for 10 minutes. Add strawberries, lime and continue to cook for another 10 minutes. Turn off, cover and leave for 2 hours. Strain and send the compote to the refrigerator.
11. Rhubarb and cherry compote

You can decorate the compote with ice, mint leaves and fresh berries.
You will need: 2.5 liters of water, 500 g of rhubarb, 1 cup of cherries, 200 g of sugar.
Cooking: Bring water to a boil, add sugar chopped rhubarb, cherries and boil for 20 minutes. Remove from heat and leave covered for 2 hours. Before serving, proceed.
12. Rhubarb compote with raisins

To prepare compote, use ceramic, enamel or glassware.
You will need: 3 liters of water, 600 g of rhubarb, a handful of raisins, a glass of granulated sugar.
Cooking: Peel and cut the rhubarb, rinse the raisins with boiling water. Boil water, add sugar, rhubarb, raisins and cook for 20 minutes. Turn off, cover with a lid and leave for 2-3 hours.
13. Rhubarb and pear compote

Pleasant homemade compote with a mild sweet and sour taste.
You will need: 700 g rhubarb, 4 pears, 250 g sugar, 4 liters of water.
Cooking: Chop the peeled rhubarb and pears. Boil water, add rhubarb, pears, sugar and cook for 15 minutes. Turn off and put away to infuse for 2 hours. Strain and chill.
14. Compote with rhubarb and dried fruits

Soak dried fruits for 10 minutes.
You will need: 600 g rhubarb, 1 cup dried fruit, 200 g sugar, 4 liters of water.
Cooking: Peel and cut the washed rhubarb, pour boiling water over the dried fruits. Put everything in a saucepan, add water, sugar and cook for 20 minutes. Turn off and insist 3 hours under the lid. Strain compote before serving.
15. Compote with rhubarb and plums

Infuse compote under the lid to preserve the aroma and rich vitamin composition.
You will need: 3 liters of water, 500 g of rhubarb, 200 g of plums, a glass of sugar.
Cooking: Cut plums and peeled rhubarb. Bring water to a boil, add sugar, rhubarb and plums. Cook for 20 minutes over low heat, turn off and leave covered for 2 hours. Strain and bottle compote.
16. Rhubarb and gooseberry compote

Gooseberries can be crushed with a fork or added whole to compote.
You will need: 2.5 liters of water, 400 g of rhubarb, 1 cup of gooseberries, 180 g of sugar.
Cooking: Peel the rhubarb, chop and place in a bowl. Add gooseberries, sugar, water and boil for 20 minutes after boiling. Remove from heat and leave covered for 2 hours.
17. Rhubarb and raspberry compote

It is convenient to wash raspberries in a strainer under running water.
You will need: 3 liters of water, 600 g of rhubarb, 1 cup of raspberries, 200 g of sugar, mint sprig.
Cooking: Peel the rhubarb, chop and sprinkle with sugar in a saucepan. Add water and cook for 15 minutes. Pour in raspberries, chopped mint and boil for another 5 minutes. Turn off and insist 2 hours.
18. Rhubarb tea rose compote

Rub the rose petals to a mushy state.
You will need: 3 liters of water, 600 g of rhubarb, 1 cup of tea rose petals, 250 g of sugar, vanillin on the tip of a knife.
Cooking: Wash the rhubarb, remove the membranes, cut and mix with sugar. Add water, vanillin, rose petals and cook for 15 minutes over low heat. Turn off and leave covered for 2 hours. Strain and put in the refrigerator.
19. Compote of rhubarb and apple jam

Compote must be filtered several times.
You will need: 700 g of rhubarb, half a glass of apple jam, 200 g of sugar, 4 liters of water.
Cooking: Grind the peeled rhubarb, mix with sugar, jam and boil for 20 minutes. Turn off and insist 2 hours under the lid.
20. Lemon-linden rhubarb compote

When serving, you can add a slice of lemon.
You will need: 3 liters of water, 0.5 kg of rhubarb, a handful of lime blossom, half a lemon, 1 cup of sugar.
Cooking: Clean the rhubarb from the films and cut, chop the lemon with the peel. Put everything in a saucepan, add water, sugar and lime blossom. Boil compote for 20 minutes over low heat, turn off and insist under the lid for 3 hours. Strain and serve chilled.
