1. Classic recipe for compote with cherries

Soak the cherries in salt water for half an hour, then rinse twice.
You will need: 1 kg of cherries, 2.5 liters of water, 1 cup of sugar.
Cooking: Boil water, pour in the washed cherries and cook for 5 minutes after boiling. Remove compote from heat, add sugar and leave covered until completely cooled.
2. Cherry compote with citric acid

You can also use just lemon juice.
You will need: 700 g cherries, a pinch of citric acid, 150 g sugar, 2 liters of water.
Cooking: Rinse the cherries and put them into boiling water. After a minute, add citric acid. Boil compote for 4 minutes, remove from heat, add sugar and cool.
3. Cherry compote with lemon and cinnamon

A cinnamon stick can be replaced with 0.5 tsp. ground product.
You will need: 1 kg of sweet cherry, lemon wedge, 1 cinnamon stick, 200 g of sugar, 2.5 l of water.
Cooking: Boil water, add cinnamon and lemon. After 5 minutes, add the washed cherries and continue to cook after boiling for another 4 minutes. Add cinnamon, sugar and turn off. Insist compote under the lid for half an hour.
4. Compote with cherries and cherry juice

You can buy cherry juice at the store or make your own.
You will need: 1 kg of sweet cherry, 1 glass of cherry juice, 1 glass of sugar, 1 tsp. lemon juice, 3 liters of water.
Cooking: Boil water with juice for 5 minutes, add washed cherries, citric acid and cook for another 5 minutes. Turn off, add sugar, mix and cool.
5. Compote with cherries and strawberries

Sweet and fragrant compote for the whole family!
You will need: 1 kg of cherries, 300 g of strawberries, 1 cup of sugar, a pinch of citric acid, 3 liters of water.
Cooking: Bring the water to a boil, add the washed berries and cook for 7 minutes. Add citric acid, boil for 3 minutes and turn off. Pour sugar and cover the compote with a lid for half an hour.
6. Compote with cherries and apricots

It is not necessary to remove the pits from the apricots.
You will need: 1 kg of cherries, 500 g of apricots, 200 g of sugar, a pinch of citric acid, 3 liters of water.
Cooking: Boil water, add apricots and cook for 5 minutes. Pour in the cherries, citric acid and boil for another 5 minutes. Switch off, add sugar and cool.
7. Cherry and mint compote

Do not keep mint in compote for more than an hour, otherwise bitterness will appear.
You will need: 800 g cherries, 3 sprigs of mint, 200 g sugar, 1 tsp. lemon juice, 2.5 liters of water.
Cooking: Add prepared mint and cherries to boiling water. After 2 minutes, pour in the lemon juice and cook for 6 minutes. Turn off, add sugar and cool.
8. Compote of cherries with lemon

Rinse the lemon thoroughly with boiling water before cooking the compote!
You will need: 1 kg of cherries, half a lemon, 250 g of sugar, 3 liters of water.
Cooking: Rinse the cherries, scald the lemon with boiling water and cut it together with the peel. Boil water, add lemon, cherry and boil for 8 minutes. Turn off, add sugar and leave covered for 30-40 minutes.
9. Rich cherry and apple compote

Apples of any variety to your taste will do.
You will need: 1 kg of cherries, 400 g of apples, 200 g of sugar, a pinch of citric acid, 2 liters of water.
Cooking: Add cherries and chopped apples to boiling water. Boil for 2 minutes, add citric acid and continue cooking for another 5 minutes. Switch off, add sugar and insist under the lid.
10. Cherry compote with berries and raspberry leaves

Tie fragrant leaves to make them easier to catch later.
You will need: 2 liters of water, 500 g of cherries, 1 cup of raspberries, 5 raspberry leaves, 1 tsp. citric acid, 150 g of granulated sugar.
Cooking: Wash the cherries, raspberries and leaves. Boil water, add berries and boil for 3 minutes. Add citric acid, raspberry leaves and continue to cook the compote for another 4 minutes. Remove from heat, add sugar and set aside.
11. Compote with cherries, currants and raspberries

Currants and raspberries can be pre-mashed in a mortar or chopped in a blender.
You will need: 2.5 liters of water, 500 g of cherries, 1 cup of raspberries, 1 cup of currants, 180 g of sugar, 1 tsp. lemon juice.
Cooking: Bring the water to a boil, add the washed berries and cook for 5 minutes. Add lemon juice and switch off after 2 minutes. Pour sugar, mix and cover with a lid until it cools completely.
12. Cherry and plum compote

Large plums cut into quarters, and small – throw whole.
You will need: 1 kg of cherries, 400 g of plums, 1 cup of sugar, a slice of lemon, 3 liters of water.
Cooking: Boil water, add prepared plums, cook for 5 minutes. Add cherries, lemon juice and cook compote for another 5 minutes. Turn off, add sugar and leave covered for half an hour.
13. Cherry and rhubarb compote

With the indicated amount of sugar, the compote will turn out slightly sour.
You will need: 2 liters of water, 500 g of cherries, 200 g of rhubarb, 5 tbsp. l. Sahara.
Cooking: Rinse the cherries, rinse the rhubarb, peel off the films and cut. Boil water with sugar, add cherries, rhubarb and simmer for 10 minutes over low heat. Turn off and cover with a lid for an hour.
14. Cherry compote with oranges

Serve the compote chilled, with ice and orange slices.
You will need: 500 g cherries, 2 oranges, 1 tsp. lemon juice, 150 g of granulated sugar, 2.5 liters of water.
Cooking: Rinse the cherries, scald the oranges with boiling water and cut into pieces along with the peel. Boil water, add oranges, cherries and cook for 5 minutes. Add lemon juice and switch off after 3 minutes. Pour sugar and leave for about half an hour.
15. Compote with cherries, cinnamon and star anise

A great recipe for lovers of fragrant summer drinks.
You will need: 2 liters of water, 600 g of sweet cherry, 2 star anise, 1 cinnamon stick, 1 bag of vanilla sugar, 1 allspice pea, 3 tbsp. sugar, a pinch of citric acid.
Cooking: Boil water, add star anise, cinnamon, allspice and boil everything for 10 minutes. Add washed cherries, vanilla sugar, citric acid and cook for another 7 minutes. Turn off, add sugar and cover with a lid for half an hour.
16. Cherry and basil compote

Basil saturates the compote with an original aroma and useful substances.
You will need: 2 liters of water, 600 g of sweet cherry, 30 g of purple basil, 150 g of sugar, a slice of lemon.
Cooking: Boil the basil sprigs for 5 minutes, add the cherries and cook for another 5 minutes after boiling. Squeeze out the lemon juice, add sugar and switch off after 2 minutes. Insist compote for half an hour, strain and cool.
17. Compote with cherries and dogwood

Such a compote invigorates well and quenches thirst in the summer!
You will need: 1.5 liters of water, 400 g of sweet cherry, 1 cup of dogwood, a pinch of citric acid, 150 g of sugar.
Cooking: Boil dogwood for 5 minutes, add cherries, citric acid and cook for another 5 minutes. Remove from heat, add sugar and leave covered for 40 minutes.
18. Compote with cherries and cherry jam

According to this recipe, you can cook compote with other types of jam.
You will need: 2 liters of water, 500 g of cherries, 3 tbsp. cherry jam, 150 g sugar.
Cooking: Boil water, add jam and pour cherries. Boil for 5 minutes after boiling, add sugar and remove from heat. Infuse for half an hour under the lid, before serving the strain.
19. Cherry compote in a slow cooker

You can cook compote in a slow cooker in the “Cooking” and “Soup” modes.
You will need: 1 kg of sweet cherry, 250 g of sugar, vanillin on the tip of a knife, 3 liters of water.
Cooking: Pour the washed cherries and vanillin into the bowl of the multicooker, cover with a lid and cook on the “Soup” program for 10 minutes. Cool under the lid, add sugar and mix.
20. Cherry compote for the winter

In winter, a glass of fragrant compote will be a pleasant reminder of summer!
You will need: 1 kg of cherries, a glass of sugar, 0.5 tsp. citric acid, 3 liters of water.
Cooking: Rinse the berries, put them in sterilized jars and pour boiling water over them. After 40 minutes, drain the water, bring to a boil, add sugar, citric acid and pour jars of cherries to the top. Roll up compote and wrap for a day with a warm towel.
