
Cold soups are prepared all over the world, and there are hundreds of recipes for their preparation. They are vegetable, with the addition of meat, mushrooms or pickles. We’ve rounded up 20 of the best recipes you’ll love on hot summer days!
1. Cucumber gazpacho

Refreshing and very light!
You will need: 500 g cucumbers, 150 g celery stalks, 2 g mint, 1 tbsp. wine red vinegar, 15 g spinach, 1 tbsp. lemon juice, 1 g chili pepper, 15 g basil, 50 g radish, 10 g chia seeds, crushed ice.
Cooking: Soak the chia seeds in water, cut the radish into rings, peel the cucumbers and grate them on a coarse grater. Blend all ingredients except radishes and chia with ice in a blender. Serve soup garnished with radishes and seeds.
2. Okroshka on kefir

A classic first course of every summer.
You will need: 20 g boiled peeled potatoes, 1 egg, 20 g radish, 20 g cucumbers, 30 g doctor’s sausage, 3 g green onions, 280 ml kefir, 2 g rosemary, 2 g thyme, 2 g basil, 10 g olive oil, 1 l . kefir 1%, 250 ml. carbonated water, 25 g of granular mustard, 25 g of horseradish, 5 g of salt.
Cooking: Cut all the ingredients into thin strips and put on a plate. Combine kefir, mineral water, spices and pour vegetables. Garnish with herbs and olive oil.
3. Gazpacho with strawberries

A cold soup that not only refreshes, but also drives you crazy with its aroma.
You will need: 600 g fresh strawberries, 300 g tomatoes in their own juice, 20 g stracciatella cheese, 60 g wheat bread, 70 g celery, 150 g cucumbers, 100 g bell peppers, half a red onion, 1 tbsp. olive oil, 1 tbsp. lemon juice, salt, pepper, red paprika, garlic clove, microgreens.
Cooking: Cut bread into cubes, garlic and vegetables. Mix and leave to marinate for an hour. Blend the vegetables in a blender until smooth. Serve garnished with a slice of cheese, strawberry wedges and microgreens.
4. Gazpacho with stracciatella cheese

You will need: 200 g tomatoes, 30 g celery, 40 g bell peppers, 5 g cilantro, 5 g chili peppers, 20 g olive oil, 80 g stracciatella cheese, 3 g basil, salt.
Cooking: Pour boiling water over the tomatoes, dip in cold water and remove the skin. Blend all ingredients in a blender. Serve the dish garnished with a slice of cheese and herbs.
5. Belarusian cold

Cold soup with a taste of summer.
You will need: 6 pcs. beets, 3 cucumbers, 6 eggs, 250 ml. sour cream, a bunch of green onions, a bunch of dill, a couple of sprigs of parsley, 4 tbsp. vinegar, 3 l. water, salt, sugar.
Cooking: Boil the eggs, beets, peel the cucumbers, finely chop the greens. Separate whites from yolks. Perebey proteins with beets and cucumbers in a blender or sodium on a coarse grater. Put the greens in a bowl and mix together with the yolks.
Combine all the ingredients, season with water and sour cream. Mix well and serve the soup with toast or baked potatoes.
6. Cold Bulgarian soup “Tarator”

Delicious soup that takes no more than 10 minutes to prepare and is great refreshing!
You will need: 1 cucumber, 250 ml. kefir, 250 ml. mineral water, a bunch of dill, 1 tbsp. vegetable oil, 2 cloves of garlic, 2 tbsp. roasted pine nuts, salt.
Cooking: Grate the cucumber, finely chop the garlic and dill, mix mineral water with kefir. Combine all the ingredients and send to infuse for 2 hours in the cold. Serve the soup, garnished with herbs, cucumber slices and nuts.
7. Cold soup with processed cheese

Well, very creamy taste!
You will need: 500 g cucumbers, 100 g processed cheese, 125 ml. cream 10%, a clove of garlic, herbs, salt, pepper, a few wild pickled mushrooms.
Cooking: Peel the cucumbers, cut the melted cheese into slices, chop the garlic. Add cream and beat everything with a blender. Salt, pepper, garnish with herbs, mushrooms.
8. Beetroot Gazpacho

If the tomatoes were not juicy enough and gave little juice, add a couple of tablespoons of broth or tomato juice.
You will need: 1 beet, 3 large tomatoes, a small onion, 1 cucumber, a clove of garlic, a couple of sprigs of basil, 1 tbsp. olive oil, 1 tbsp. vinegar or red wine, salt, a quarter of a chili pepper, crushed ice.
Cooking: Boil the beets, peel and cut into pieces. Cut the tomatoes, onion, garlic, chili, add the beets, ice and beat everything with a blender. Garnish the soup with basil and cucumber slices.
9. Cold Almond Garlic Cream Soup

Classic Spanishth soup for the hot season.
You will need: 100 g whole almonds, 100 g white stale bread, 2 garlic cloves, 100 ml. olive oil, 1 tbsp. wine white vinegar, salt, 200 ml. ice water, harvesting green grapes, half a cucumber.
Cooking: Drop the almonds into boiling water for 2-3 minutes. Drain in a colander and remove the skin. Soak bread in water for 5 minutes. Gradually whisk nuts, bread, garlic in a blender. Add oil, water, spices. Put the soup in the refrigerator and serve after a couple of hours, garnished with grapes and cucumbers.
10. Cold soup puree with oatmeal and vegetables

Use sliced cucumber and carrots when serving – this will add a visual zest to the dish.
You will need: 250 ml. Greek yogurt, 3 tbsp. oatmeal, 40 g broccoli, 40 g green peas, 1 tbsp. chopped dill, salt.
Cooking: Mix yogurt with oatmeal and hide for 3-4 hours in the cold. Boil broccoli and peas for 2-3 minutes. Add vegetables to yogurt and blend with a blender. Garnish the soup with vegetables.
11. Cold tomato soup

Popular cold soup from southern countries, especially loved in Italy!
You will need: 460 g tomatoes in their own juice, onion, 2 pcs. petiole celery, 2 tbsp. olive oil, a couple of drops of Tabasco sauce, 100 g of crushed ice, salt, pepper.
Cooking: Fry the chopped onion and celery in a pan until tender. Put tomatoes, fried vegetables, ice in a blender, add oil and spices. Beat until a homogeneous thick mass. Refrigerate before serving.
12. Sorrel okroshka on kefir

Unusual taste due to sorrel sourness.
You will need: 2 l. water, 600 g fresh sorrel, 5 pcs. boiled potatoes, 5 eggs, 500 g sausages, 400 g cucumbers, 1 l. kefir 2.5%, a bunch of green onions, a bunch of dill, 200 g of radish, herbs to taste, salt.
Cooking: Boil sorrel in water and set aside. Dice vegetables, eggs, chop greens and transfer to a saucepan. Add kefir, sorrel broth and spices. Let cool for a couple of hours in the refrigerator.
13. Pear cream soup with parmesan

This soup is like a first love – impossible to forget!
You will need: 4 pears, 2 cups pear juice, 5 tbsp. cream 20%, 100 g parmesan, salt, pepper.
Cooking: Cut the pear into cubes and boil in juice for 25 minutes. Let cool and refrigerate for 5-6 hours. Add cream, spices and beat everything with a blender. Sprinkle the soup with grated parmesan.
14. Gazpacho with cod liver and shrimp

Choose large varieties of shrimp – they are more meaty and rich in taste.
You will need: 3 large fleshy tomatoes, cucumber, bell pepper, garlic clove, a few baguette slices, 1 tsp. lemon juice, 140 g cod liver, 5 large shrimp, 4 tbsp. olive oil, 1 tbsp. balsamic vinegar, salt, pepper, a pinch of chili, herbs.
Cooking: Pour boiling water over the tomatoes and remove the skin. Whisk all vegetables in a blender, along with spices. Let the soup cool in the cold for 2-3 hours. Serve with a piece of cod, shrimp and toasted baguette.
15. Latvian cold soup “Vasara”

The main difference from similar soups is in pickled beets.
You will need: 2 beets, 300 ml. water, 200 g sausage, 2 eggs, 3 cucumbers, 5 radishes, a bunch of greens, 2 tbsp. mayonnaise, 2 tbsp. vinegar 9%, 2 tsp salt, 2 tsp sugar, 2 bay leaves, 3 pcs. carnations, 3 pcs. allspice pepper.
Cooking: Boil marinade for beets from water, spices, vinegar. Boil the beets and cut into thin slices – pour the marinade, leave for 2 hours. Finely chop vegetables, boiled eggs, sausage, greens. Combine all the ingredients with beets and season with mayonnaise.
16. Cold soup with kvass and aspic

Incredibly tasty and hearty soup!
You will need: 100 g of ready-made jelly with meat, 1 glass of kvass, 1 tbsp. sour cream, 1 tbsp. hell, greens.
Cooking: Cut the jellied meat into cubes and place in a bowl. Mix sour cream with horseradish, fill the jellied meat with kvass. Add sour cream sauce to the soup and sprinkle with herbs.
17. Cold soup with herring

Such a soup seems ambiguous exactly until you try it!
You will need: 100 g herring fillet, 1 potato, 1 egg, 1 pickled cucumber, bunch of dill, 1 tsp. mustard, 2 pcs. green onions, 0.5 l. kefir, salt, pepper.
Cooking: Boil potatoes and eggs, finely chop all the ingredients. Sprinkle with finely chopped herbs, add mustard and mix. Leave to soak for 15 minutes. Serve the soup by placing the ingredients in bowls and pouring over with kefir, sprinkle with green onions.
18. Cold vegetable soup with avocado

It’s not just tastebut, but also useful!
You will need: 1 avocado, 3 tomatoes, 2 cucumbers, 5 radishes, bell peppers, leeks or green onions, a bunch of herbs to taste, 300-400 ml. chilled broth or mineral water, a couple of drops of Tabasco, 2 tbsp. olive oil, 2 tbsp. balsamic vinegar, salt, pepper.
Cooking: Wash all vegetables, herbs and chop finely. Transfer to a tureen, add broth or mineral water. Add spices and leave for a couple of hours in the cold. Serve garnishing the soup with avocado and radish slices.
19. Cold soup-puree with beets and apples

It is unlikely that you have ever tried fruit and vegetable cold soup!
You will need: 1 cucumber, juice of half a lemon, 600 ml. apple juice, 200 g yogurt, 350 g boiled beets, salt, pepper, mint.
Cooking: Slice the beets and add them to a blender with half the apple juice and yogurt. Beat until smooth. Add lemon juice, spices. Separately, grate the cucumber and mix with the remaining juice, mint and yogurt. Serve soup with cucumber dressing.
20. Gazpacho with pesto and cilantro

Any soup will sparkle with completely new flavors if you add pesto to it!
You will need: 400 g of tomatoes in their juice, 1 cucumber, 3 tbsp. rice vinegar, 3 tbsp. soy sauce, 0.5 tsp red hot pepper, small red onion, 1 tsp. sweet paprika, 2 tbsp. olive oil, 1 tsp fresh ginger, cilantro, mint, garlic clove, croutons.
Cooking: Cut vegetables, herbs and send to a blender with spices. Beat until smooth. When serving, add a teaspoon of pesto with cilantro to the soup, garnish with croutons.
