
Homemade preparations are a real salvation when the vegetable season is still far away. But you need to take care of them in advance. We suggest doing just that, so we tell you 20 recipes for delicious cabbage salads for the winter!
1. A simple salad with cabbage for the winter

Only cabbage and nothing more!
You will need: 1.5 kg of cabbage, 100 g of sugar, 100 ml of vegetable oil, 4 cloves of garlic, 500 ml of water, 100 ml of vinegar, 2 tbsp. salt.
Cooking: Finely chop the cabbage. Mix hot water with oil, vinegar, sugar, salt and crushed garlic, and pour over the cabbage. Leave under pressure for 3 hours, and then roll into jars.
2. Cabbage salad with tomato paste

It tastes like sauerkraut and stew at the same time.
You will need: 500 g cabbage, 250 g carrots, 250 g onions, 125 ml vegetable oil, 300 ml water, 125 g tomato paste, 2 tbsp. vinegar, salt.
Cooking: Chop the cabbage, grate the carrots, chop the onion, add water and salt and simmer the vegetables until soft. Add tomato paste, heat a little more and add vinegar at the very end, and then put the salad in jars.
3. Salad with cabbage and vegetables for the winter

A versatile recipe in which you can add any other vegetables to taste.
You will need: 400 g of cabbage, 150 g of carrots and onions, 250 g of eggplant, cucumbers and peppers, 550 g of tomatoes, 2 tbsp. sugar, 60 ml vegetable oil, spices, 50 ml vinegar.
Cooking: Mix shredded cabbage with grated carrots. Randomly chop half the tomatoes and the rest of the vegetables, and pass the remaining tomatoes through a meat grinder. Mix chopped vegetables with spices, vinegar and oil, and leave for a couple of hours. Add tomato puree, simmer for 20 minutes and roll into jars.
4. Cabbage salad with beets for the winter

An original and bright cabbage preparation when you want to add color to winter everyday life.
You will need: 1.5 kg of cabbage, 400 g of beets, 4 cloves of garlic, 1.5 tbsp. salt, 125 ml of vinegar, 100 g of sugar, 125 ml of vegetable oil.
Cooking: Mix grated beets, shredded cabbage and crushed garlic. Add the rest of the ingredients, mix, leave for an hour and put into jars.
5. Cabbage salad with carrots

So easy and delicious you can’t resist!
You will need: 1 kg of cabbage, 4 carrots, 6 cloves of garlic, 0.5 cups of vegetable oil, water and sugar, 1 tbsp. salt, 10 tbsp. vinegar.
Cooking: Chop the cabbage, grate the carrots on a coarse grater and add crushed garlic. Mash the vegetables with your hands, and prepare the marinade from the rest of the ingredients. Bring the marinade to a boil, pour over the cabbage, leave for 2-3 hours and arrange in jars.
6. Cabbage salad with pepper for the winter

A vitamin snack that keeps well all season long.
You will need: 2.5 kg of cabbage, 0.5 kg of pepper, onion and carrot, 2 tbsp. salt, 150 g of sugar, 250 ml of vegetable oil and vinegar.
Cooking: Chop all the vegetables as finely as possible and mix. Add the rest of the ingredients, let the salad brew and roll into jars.
7. Salad with cabbage and tomatoes for the winter

It is enough to open a jar – and an excellent salad for a feast is ready!
You will need: 700 g cabbage, 3 tomatoes, 1 carrot, 1 onion, 1 pepper, 1 tbsp. sugar, vegetable oil and vinegar, 1 tsp. salt, spices, herbs.
Cooking: Coarsely chop the tomatoes and onions, grate the carrots, chop the cabbage and cut the pepper into strips. Add greens, leave the salad to let the juice out and put it tightly in jars. Top with sugar, salt, oil and vinegar with spices, and roll up.
8. Cauliflower salad for the winter

A real vegetable delicacy that will delight even gourmets.
You will need: 1 kg of cauliflower, 3 peppers, 2 carrots, 2 onions, 120 ml each of vegetable oil and vinegar, 2 tbsp. sugar, 1 tbsp. salt, spices.
Cooking: Disassemble the cauliflower into small florets and pour boiling water for 10 minutes. Finely chop the remaining vegetables, put everything in a saucepan and share 0.5 cups of hot water with spices, vinegar and oil. Marinate for an hour and put the salad in jars.
9. Korean cabbage salad for the winter

It turns out very interesting if you do not chop the cabbage, but cut it larger.
You will need: 500 g cabbage, 1 onion, 1 carrot, 2 tsp . grated ginger, 15 ml of vinegar, spices, 2 tsp. sugar, 1 tsp salt.
Cooking: Cut the onion into feathers, grate the carrots on a Korean grater and chop the cabbage. Add all the spices, mix and put the salad in a jar. Top with vinegar and boiling water, and roll up.
10. Brussels sprout salad for the winter

Did such an idea come to your mind?
You will need: 450 g Brussels sprouts, 50 ml apple cider vinegar, 1 l water, 2 garlic cloves, 60 g sugar, 20 g salt, spices.
Cooking: Boil brussels sprouts until almost tender and place in jars. Mix water, vinegar and other spices, boil for 5 minutes, pour marinade over cabbage and roll up.
11. Beijing cabbage salad for the winter

Yes, that was also possible!
You will need: 1 kg of Beijing cabbage, 1.5 l of water, 50 g of onion, 40 g of green onion, 8 cloves of garlic, 30 g of ginger, 30 g of salt, spices.
Cooking: Boil water with salt and cool. Chop the cabbage, chop the onion, pour everything with brine and leave it under pressure for a couple of hours. Grind the herbs, garlic and ginger, add spices and roll the salad into jars.
12. Cabbage salad with tomato juice

Instead of juice, a rather thin tomato sauce is also suitable.
You will need: 8 kg of cabbage, 1 kg of carrots, 1 liter of tomato juice, 1 cup of vegetable oil, 300 ml of vinegar, 0.5 cups of salt, 1 cup of sugar, spices.
Cooking: Finely chop the cabbage, grate the carrots and pour in the tomato juice. Add the rest of the ingredients, mix everything well, leave for a day in a cool place, and then boil for 15 minutes. Divide the salad into jars.
13. Salad with cabbage and zucchini for the winter

For beauty, use figured cutting of vegetables.
You will need: 1 kg of cabbage, 2 zucchini, 500 g of carrots, 1 pepper, 500 g of onions, 0.5 cups of sugar, 2 tbsp. salt, 150 ml of vegetable oil, 0.5 cups of vinegar, spices.
Cooking: Randomly chop all the vegetables, add oil with vinegar and spices, mix and boil for half an hour over low heat. Put the salad in jars.
14. Cabbage salad with eggplant for the winter

Such a good recipe that you want to eat straight out of the jar!
You will need: 1 kg of cabbage, 1 kg of eggplant, 300 g of carrots, 10 cloves of garlic, 1.5 tbsp. salt, 0.5 cups of vinegar, spices.
Cooking: Boil eggplant for 5-7 minutes, cool and cut. Chop carrots with cabbage, chop garlic and mix vegetables. Add vinegar, salt and spices, put the salad in jars and roll up.
15. Cabbage salad with mushrooms

A very original combination of ingredients for harvesting cabbage for the winter.
You will need: 1 kg of cabbage, 4 carrots, 4 onions, 500 g of mushrooms, 70 ml of vinegar, 150 ml of vegetable oil, 2 tomatoes, 2 tbsp. sugar, spices.
Cooking: Fry the mushrooms until tender, and chop the tomatoes in a blender. Add onions with grated carrots to the mushrooms, stew a little and put the cabbage in the same place. When the vegetables become soft, add spices and vinegar, warm a little more and put in jars.
16. Salad with cabbage and zucchini for the winter

Cut all the vegetables into approximately the same squares – it will be both more appetizing and more beautiful.
You will need: 1 kg of cabbage, 1 kg of zucchini, 300 g of onion, 500 g of pepper, 500 g of tomatoes, 300 g of carrots, 30 g of salt and sugar, 70 g of herbs, 50 ml of vinegar.
Cooking: Cut all the vegetables, mix, add vinegar and spices, and put on the stove. Simmer everything for about an hour, stirring, and at the very end add greens and spread the salad in jars.
17. Cabbage salad without vinegar

Suitable for those who have problems with too sour dishes.
You will need: 1.5 kg of cabbage, 700 g of pepper, 700 g of carrots, 500 g of onions, 1.5 cups of oil, 2 tbsp. salt, spices.
Cooking: Finely chop the onion, add half the salt and leave for half a day in the refrigerator. Chop cabbage, carrots and peppers, mix with the remaining salt, and send there too. Combine the vegetables, pour in the oil and arrange the salad in jars.
18. Cabbage salad with cucumbers for the winter

This salad goes especially well with potatoes and meat.
You will need: 400 g cabbage, 400 g cucumbers, 200 g onions, 150 g peppers, 1.5 tbsp. sugar, 1 tsp salt, 50 ml vegetable oil, 30 ml vinegar.
Cooking: Randomly chop all the vegetables, add salt and sugar, and mix. Pour the salad with oil, let it brew for a couple of hours and put it in jars.
19. Cabbage salad with apples

Crispy salad with pleasant sweet and sour notes.
You have towill achieve: 4 kg of cabbage, 1 kg of onion, 2 kg of apples, 2 kg of pepper, 2 kg of tomatoes, 100 g of salt, 1 kg of carrots, spices.
Cooking: Boil carrots until half cooked and cut into thin strips. Coarsely chop the apples, onions, tomatoes and peppers, chop the cabbage and mix all the ingredients. Salt the vegetables, leave for an hour, arrange in jars and roll up.
20. Spicy cabbage salad for the winter

Add a little more ginger if you like.
You will need: 2 kg of cabbage, 3 peppers, 3 tomatoes, 3 carrots, 3 onions, 6 cloves of garlic, 60 g of sugar, 2 tbsp. vinegar, 1 glass of vegetable oil, 0.5 bunch of herbs, 1 chili, 2 tbsp. salt.
Cooking: Cut the vegetables and add chopped herbs, garlic and chili to them. Mix vinegar, salt and sugar with oil, pour over the salad and leave under pressure for an hour. Roll vegetables in jars.
