Shchi is an original Russian dish, without which it is impossible to imagine Russian cuisine. It was once the name of a variety of stews, but now it is primarily a cabbage dressing soup. Shchi always turns out hearty and tasty, especially with these recipes!
1. Fresh cabbage soup
A quick quick recipe if you don’t like to spend a lot of time cooking.
You will need: 400 g chicken, 6 potatoes, 300 g cabbage, 1 carrot, 2 onions, 6 tomatoes, 5 garlic cloves, spices.
Cooking: Boil the chicken until tender, strain the broth and add chopped potatoes to it. When it is cooked until half cooked, add chopped cabbage.
Prepare a roast of carrots, onions and garlic, and also send it to the cabbage soup. Separately chop and fry the tomatoes for 4-5 minutes, and also put them in a saucepan. Simmer for another 10 minutes and season to taste.
2. Sauerkraut soup
Sauerkraut soup is the perfect choice when you want something warm.
You will need: 500 g beef on the bone, 500 g sauerkraut, 2 carrots, 4 potatoes, 1 celery root, 2 onions, 3 garlic cloves, 2 tbsp. tomato paste, 1 tbsp. flour, 3 tbsp. butter, spices and herbs.
Cooking: Boil the broth of beef, 1 peeled onion, 1 carrot and celery root. It’s about an hour and a half. Strain it. Squeeze sauerkraut and fry in a spoonful of butter with a spoonful of tomato paste. Season and stew for half an hour.
In another tablespoon of oil, fry the grated carrots and chopped onions until golden. Season, add the remaining tomato and simmer for about 5 minutes. On the last spoonful of oil, fry the flour until golden. Cut potatoes into cubes.
Send the potatoes to the boiling broth and after 10 minutes add all the other ingredients. Bring the cabbage soup to a boil and cook for another 6-7 minutes. At the very end, add chopped herbs and spices.
3. Chinese cabbage soup
Beijing cabbage is good because it is even more tender than white cabbage, and cooks much faster.
You will need: 400 g chicken, 300 g Beijing cabbage, 4 potatoes, 1 onion, 1 carrot, 0.5 bell pepper, 0.5 tomato, 1 garlic clove, spices.
Cooking: Boil the chicken until tender and strain the broth. Add diced onion with carrots and continue to cook for about 20 minutes. Cut out the tough part of the Chinese cabbage leaves and cut into thin strips.
Add potatoes and tough parts of Chinese cabbage to the broth. Finely chop the soft parts of the leaves and chop the tomato with bell pepper and garlic. Also send to the pan after 5-7 minutes. Bring cabbage soup to a boil, season and remove from heat.
4. Village cabbage soup with pork ribs
Hearty and rich sour cabbage soup, which at one time was cooked on the stove.
You will need: 500 g pork ribs, 1 kg pork ham, 500 g sauerkraut, 2 onions, 3 potatoes, 1 tbsp. tomato paste, 2 cloves of garlic, spices.
Cooking: Cut the fat off the ham. Cut the ribs and ham into pieces, add half of the onion, cover everything with water, season and cook for 1.5 hours over low heat. Grind the bacon and fry with garlic in a dry frying pan until it melts. Fry chopped onion in this fat and mix it with tomato paste.
Send zazharka and sauerkraut with brine to the broth. Continue to cook cabbage soup on low heat until the cabbage is soft. Add chopped potatoes and garlic, and cook until tender.
5. Cabbage soup with chicken
Shchi with chicken is lighter and healthier. You can even give them to children!
You will need: 600 g chicken, 700 g cabbage, 600 g potatoes, 1 onion, 1 carrot, 400 g tomatoes, 1 tsp. sugar, spices.
Cooking: Boil the chicken until done, about 40 minutes. Cut the onion, grate the carrots and fry them until soft. Add chopped tomatoes and stew all together for about 7 minutes. Send potatoes to the broth and cook until tender. After that, add the frying, shredded cabbage, sugar and spices. Cook cabbage soup on minimum heat under a lid until the cabbage is soft.
6. Sorrel soup
To cook cabbage soup quite easily and quickly, boil the broth in advance.
You will need: 4 cups of broth, 4 potatoes, 300 g of sorrel, 1 tbsp. flour, 2 tbsp. butter, 1 onion, spices.
Cooking: Boil chopped potatoes in boiling broth for 15 minutes. Finely chop and fry the onion, send to the broth. Fry the flour in butter and send it there. After that, add finely chopped sorrel leaves and cook cabbage soup for another 15 minutes. Season them at the end.
7. Nettle soup
An amazing seasonal dish. But remember that nettles can not be collected in the city or near the roads!
You will need: 1 onion, 3 potatoes, 300 g of nettle, 1 liter of broth, 3 tbsp. butter, spices.
Cooking: Me Finely chop the onion and fry in butter. Add chopped potatoes to it, fry for another 5 minutes and pour in the broth. Boil everything together for 20 minutes after boiling. During this time, finely chop the nettle and add it to the cabbage soup. Boil for a couple more minutes, season and remove from the stove.
8. Spinach soup
More European variation of classic cabbage soup.
You will need: 3 liters of broth, 1 bunch of spinach, 4 potatoes, 1 carrot, 1 onion, spices, herbs.
Cooking: Randomly cut all the vegetables, send to a boiling broth and cook for 15 minutes. Add chopped spinach, and after another 5 minutes – herbs and spices. Warm everything together and remove cabbage soup from the fire.
9. Shchi with mushrooms
Homemade cabbage soup only wins if you add a little more of your favorite products to them.
You will need: 300 g cabbage, 300 g mushrooms, 300 g potatoes, 1 carrot, 1 onion, spices.
Cooking: Send chopped potatoes and chopped cabbage to boiling water or broth. Boil 15 minutes. Fry chopped onions with grated carrots. Add chopped mushrooms and fry until the liquid evaporates. Transfer the frying to the pan, season to taste and cook the cabbage soup for another 7 minutes.
10. Shchi with beans
Soak the beans overnight and boil them until soft.
You will need: 2 carrots, 3 onions, 700 g cabbage, 200 g tomatoes, 2 potatoes, 150 g beans, 2 tsp. sugar, 2 tbsp. tomato paste, 1 handful of chopped herbs, spices.
Cooking: Fry grated carrots with chopped onions and a handful of shredded cabbage until soft. Add chopped tomatoes, tomato paste and sugar, and a little stew. Season the roast.
Send cabbage and chopped potatoes to boiling water or broth. After 10 minutes, add boiled beans and frying, boil for another 5 minutes and at the end add chopped greens.
11. Shchi with millet
If you need to feed a large family, this is a great recipe!
You will need: 400 g beef, 1 onion, 500 g sauerkraut, 3 tbsp. millet, 3 potatoes, spices.
Cooking: Boil the beef until tender over low heat. Pour the washed millet with boiling water for half an hour. Finely chop the onion and fry until golden. Add cabbage with spices to it and simmer until soft.
Send millet with potatoes to the boiling broth and cook until they are ready. Add the frying, bring the cabbage soup to a boil, remove from heat and let it brew under the lid.
12. Purple cabbage soup
Instead of chicken, you can use any other meat you like.
You will need: 400 g chicken, 250 g purple cabbage, 1 carrot, 1 tomato, 2 potatoes, 1 onion, 2 tbsp. tomato paste, spices.
Cooking: Boil the chicken until done. Send the chopped cabbage and chopped potatoes to the boiling broth, and cook for 15-20 minutes. Fry the onion with carrots until soft, add the grated tomato and tomato paste with spices, and put the roast in the cabbage soup. Bring them to a boil again and remove from heat.
13. Shchi with meatballs
There is no universal recipe for cabbage soup, and every housewife has her own secrets and ideas. For example, here is an option with meatballs.
You will need: 150 g potatoes, 1 onion, 1 carrot, 200 g minced meat, 150 g cabbage, spices and herbs.
Cooking: Cut potatoes, add to boiling water and cook for 10 minutes. Fry the grated carrots with chopped onions until soft and send to the potatoes. Add shredded cabbage to it. Season the minced meat, mix with herbs, knead well and form small meatballs. Send them to the cabbage soup and cook everything together for another 10 minutes.
14. Shchi with tomato juice
Red cabbage soup is deservedly loved by housewives all over the country!
You will need: 2 liters of broth, 200 ml of tomato juice, 400 g of cabbage, 3 potatoes, 1 carrot, 1 onion, spices.
Cooking: Finely chop the cabbage, chop the potatoes and send them to the boiling broth. Fry onions and carrots, pour tomato juice into them, season and simmer for 10 minutes over low heat. Send the roast to the cabbage soup and cook for another 10 minutes.
15. Shchi with stew
A good and quick recipe for cabbage soup when there is no ready-made broth, but there is a can of stew.
You will need: 500 g stew, 200 g cabbage, 1 onion, 1 carrot, 2 potatoes, 2 tomatoes, 2 tbsp. tomato paste, spices.
Cooking: Send the chopped potatoes and cabbage to boiling water and cook for 20 minutes. Prepare a fried onion with carrots, add tomatoes with tomato paste and fry for another 4 minutes. Put the frying in a saucepan, send the stew and spices there, boil for 5 minutes and leave to brew for 15 minutes under the lid.
