
Fried belyashi cause appetite by their very appearance. And the main thing when preparing them is to knead the dough correctly, then the whites are guaranteed to turn out tasty and beautiful. We share 15 proven recipes!
1. Dough for belyashi with fresh yeast

Raw yeast dough is suitable for various pastries and pleases with a pleasant taste. Be sure to check the expiration date of the yeast!
You will need: 400 g flour, 25 g fresh yeast, 250 ml water, 1 tbsp. vegetable oil, 1 tbsp. sugar, 0.5 tsp salt.
Cooking: Heat the water a little, crush the yeast into it and add the sugar. Mix until smooth and add salt, sifted flour and vegetable oil. Knead the dough thoroughly, cover and leave warm for an hour.
2. Dough for belyashi with dry yeast

Dry yeast in bags is very convenient to use, and you need much less of it.
You will need: 500 g flour, 300 ml water, 7 g dry yeast, 7 g salt, 15 g sugar, 15 ml vegetable oil, 1 tbsp. vodka.
Cooking: Add sugar and yeast to warm water, mix thoroughly and add two tablespoons of flour. Leave the dough for 20 minutes until a fluffy hat appears. Sift the rest of the flour, add salt, oil, vodka to it and gradually pour in the water with yeast. Knead a stiff dough, cover and leave warm for 1-1.5 hours.
3. Dough for whites without yeast

Yeast-free dough cooks faster, and is also great for frying in a pan.
You will need: 5-6 glasses of flour, 1 glass of milk, 1 glass of kefir, 3 eggs, 1 tsp. soda, 0.5 tsp salt, 1 tsp sugar, 3 tbsp. vegetable oil.
Cooking: Whisk kefir, milk, eggs, sugar, salt and soda with a whisk. Gradually add the sifted flour and knead a stiff dough. At the end, stir in vegetable oil and leave for 30 minutes under the film.
4. Dough for whites in milk

Ready-made belyashi will be lush, with a crispy crust, but soft inside.
You will need: 600 g flour, 100 ml milk, 200 ml water, 0.5 tsp. salt, 1 tsp sugar, 1 tsp dry yeast, 30 ml vegetable oil.
Cooking: Mix yeast, sugar and 50 ml warm water and let it sit for 10-15 minutes. Pour in the remaining water, milk and butter, add salt and mix again. Gradually mix the sifted flour into the dough, knead it well and leave it warm for 1.5 hours. Knead with your hands and leave for another 1.5 hours.
5. Dough for belyashi on kefir

Quick dough with simple ingredients. Ready in minutes!
You will need: 350 ml of kefir, 360 g of flour, 1 pinch of soda, 1 pinch of salt, 2 tbsp. vegetable oil.
Cooking: Mix kefir with soda and leave for a couple of minutes. Add salt and vegetable oil, mix and gradually introduce the sifted flour. Thoroughly knead a thick dough and leave for 20 minutes under the film.
6. Dough for whites in boiling water

Only three main ingredients, and add salt and sugar to taste.
You will need: 400 g flour, 1 glass of water, 1 tbsp. vegetable oil.
Cooking: Boil water and pour it into the sifted flour. Immediately knead the dough with your hands, add vegetable oil and continue kneading first with a spoon, and when it cools down with your hands. Before sculpting whites, let him rest for 15 minutes.
7. Dough for belyashi on mineral water

Dough on mineral water always turns out to be very lush and airy.
You will need: 1.5-2 cups of flour, 1.5 cups of carbonated mineral water, 20 g of yeast, 1.5 tbsp. sugar, 0.5 tsp salt.
Cooking: Mix half a glass of mineral water, yeast, sugar and 2 tablespoons of flour. Leave warm for half an hour. Add the remaining mineral water, salt and sifted flour, knead the dough and leave it warm for another 40 minutes.
8. Dough for whey

Such a dough should be poured into the pan with a spoon, then lay out the filling and pour the dough on top.
You will need: 2.5 cups flour, 1.5 cups whey, 2 eggs, 1 tbsp. sugar, 1 tsp soda, 1 tsp salt.
Cooking: Mix whey with baking soda and leave them for a couple of minutes. Add sugar, salt and eggs, and mix with a whisk. Gradually introduce the sifted flour and knead a thick dough.
9. Dough for belyashi on beer

Of course, this recipe is not suitable for children, but adults will definitely like it!
You will need: 400 ml of light beer, 8-9 glasses of flour, 3 eggs, 4 tbsp. vegetable oil, 1.5 tsp salt.
Cooking: Sift 6 cups of flour, add salt and pour beer into it. Mix the dough. Separate the yolks and beat and them with vegetable oil. Add to dough and mix again. Separately, beat the whites to peaks and mix them in there. At the very end, add the remaining flour to the desired dough consistency. Leave it for 20 minutes to rest under the film.
10. Dough for belyashi with sour milk

Never throw away sour milk! This is a real find for any pastry.
You will need: 200 ml of sour milk, 400-450 g of flour, 0.5 tsp each salt and soda, 20 ml of vegetable oil.
Cooking: Mix the sifted flour, salt and soda, and pour in the sour milk with butter. Knead a stiff dough that does not stick to your hands.
11. Dough for belyashi on sour cream

Another interesting recipe for yeast-free dough with sour cream and butter.
You will need: 4.5 cups flour, 300 ml sour cream, 1 cup kefir, 2 eggs, 100 g butter, 0.5 tsp. soda, 1 tsp salt, 1 tbsp. vegetable oil.
Cooking: Beat eggs with melted butter, and stir in sour cream. Add soda, salt and kefir, and mix again. Add vegetable oil and gradually add the sifted flour. Let the dough rest for 20 minutes.
12. Dough for whites without eggs

Eggs are a completely optional ingredient in whitewash dough.
You will need: 200-250 g flour, 125 ml water, 0.5 tsp. dry yeast, 1 pinch salt, 1 pinch sugar.
Cooking: Mix warm water, salt, sugar and yeast until dissolved. Gradually introduce the sifted flour, knead the dough, cover and leave warm for an hour.
13. Dough for belyashi on yogurt and kefir

One of the lightest and most tender dough options, also yeast-free.
You will need: 450 g flour, 200 ml kefir, 1 egg, 3 tbsp. yogurt, 2 tbsp. vegetable oil, 1 tsp salt, 1 tsp baking powder.
Cooking: Whisk the egg with kefir and yogurt. Mix the sifted flour with salt and baking powder, and gradually introduce into the dough. At the end, stir in vegetable oil, leave the dough under the film for an hour and knead again.
14. Dough for belyashi with vodka

A small portion of vodka makes any dough softer and more airy – proven by our grandmothers!
You will need: 4 cups flour, 250 ml water, 6 tbsp. vegetable oil, 1 tsp vodka, 1 tsp sugar, 2 pinches of salt.
Cooking: Mix cold water with sugar and salt until dissolved. Pour the mixture into the sifted flour, add vegetable oil and vodka, and knead the dough until smooth. Leave it under a towel for 10-15 minutes.
15. Choux pastry for whites

Choux pastry is made from boiling water and is suitable for a variety of pastries.
You will need: 4 cups flour, 2 cups boiling water, 4 tbsp. vegetable oil, 1 tsp salt, 1 tsp Sahara.
Cooking: Dissolve salt and sugar in boiling water. Sift the flour and grind it with vegetable oil. Pour in boiling water and knead the dough with a spatula. When it cools down, continue kneading with your hands.
