1. Pumpkin casserole with semolina and milk

This casserole is especially good for kids who want something simple, healthy and delicious.
You will need: 500 g pumpkin, 300 ml milk, 120 g sugar, 3 eggs, 70 g semolina, spices to taste.
Cooking: Cut the pumpkin into cubes, cover with milk, boil for 20 minutes until soft, beat with a blender and let cool. Add sugar, semolina, egg yolks and spices, and leave for 15 minutes. Beat egg whites to stiff peaks and gently fold into pumpkin with a spatula. Put everything in a mold and cook the casserole for half an hour in the oven at 180 degrees.
2. Pumpkin casserole with cottage cheese

Just a win-win recipe, especially for breakfast!
You will need: 500 g pumpkin, 500 g cottage cheese, 2 eggs, 2 tbsp. flour, 3 tbsp. sugar, 1 tsp vanilla sugar, 1 tbsp. butter.
Cooking: Bake a piece of pumpkin for 30 minutes at 180 degrees and grind in a blender. Add grated cottage cheese and all other ingredients, and beat everything thoroughly with a blender again. Cook the casserole for 40 minutes in the oven at 180 degrees.
3. Pumpkin casserole with chocolate

Such a casserole is in no way inferior to a full-fledged homemade pie.
You will need: 400 g pumpkin, 400 g cottage cheese, 150 g powdered sugar, 3 eggs, 80 g butter, 6 tbsp. semolina, 80 g flour, 1 tsp. baking powder, 2 tbsp. lemon zest, 100 g chocolate, 5 tbsp. cream.
Cooking: Boil the pumpkin until soft, put in a colander and grind with a blender. Add curd and whisk again. Then add the yolks, soft butter and 120 g of powdered sugar. Beat it again.
Add zest, baking powder, flour and semolina to the dough, and mix everything until smooth. Beat egg whites to stiff peaks and gently fold into the batter with a spatula. Get everything in shape. Separately, melt the chocolate with cream and the remaining powdered sugar in a water bath, pour on top and mix a little with a fork. Send the casserole to the oven for about 50 minutes at 190 degrees.
4. Pumpkin Casserole with Rice and Dried Fruits

We advise you to use those varieties of rice that are well boiled.
You will need: 200 g rice, 500 g pumpkin, 500 ml milk, 50 g butter, 150 g raisins, prunes, dried apricots or any dried fruit, 4 eggs, 2 tbsp. sugar, 3 tbsp. sour cream, 1 tbsp. flour.
Cooking: Pour rice with milk and boil until tender. Beat butter with sugar with a mixer. Continuing to beat, add the eggs one at a time. Add rice, grated pumpkin and washed dried fruits there, and then add sour cream and flour. Mix everything thoroughly, put it in a mold and bake for 1 hour in the oven at 200 degrees.
5. Pumpkin casserole with tomatoes and cheese

Instead of cheese, you can take feta or some similar salty cheese.
You will need: 400 g pumpkin, 2 tomatoes, 200 g cheese, 2 eggs, 4 tbsp. sour cream, 4 basil leaves, 2-3 tbsp. flour, spices.
Cooking: Cut the pumpkin into medium slices, roll in flour and spices and fry on all sides. Put it in a baking dish. Lay the chopped cheese on top, and then the tomato slices. Beat the egg with sour cream and spices, pour on top and cook the casserole in the oven for half an hour at 180 degrees.
6. Pumpkin Casserole with Vegetables

Add more vegetables if you like.
You will need: 600 g pumpkin, 100 g hard cheese, 2 carrots, 50 g pumpkin seeds, 150 ml cream, 4 eggs, 2 leeks, 1 onion, 1 garlic clove, 1 bell pepper, spices.
Cooking: Cut all the vegetables into small cubes and fry together for 15 minutes until soft. Season and shape. Whip the cream with the eggs and pour over the casserole. Sprinkle it with pumpkin seeds and grated cheese, and put it in the oven for 45 minutes at 180 degrees.
7. Pumpkin Casserole with Apples

Another simple and classic casserole recipe for all occasions!
You will need: 300 g pumpkin, 2 apples, 2 eggs, 60 g sugar, 25 g butter, 6 tbsp. semolina, 1 tsp cinnamon.
Cooking: Cut the pumpkin into cubes, boil until soft, drain the water and mash it into a puree. Peel and grate the apples. Add melted butter and all other ingredients, mix and leave for 20 minutes. Put the mass into a mold and cook the casserole in the oven for 40 minutes at 180 degrees.
8. Pumpkin casserole with minced meat

For decoration, we recommend taking a handful of sour red berries.
You will need: 1.5 kg of pumpkin, 500 g of minced meat, 2 onions, 200 g of hard cheese, 5 eggs, 100 ml of milk, spices.
Cooking: Finely chop the onion, mix with minced meat, season and fry everything together for 7 minutes. Rub the pumpkin on a fine grater and put half into the mold. Lay out the minced meat and pumpkin again. Whisk milk with eggs and grated cheese, pour over the casserole and send it to the oven for 40 minutes at 180 degrees.
9. Pumpkin Casserole with Chicken and Cheese

This is not even just a snack for tea and not a sweet breakfast, but a full-fledged main course.
You will need: 700 g pumpkin, 150 g hard cheese, 3 tbsp. sour cream, 500 g chicken fillet, spices.
Cooking: Cut the chicken into small pieces or pass through a meat grinder. Season to taste. Grate pumpkin and cheese, and mix with sour cream and spices. Put half of the pumpkin mass, chicken and again pumpkin into the form. Bake everything for about 1 hour under foil at 200 degrees in the oven.
10. Pumpkin Casserole with Potatoes and Cabbage

Lean casserole without eggs, cream and other dairy products.
You will need: 600 g pumpkin, 600 g potatoes, 150 g cabbage, 190 g onions, 55 g semolina, spices.
Cooking: Cut the potatoes and pumpkin into cubes and boil for 20 minutes until soft. Mash into a puree with a couple of tablespoons of vegetable oil and mix with semolina. Cut the onion into feathers and chop the cabbage, and fry for 7-10 minutes. Put half of the mashed potatoes in the form, cabbage and mashed potatoes again. Lightly drizzle the casserole with oil and cook in the oven for 35 minutes at 200 degrees.
11. Pumpkin casserole with prunes

A very original recipe for a bright and spicy casserole!
You will need: 600 g pumpkin, 50 g prunes, 50 g raisins, 50 g walnuts, 1 egg, 300 ml cream, 2 tsp. honey, spices.
Cooking: Pour prunes and raisins with boiling water for 10 minutes. Finely chop prunes and nuts. Bake the pumpkin until half cooked and grate it on a coarse grater. Put the pumpkin in the form and sprinkle it with dried fruits and nuts. Whip the cream with the egg, honey and spices, and pour over the top. Send the casserole to the oven for 30 minutes at 200 degrees.
12. Pumpkin Casserole with Banana

Very sweet casserole, but at the same time absolutely without sugar.
You will need: 300 g pumpkin, 150 g cottage cheese, 1 egg, 1 tbsp. honey, 2 tbsp. semolina, 1 banana, 1 tbsp. sour cream, 2 pinches of vanilla.
Cooking: Grind the pumpkin and banana in a blender. Add the rest of the ingredients and whisk again. Put the mass into a mold and bake for 30-40 minutes in the oven at 200 degrees.
13. Lean Pumpkin Casserole

Nothing more – just a pumpkin. Great option for kids!
You will need: 350 g pumpkin, 75 g semolina, 3 tsp. powdered sugar, 20 g raisins, 50 ml vegetable oil.
Cooking: Boil the pumpkin until soft and grind with a blender. Add the rest of the ingredients, mix the puree and leave for 15 minutes. Pour everything into a mold and bake for 30-35 minutes in the oven at 180 degrees.
14. Pumpkin Casserole with Rice Flour

Gluten-free PP casserole without wheat flour and even without semolina.
You will need: 700 g pumpkin, 2 eggs, 80 g sugar, 1 pinch of ground cinnamon, ginger, cloves, nutmeg, salt and vanilla, 300 g 20% sour cream, 65 g rice flour.
Cooking: Boil the pumpkin until cooked and beat it with a blender with sour cream. Separately, beat eggs with sugar and spices until foamy, mix with pumpkin puree and gradually add rice flour. Pour the dough into a mold and bake for half an hour in the oven at 180 degrees.
15. Pumpkin casserole in a slow cooker

For a more interesting taste, add a little condensed milk!
You will need: 450 g pumpkin, 1 tsp. baking powder, 180 ml baked milk, 3 tbsp. condensed milk, 85 g semolina, 55 ml water, 170 g flour, 3 eggs, 2 pinches of vanillin.
Cooking: Mix semolina with baked milk and leave for half an hour. Boil the pumpkin in water until soft and grind with a blender. Mix with milk, add condensed milk and eggs, and mix everything again. At the end, add the sifted flour with baking powder and vanilla. Cook the casserole in the multicooker bowl for 40 minutes in the “Baking” mode.
