Of all the dishes that Italian cuisine has given us, pasta carbonara occupies a special place. She was loved all over the world, because, on the one hand, she is very tasty and satisfying, and on the other hand, she is easy to prepare. We have collected the best recipes for you: from classics to quick adaptations. Boil pasta or spaghetti until al dente!
1. Classic carbonara pasta
Even the classic carbonara is prepared in just 20 minutes, so it will be a wonderful family dinner after a hard day.
You will need: 200 g spaghetti, 150 g bacon, 150 ml cream, 3 egg yolks, 50 g parmesan, 2 garlic cloves, 1 onion, 1 tsp. butter, 2 tsp olive oil.
Cooking: Finely chop the onion and fry until golden in olive oil. Chop the garlic, cut the bacon into strips and fry them in butter until golden brown. Whisk egg yolks with spices, grated parmesan, onion and cream. Mix sauce with hot spaghetti and top with bacon.
2. Pasta carbonara without cream
Running out of cream or avoiding dairy is no reason to give up carbonara!
You will need: 500 g spaghetti, 300 g bacon, 1 garlic clove, 100 g hard cheese, 6 egg yolks, salt and ground black pepper.
Cooking: Cut the bacon into thin strips, finely chop the garlic and fry everything for a couple of minutes until golden brown. Grate the cheese, pour in a few tablespoons of hot spaghetti water and add the beaten egg yolks. Mix everything. Mix spaghetti, bacon and cheese sauce and season to taste.
3. Pasta carbonara with mushrooms
Mushrooms are not included in the classic carbonara, but they complement it very harmoniously.
You will need: 500 g spaghetti, 250 g mushrooms, 150 g bacon, 200 ml cream, 20 g butter, 1 onion, 3 egg yolks, 50 g parmesan, spices.
Cooking: Whisk the egg yolks with cream, spices and grated parmesan. Chop mushrooms and onions and fry in butter until tender. Pour in the cream sauce, and simmer for a couple more minutes, stirring. Separately, fry the bacon until golden brown and mix everything together with the cooked spaghetti.
4. Pasta carbonara with ham
Instead of bacon, you can take ham – both traditional Italian and our simpler one.
You will need: 200 g spaghetti, 200 g ham, 150 ml cream, 1 egg yolk, 100 g parmesan, 2 garlic cloves.
Cooking: Fry the sliced ham and minced garlic until golden brown. Whip the cream with the yolk and add half of the grated parmesan. Mix sauce with hot spaghetti, add bacon and sprinkle with remaining parmesan.
5. Pasta carbonara without eggs
If there were no eggs at hand – it’s okay, carbonara is good anyway!
You will need: 150 g spaghetti, 120 g bacon, 100 ml cream, 1 onion, 40 g hard cheese, 2 garlic cloves.
Cooking: Mince garlic with bacon and fry until golden brown. Separately, fry the onion until golden, pour in the cream and bring to a boil. Add the grated cheese, mix the sauce and mix it with the cooked spaghetti. Add bacon at the end.
6. Pasta carbonara without cheese
And even without carbonara cheese, it remains quite recognizable. Sprinkle with herbs, if desired, when serving.
You will need: 250 g spaghetti, 200 g bacon or ham, 150 ml cream, 2 egg yolks, 3 garlic cloves, 1 tbsp. flour. 2 tbsp butter, spices.
Cooking: Mince garlic with bacon and fry until golden brown. Fry flour in butter and pour in whipped cream with yolks. Lightly simmer the sauce, stirring, season and mix it with spaghetti and bacon.
7. Pasta carbonara with chicken
If you don’t like bacon or it’s too greasy for you, just replace it with chicken.
You will need: 300 g spaghetti, 200 g chicken fillet, 100 ml cream, 3 egg yolks, 2 garlic cloves, 50 g parmesan, spices.
Cooking: Finely chop the chicken and fry until done. Add minced garlic and fry for another minute. Whip the cream with egg yolks and spices, and immediately stir them into the hot spaghetti. Add the chicken and sprinkle the carbonara with grated parmesan.
8. Pasta carbonara with milk
Milk is less fat than cream, so the sauce will not be as thick.
You will need: 500 g spaghetti, 200 g bacon, 4 egg yolks, 1 glass of milk, 160 g hard cheese, 2 garlic cloves, spices.
Cooking: Finely chop the bacon with garlic and fry. Whisk milk with yolks and spices, and pour over bacon. Stew for a minute, stirring, add grated cheese and wait until it melts a little. melts. Mix sauce with cooked spaghetti.
9. Shrimp carbonara pasta
Shrimp carbonara is even more tender and refined.
You will need: 200 g spaghetti, 200 g shrimp, 40 ml cream, 50 g parmesan, 2 garlic cloves, 40 g bacon, 1 egg yolk, spices.
Cooking: Saute the minced garlic and bacon until golden brown, about 5 minutes. Add shrimp and fry for another 5 minutes. Whip cream with yolk, add spices and grated parmesan, and immediately mix the sauce with hot spaghetti. Add bacon and shrimp and stir again.
10. Pasta carbonara with melted cheese
A good and cheap option for carbonara for every day.
You will need: 400 g spaghetti, 200 g melted cheese, 150 g ham, 100 ml cream, 2 garlic cloves, 4 egg yolks, spices.
Cooking: Grind garlic with ham and fry until golden brown. Heat the cream and mix until smooth with melted cheese and spices. Mix hot spaghetti with sauce and ham. Pour in the beaten yolks and mix again.
11. Pasta carbonara with mozzarella
And again, not classic, but still Italian carbonara.
You will need: 400 g spaghetti, 150 g mozzarella, 3 slices of bacon, 2 egg yolks, 50 ml of broth, spices.
Cooking: Chop the bacon and fry until browned. Mix egg yolks with spices and grated mozzarella. Add boiled spaghetti to bacon, pour in broth and cook for another 2 minutes. Pour in the yolks, stir and remove the carbonara from the heat.
12. Pasta carbonara with spinach
When you want something brighter and more original – this is the recipe!
You will need: 200 g spaghetti, 250 g frozen spinach, 140 g bacon, 100 ml cream, 2 garlic cloves, 2 egg yolks, 50 g hard cheese.
Cooking: Chop the bacon and fry for a minute. Add chopped garlic and spinach, and sauté until about half the moisture has evaporated. Whip cream with egg yolks, spices and grated cheese. Mix everything together with hot cooked spaghetti.
13. Pasta carbonara with tomatoes
If desired, add a couple of basil leaves when serving.
You will need: 200 g spaghetti, 200 g bacon, 100 ml cream, 30 g parmesan, 5-6 cherry tomatoes, 1 egg yolk, 1 onion, spices.
Cooking: Thinly slice the onion and bacon and fry until golden brown. Pour in the cream, bring to a boil and add the cooked spaghetti. Separately, add the yolk, mix quickly and remove the pasta from the heat. At the end, add the cherry tomato slices and sprinkle the carbonara with grated parmesan.
14. Pasta carbonara with sausage
Another homemade carbonara pasta recipe from what I found in the fridge.
You will need: 200 g spaghetti, 150 g sausage, 50 g hard cheese, 50 g processed cheese, 100 ml cream, 1 egg yolk, 1 onion, spices.
Cooking: Cut the onion with sausage and fry until golden. Heat the cream and mix with spices and melted cheese until smooth. Pour the sauce over the sausage, add the cooked spaghetti and stir. Pour in the yolk and stir again. Sprinkle pasta with grated cheese.
15. Pasta carbonara with sour cream
With sour cream, carbonara acquires an unusual and pleasant sourness.
You will need: 200 g spaghetti, 150 g hard cheese, 200 g bacon, 2 egg yolks, 300 g sour cream, 2 garlic cloves, 30 g butter.
Cooking: Fry chopped garlic with bacon in butter. Mix sour cream with yolks and grated cheese. Add sauce to bacon and stir. Send hot spaghetti there, and mix again.
