
One of the most classic combinations is eggplant with tomatoes and garlic. They are popular in Georgian and Caucasian cuisine, but have long been regular guests on our tables. Here are 15 of the best recipes you can make!
1. Eggplant rolls with tomatoes and garlic

A very quick and easy dish that will never be left after a feast.
You will need: 400 g eggplant, 250 g tomatoes, 4 tbsp. mayonnaise, 1 tsp mustard, 3 cloves of garlic, herbs, spices.
Cooking: Cut the eggplant into thin slices and fry until soft. Mix mayonnaise, mustard, spices, crushed garlic and chopped herbs. Brush this sauce on each piece of eggplant and wrap the tomato slices in rolls.
2. Eggplant with tomatoes and garlic under cheese

You don’t even need to fry anything ahead of time!
You will need: 500 g eggplant, 350 g tomatoes, 3 garlic cloves, 100 g cheese, spices.
Cooking: Cut the eggplant into 1cm rounds and place on a baking sheet. Sprinkle with spices, put circles of tomatoes on top, and crushed garlic and grated cheese on them. Bake in the oven for 30-35 minutes at 180 degrees.
3. Eggplant Casserole with Tomatoes and Garlic Layers

Try cooking with different types of cheese and spices.
You will need: 400 g eggplant, 300 g tomatoes, 150 g mozzarella, 50 g cheese, 2 garlic cloves, 1 egg, spices.
Cooking: Cut the eggplant into thin slices and fry. Peel and finely chop the tomatoes, and lightly stew them with spices and garlic. Lay out layers of eggplant, tomatoes, mozzarella, and again in a circle. The last layer is eggplant. Pour them with a beaten egg, sprinkle with grated cheese and bake for 25 minutes at 180 degrees.
4. Braised eggplant with tomatoes and garlic

A simple and quick vegetable side dish for every day.
You will need: 2 eggplants, 3 tomatoes, 1 pepper, 1 onion, 3 garlic cloves, spices, herbs.
Cooking: Coarsely chop all the vegetables and lightly fry the onion. Add pepper to it, and after 2 minutes – eggplant. Fry the vegetables a little more, add the tomatoes with spices, and simmer under the lid until tender over low heat. 5 minutes before the end, season the dish with garlic and sprinkle with chopped herbs.
5. Eggplant with tomatoes and garlic in the microwave

That’s how easy it is to cook your favorite eggplant even in the microwave!
You will need: 2 eggplants, 200 g tomatoes, 150 g cheese, spices, 1 bunch of herbs, 5 garlic cloves, olive oil.
Cooking: Rub the oil, herbs, garlic and spices into a green sauce. Cut the eggplant into circles and send them to the microwave for 6-8 minutes at 600 watts. Put slices of tomato and sauce on each circle, sprinkle with cheese and send in the microwave for another 2-3 minutes.
6. Eggplant with tomatoes and garlic in a pan

For frying, we recommend using olive oil – it is ideal for this dish.
You will need: 400 g of eggplant, 400 g of tomatoes, 3 cloves of garlic, 0.5 bunch of basil.
Cooking: Cut the eggplant into halves of circles, fry and put on a napkin. Randomly chop the tomatoes, add garlic and chopped basil, and simmer for 5-7 minutes, stirring occasionally. Return the eggplant to the pan and cook everything together for another 5-10 minutes.
7. Eggplant with tomatoes, garlic and minced meat

A complete main course that does not require a separate side dish.
You will need: 200 g of eggplant, 100 g of tomatoes, 80 g of onion, 150 g of minced meat, 5 cloves of garlic, 40 g of cheese, spices, herbs.
Cooking: Cut the eggplant in half, make deep cuts on the pulp and rub with spices. Finely chop the onion, fry with minced meat, and then add chopped tomatoes and greens there. Fry the eggplants cut side down, turn over, put the filling on them, and then fry under the lid for another 5 minutes. Sprinkle with chopped garlic and grated cheese, and cook for another 2 minutes.
8. Eggplant with tomatoes and garlic for the winter

How can you do without winter harvesting at the height of the vegetable season?
You will need: 1 kg of eggplant, 1 kg of tomatoes, 8 cloves of garlic, 250 ml of vegetable oil, 1 tbsp. salt, 2 bay leaves, 5 peppercorns, 2 tbsp. vinegar.
Cooking: Weld buckle azhany about 15 minutes in salt water, cool and cut into circles, and then fry. Cut the tomatoes into rings, and finely chop the garlic. Put eggplant, garlic and tomatoes in layers in jars, spread spices. Mix the juice from the frying with the remaining oil and vinegar, fill in the blanks and roll up.
9. Eggplant with tomatoes, garlic and mushrooms

It is best obtained with forest mushrooms or oyster mushrooms.
You will need: 3 eggplants, 200 g mushrooms, 1 onion, 1 pepper, 200 g tomatoes, 5 garlic cloves, spices.
Cooking: Boil the mushrooms for 10 minutes in boiling water and cut, and then fry them with onions. Add coarsely chopped eggplant, and when they turn golden – pepper. At the very end, add tomatoes, garlic and spices, and bring to readiness under the lid.
10. Eggplant with tomatoes, garlic and sour cream

Like many other eggplant dishes, this will be delicious both hot and cold!
You will need: 1 eggplant, 1 tomato, 2 garlic cloves, 3 tbsp. sour cream, spices and herbs.
Cooking: Cut the eggplant into cubes, fry until golden and season. Mix sour cream, chopped garlic and chopped tomato in a blender. Pour eggplants with sauce, stew until cooked and sprinkle with herbs.
11. Salad with eggplant, tomatoes and garlic

Juicy and tender vegetable salad for lunch or dinner.
You will need: 2 eggplants, 2 tomatoes, 2 cloves of garlic, 1 bunch of basil, spices, 1.5 tbsp. olive oil.
Cooking: Cut the eggplant into quarters from circles, pour hot water, salt and boil for 10-15 minutes. Squeeze lightly and let cool. Add coarsely chopped tomatoes, chopped basil and crushed garlic and season and drizzle with oil before serving.
12. Pickled eggplant with tomatoes and garlic

The more different greens, the better!
You will need: 800 g of eggplant, 800 g of tomatoes, 1 bunch of dill, cilantro and parsley, 1 head of garlic, spices and herbs, 0.5 cups of vegetable oil, 2 tbsp. vinegar.
Cooking: Cut the eggplant into strips and boil in boiling water for 5 minutes. Finely chop the tomatoes, chop the greens with garlic, and mix all the ingredients. Add oil, vinegar and spices, and let it brew under pressure for at least 3 hours.
13. Eggplant with tomatoes, garlic and chicken

Another recipe for a wonderful vegetable casserole with meat.
You will need: 500 g chicken, 2 eggplants, 2 tomatoes, 3 garlic cloves, 150 g cheese, herbs, 2 tbsp. mayonnaise, spices.
Cooking: Cut the eggplant into slices and fry for a couple of minutes on each side. Thinly slice the chicken, chop the herbs and garlic, and cut the tomatoes into rings. Layer eggplant, chicken, eggplant, tomatoes, greens with garlic, mayonnaise and grated cheese. Bake for 40 minutes at 180 degrees.
14. Eggplant with tomatoes, garlic and potatoes

A variation on the theme of your favorite snack in circles, but now also with potatoes!
You will need: 3 eggplants, 6 potatoes, 3 tomatoes, 100 g cheese, 4 garlic cloves, 4 tbsp. mayonnaise, spices.
Cooking: Cut the eggplant into slices and fry on both sides. Similarly, cut the potatoes, sprinkle with spices and put in a mold. Lubricate the potatoes with mayonnaise and sprinkle with crushed garlic. Lay eggplants on top, and circles of tomatoes on them. Sprinkle everything with grated cheese and bake under foil for 40 minutes at 180 degrees.
15. Eggplant with tomatoes, garlic and nuts

And some more classics!
You will need: 2 eggplants, 6 tomatoes, 1.5 cups of walnuts, 1 bunch of cilantro, 4 cloves of garlic, 20 g each of dill and basil, spices.
Cooking: Cut the eggplant into slices, and the tomatoes into slices, and put everything in the oven for 20 minutes at 200 degrees. Grind nuts with garlic and herbs in a blender, and if necessary, add olive oil for consistency. Put the nut filling, tomato, and wrap the rolls on the eggplants.
