
One of the most popular and versatile sauces in Japanese cuisine is Teriyaki. Despite the fact that it is prepared on the basis of ordinary soy sauce, Teriyaki turns out to be very sweet and unusual. The peculiarity of its preparation is sugar caramelization, and further in the selection we will share different recipes for how to do this!

1. Teriyaki sauce with honey and olive oil

A simple and proven recipe that even beginners can handle.
You will need: 150 ml soy sauce, 1 tbsp. white wine vinegar and honey, 80 ml of water, 2 tsp. olive oil, 3 tsp starch, 4 tsp sugar, 1 tsp. ground ginger and garlic.
Cooking: Combine soy sauce, sugar and spices, wine vinegar, honey and olive oil in a saucepan. Bring the mixture to a boil, stirring constantly. Dissolve starch in water, and slowly pour into the sauce. Stir until smooth and remove from heat.
2. Teriyaki sauce with cane sugar

Cane sugar is best for making Asian sauces.
You will need: 150 ml soy sauce, 1 tbsp. rice vinegar, 80 ml of water, 1 tsp. sesame oil, 3 tsp starch, 4 tsp cane sugar, spices.
Cooking: Mix everything except starch and water and bring to a boil over medium heat. Dissolve starch in water, add to the sauce, and boil a little more until it thickens.
3. Teriyaki sauce with ginger juice

To make Teriyaki homogeneous, squeeze the juice from grated ginger and use it.
You will need: 200 ml soy sauce, 1 tbsp. rice vinegar, 2 tsp olive oil, 1.5 tbsp. sugar, 10 ml ginger juice, 1 tsp. granulated garlic, 2 tsp starch.
Cooking: Combine all ingredients except cornstarch, bring to a boil and season with more if desired. Dilute the starch in a minimum amount of cold water, pour into the sauce, and boil until thickened.
4. Teriyaki sauce with wine vinegar

The classic recipe calls for white wine vinegar, but you can try different ones.
You will need: 8 tbsp soy sauce, 2 tsp each wine vinegar, starch and dried garlic, 4 tbsp. brown sugar and water, 2 tbsp. mfood.
Cooking: Heat soy sauce with sugar and honey until dissolved. Pour in vinegar, add ground garlic and mix. Dissolve starch in water and add to sauce. Stir and remove from fire.
5. Teriyaki sauce with apple cider vinegar

If wine or rice vinegar is not at hand, then this recipe will do.
You will need: 12 tablespoons soy sauce, 3 tsp each apple cider vinegar and starch, 6 tbsp. brown sugar and water, 4 tbsp. honey, spices.
Cooking: Heat soy sauce with sugar and honey until dissolved. Add spices to taste, pour in vinegar, and boil for another minute. Dissolve starch in water, pour into sauce and stir until thickened.
6. Teriyaki sauce with wine

Dry white wine is best suited for Teriyaki.
You will need: 100 ml soy sauce, 50 ml wine, 75 g brown sugar, 1 tbsp. starch, 50 ml of water.
Cooking: Combine soy sauce, water and sugar and bring to a boil while stirring. Dissolve the starch in the wine and pour it into the sauce in a thin stream. Boil for a couple of minutes until thick and remove the Teriyaki from the heat.
7. Teriyaki Sauce with Mirin

Mirin is a Japanese rice wine that goes very well with Japanese sauces.
You will need: 120 ml soy sauce, 50 ml mirin, 80 g brown sugar, 1 tbsp. starch, 50 ml of water.
Cooking: Boil soy sauce with mirin and sugar, and boil until sugar dissolves. Stir the starch in the water, pour into the sauce, and cook for a couple more minutes, stirring, until thickened.
8. Teriyaki sauce with broth

Try options with different types of broth - meat, chicken, fish.
You will need: 130 ml soy sauce, 50 ml dry white wine, 70 g brown sugar, 1 tbsp. honey, 1 tbsp. starch, 50 ml of broth.
Cooking: Heat soy sauce with sugar and honey until dissolved. Pour in the wine and boil for another minute. Dissolve starch in cold broth, and pour in the same. Boil Teriyaki until thickened.
9. Teriyaki Sauce with Bouillon Cube

You can not even add spices to such a sauce - a cube is enough.
You will need: 240 ml soy sauce, 100 ml mirin, 130 g brown sugar, 2 tbsp. honey, 1.5 tbsp. starch, 75 ml of water, 1 bouillon cube.
Cooking: Boil soy sauce with mirin, sugar and honey , and boil over low heat for about 5 minutes. Dissolve the bouillon cube in water, and then the starch. Pour into the sauce and boil until thickened, stirring.
10. Sesame Teriyaki Sauce

We recommend adding ginger with garlic in the form of a powder for uniformity.
You will need: 150 ml soy sauce, 1 tbsp. wine vinegar, 1 tsp. starch, 70 ml of water, 3 tsp. sugar, 1 tsp. ginger and garlic, 1 tbsp. honey, 1 tsp sesame, 1 tsp vegetable oil.
Cooking: Fry the sesame seeds in a dry frying pan until golden brown, pour in the oil and fry for another minute. Add sugar, garlic, ginger, soy sauce, wine vinegar, and bring to a boil. Boil the sauce for one and a half minutes. Add honey and starch mixed in water, and cook for another 2 minutes after boiling, stirring.
11. Teriyaki sauce with fresh garlic and ginger

This Teriyaki keeps well in a glass jar for up to a week.
You will need: 150 ml soy sauce, 3 tsp. brown sugar, 1 tbsp. wine vinegar, 1 tsp. starch, 70 ml of water, 15 g of ginger and garlic, 1 tbsp. honey, 1 tsp sesame oil.
Cooking: Finely chop the garlic and ginger, and fry in sesame oil for literally 1 minute. Add soy sauce, vinegar, sugar and chalk, and cook everything until sugar dissolves, stirring. Dissolve starch in water, pour into the sauce, and boil for another 2-3 minutes. Strain Teriyaki from garlic and ginger.
12. Teriyaki Chili Sauce

If you like spicy spicy - catch this recipe.
You will need: 150 ml soy sauce, 1.5 tbsp. brown sugar, 1 tbsp. rice vinegar, 1 tsp starch, 50 ml of water, 1 chili pepper, 15 g of ginger and garlic, 1 tbsp. honey, 1 tbsp. olive oil.
Cooking: Finely chop the garlic, chili and ginger, and fry in oil for literally half a minute. Add sugar, honey, vinegar and soy sauce and bring to a boil, stirring. Dissolve the starch in water, pour into the sauce, boil a little more until it thickens and strain.
13. Orange Teriyaki Sauce

Add some chili pepper or other spices if you like.
You will need: 200 ml soy sauce, 3 tbsp. honey, 2 tsp sugar, 2.5 cm ginger, 1 garlic clove, 2 tsp. starch, 4 tbsp. water, half an orange.
Cooking: Finely chop the ginger and garlic. Send them to a saucepan with sugar, honey, soy sauce and orange juice. Boil 5-6 minutes after boiling. Strain the sauce and boil again. Dilute starch in waterE, add and boil for another 2 minutes.
14. Teriyaki sauce with lemon zest

Another way to add subtle sourness to the sauce!
You will need: 200 ml soy sauce, 3 tbsp. honey, 2 tsp brown sugar, 1 tbsp. rice vinegar, 2.5 cm ginger, 1 chili pepper, 1 garlic clove, 2 tsp. starch, 4 tbsp. water, 2 tsp lemon zest, 1 tbsp. lemon juice, 1 tsp sesame oil.
Cooking: Send thinly sliced ginger, garlic, chili, zest, vinegar, honey, sugar and soy sauce to a saucepan. Bring the mixture to a boil, stirring, and boil for 5 minutes. Strain the sauce and put back on the stove. Dilute starch in water and pour into Teriyaki. Add lemon juice and sesame oil and boil until thickened.
15. Teriyaki sauce with dark soy sauce and red wine

An original culinary experiment based on a classic recipe.
You will need: 100 ml dark soy sauce, 1 tsp. dry ginger, 200 g sugar, 300 ml water, 2 tbsp. dry red wine, 1 tbsp. sesame, 0.5 tsp dry garlic, 1 tbsp. starch.
Cooking: Mix water, soy sauce, sugar, starch, ginger and garlic. Bring to a boil, stirring. Pour in the wine, add the sesame seeds, and simmer the sauce for another 5 minutes.
