Refreshing and light okroshka is a real salvation for the summer. Especially when the season of young vegetables begins. Many already have their own recipe that has been proven over the years, but we suggest adding variety to your daily diet!
1. Okroshka on kefir
One of the classic cooking methods that every housewife should know!
You will need: 2 potatoes, 2 cucumbers, 1 bunch of green onions, 300 g of ham, 2 eggs, 6 radishes, greens, kefir, spices.
Cooking: Boil potatoes and eggs until cooked, and cut all the ingredients into very small cubes. Cucumbers can be grated on a coarse grater. Add chopped herbs and spices, and pour okroshka with kefir before serving.
2. Okroshka on the water with mayonnaise
A drop of vinegar will add a slight sourness to okroshka.
You will need: 2 potatoes, 2 cucumbers, 0.5 onions, 300 g of boiled sausage, greens, 4 eggs, 1 liter of water, mayonnaise, 0.5 tbsp. vinegar
Cooking: Boil the eggs, cut everything into a small cube, chop the greens and mix the ingredients with mayonnaise to taste. Pour okroshka with water to the desired consistency, add vinegar and send it to the refrigerator.
3. Okroshka on kvass
You definitely need a good bread kvass with an expressive taste.
You will need: 500 g potatoes, 300 g boiled sausage, 3 eggs, 200 g radishes, 300 g cucumbers, 1 pepper, herbs, spices, sour cream.
Cooking: Boil potatoes and eggs until tender and let them cool. Slice the radish thinly and dice the rest of the ingredients. Grind greens, mix everything with spices, pour kvass and serve with sour cream.
4. Okroshka on beer
It turns out beautifully if you cut the eggs into halves or large slices and add them already when serving.
You will need: 1 bunch of green onions, 2 potatoes, 6 radishes, 400 g of sausage, 2 cucumbers, 2 eggs, spices, 1 liter of beer.
Cooking: Cool boiled potatoes and eggs, and cut all the ingredients into small cubes. Season the okroshka to taste and top with beer before serving.
5. Meat okroshka
The most satisfying okroshka recipe in this collection!
You will need: 100 g of beef, 100 g of pork ham, 100 g of tongue, 1 bunch of green onions, 200 g of cucumbers, 100 g of sour cream, 2 eggs, spices, herbs, mustard, 1 liter of kvass.
Cooking: Boil the eggs until cooked and rub the yolks with sour cream, mustard and spices, and mix the dressing with kvass. Boil all the meat, and cut into cubes along with proteins and cucumbers. Add chopped greens, mix okroshka and pour kvass.
6. Vegetable okroshka
A dietary option without meat or sausage at all.
You will need: 1 liter of kefir, 40 g of greens, 5 cucumbers, 3 eggs, 6 radishes, 2 potatoes, 20 g of mayonnaise.
Cooking: Boil potatoes and eggs, then chop finely. Cut half of the cucumbers and radishes into small cubes, and grate the rest. Add chopped greens, season with okroshka and pour kefir with mayonnaise.
7. Okroshka with sausage
Another classic recipe!
You will need: 200 g of boiled sausage, 150 g of salami, 400 g of potatoes, 6 eggs, 400 g of cucumbers, 350 g of radishes, 1 bunch of green onions, 1 bunch of herbs, spices, sour cream, carbonated mineral water.
Cooking: Boil potatoes and eggs, and cut all the ingredients into small cubes. Separately, chop greens and green onions, mix everything with spices, pour mineral water and serve with sour cream.
8. Okroshka with radish
A very tasty option, and even with salami sausage!
You will need: 300 g salami, 1 radish, 3 potatoes, 3 eggs, 2 cucumbers, 2 tbsp. lemon juice, spices, herbs, 700 ml of kefir.
Cooking: Boil eggs and potatoes, cut all the ingredients into cubes, sprinkle with lemon juice and mix. Pour okroshka with kefir and add spices with herbs to taste.
9. Okroshka with shrimps
The original recipe for okroshka for seafood lovers.
You will need: 2 cucumbers, 1 potato, 2 eggs, 20 g green onions, 150 g shrimp, 1 l mineral water, 250 g sour cream, spices.
Cooking: Boil potatoes and eggs, and cut everything into cubes. Separately, boil the shrimp until cooked according to the instructions, and cut the largest ones into several pieces. Add sour cream and spices, fill everything with mineral water, and mix well.
10. Okroshka with beets
Charming pink color instantly attracts attention.
You will need: 1 beet, 2 potatoes, 1 egg, 0.5 lemon, 400 ml of mineral water, 1 cucumber, 50 g of sausage, sour cream, spices, herbs.
Cooking: Separately, boil potatoes, eggs and beets, grate the beets, and cut the rest of the ingredients into cubes. Sprinkle okroshka with lemon, add spices and herbs, mix with sour cream to taste and fill with mineral water.
11. Okroshka with chicken and cauliflower
When serving, be sure to add a little Dijon mustard.
You will need: 300 g of chicken, 500 g of cauliflower, 4 eggs, 3 cucumbers, 4 potatoes, 1 bunch of green onions, 1 liter of mineral water, 100 g of sour cream.
Cooking: Boil until cooked chicken, eggs and potatoes, and cut everything into small cubes. Separately, boil the cauliflower and disassemble it into very small inflorescences. Add greens, sour cream and spices to taste, mix, fill with mineral water and send okroshka to the refrigerator for half an hour.
12. Okroshka with beans
If you take dry beans, soak them in advance and boil them so that they are soft and have time to cool.
You will need: 300 g beans, 3 eggs, 200 g cucumbers, 200 g potatoes, 200 g radishes, kefir, spices.
Cooking: Boil potatoes and eggs, cut everything into small cubes and add beans at the end. Mix everything, add spices and pour kefir to taste.
13. Okroshka with pickles
Pickled cucumbers clearly change the usual taste of okroshka.
You will need: 3 pickled cucumbers, 200 g sausage, 2 eggs, 25 g onions, green onions, greens, 2 potatoes, 150 g radishes, kvass.
Cooking: Boil eggs and potatoes, and cut all the ingredients into small cubes along with cucumbers. Add chopped onion and herbs, mix okroshka and pour kvass.
14. Okroshka with cabbage
And again, an unusual, but very easy recipe that is definitely worth a try!
You will need: 120 g of cabbage, 100 g of sausage, 0.5 carrots, 2 cucumbers, 2 eggs, 1 bunch of herbs, 300 ml of kefir, 3 tbsp. sour cream, 2 tbsp. mayonnaise, 1 tsp mustard, spices, 500 ml of water.
Cooking: Thinly chop the cabbage, knead it with your hands and grate raw carrots on a coarse grater. Boil eggs, chop all other ingredients and mix with sour cream, mayonnaise, mustard and spices. Pour okroshka with water and kefir.
15. Okroshka without eggs with apple and pepper
We advise you to take a sour green apple and sweet red pepper.
You will need: 2 cucumbers, 1 pepper, 1 bunch of green onions, 6 radishes, 1 apple, 0.5 cups of sour cream, 1 tsp. mustard, kefir, spices, herbs.
Cooking: Grate apple, cucumber and radish on a coarse grater. Finely chop the pepper, chop the greens, season everything with sour cream with mustard and spices. Add kefir to taste. Okroshka is ready!
