1. Chicken soup with vermicelli and potatoes

What could be more simple and homely?
You will need: 1 kg chicken, 2 carrots, 2 onions, 4 potatoes, 200 g vermicelli, 30 g butter.
Cooking: Boil the chicken until cooked, remove from the broth and chop the meat. Send the potatoes to the boiling broth, and when it is almost ready, fry the onions and carrots in butter. At the very end, add the vermicelli, return the chicken to the pot and cook until tender.
2. Chicken soup with vegetables and vermicelli

A great spring recipe for the start of vegetable season.
You will need: 500 g chicken, 500 g potatoes, 300 g zucchini, 300 g tomatoes, 300 g peppers, 150 g carrots, 150 g onions, 100 g vermicelli, spices.
Cooking: Cut chicken and all vegetables into small cubes. Fry the onion, add the carrots, and then the chicken. Carcasses for 10 minutes, add zucchini and peppers, and after 5 minutes – tomatoes. Simmer for another 3 minutes, add water, bring to a boil, add potatoes, and after 10 minutes – vermicelli and spices. Boil until done.
3. Soup with chicken, noodles and cabbage

For flavor, you can add a couple of pieces of smoked bacon.
You will need: 500 g chicken, 3 potatoes, 1 carrot, 1 onion, 150 g cabbage, 80 g vermicelli, spices.
Cooking: Boil the chicken until cooked, add potatoes to the broth and cook for 20 minutes. Then add shredded cabbage and roast carrots and onions. Send it to the pan, and after a couple of minutes, season the soup and add the vermicelli. When it’s cooked, take the soup off the heat.
4. Chicken soup with vermicelli and spinach

For a more dietary version, take the fillet, and for richness, take the ham.
You will need: 500 g chicken, 3 potatoes, 100 g vermicelli, 2 bunches of spinach, 1 onion, 1 carrot.
Cooking: Add the diced potatoes to the boiling broth. Fry chopped onions with grated carrots, and also send them to the soup. After 10 minutes, add chopped spinach, and after another 5 – vermicelli. When it’s cooked, the soup is ready!
5. Soup with chicken, noodles and sorrel

Serve it with boiled egg halves.
You will need: 700 g chicken, 2 potatoes, 0.5 leek, 1 carrot, 0.5 celery root, 1 pepper, 0.5 bunch of sorrel, 2 tomatoes, 2 handfuls of green peas, spices, herbs, 3 tbsp. vermicelli.
Cooking: Finely chop the leek, celery, carrots and peppers and fry. Put potatoes in boiling chicken broth, and after 10 minutes fry. After another 7 minutes, add chopped sorrel, tomatoes, peas, spices, herbs and vermicelli. Bring to a boil and turn off the stove after 5 minutes.
6. Chicken soup with vermicelli and egg

An egg thickens chicken soup wonderfully and saturates it with protein even more.
You will need: 300 g chicken, 350 g potatoes, 1 carrot, 100 g vermicelli, 1 egg, 1 bunch of green onions.
Cooking: Finely chop the green onion and fry it with grated carrots. Add diced potatoes to the boiling broth, and when it is almost cooked – fry. Bring to a boil, add vermicelli and continue to cook until tender. Pour the beaten egg into the soup, stir well and remove from heat after a minute.
7. Chicken soup with vermicelli and cheese

The more cheese, the creamier the flavor!
You will need: 250 g chicken, 0.5 onions, 1 carrot, 1 pepper, 50 g processed cheese, 100 g vermicelli.
Cooking: Cut the chicken into pieces and boil until tender. Add all the vegetables to the broth, and after 10 minutes – vermicelli. After another 5 minutes, add the melted cheese and cook the soup until it disperses.
8. Soup with chicken, noodles and tomatoes

For a brighter color, add a spoonful of tomato paste to the frying.
You will need: 300 g chicken, 1 onion, 150 g vermicelli, 1 carrot, 2 tomatoes, spices.
Cooking: Boil the chicken until cooked, and cut the vegetables into small cubes. Fry the onion with carrots until golden, add the tomatoes and simmer for 5-7 minutes under the lid. Send the roast to the pan, and after another 5-7 minutes add the vermicelli and spices. Boil the soup until done.
9. Soup with chicken, shrimp and vermicelli

You will need: 1.2 l chicken broth, 200 g shrimp, 100 g vermicelli, 1 carrot, 0.5 bunch of green onions, 1 garlic clove, spices.
Cooking: Cut the carrots, fry until soft, add green onions and fry for another 3-4 minutes. Add all the ingredients to the boiling broth and cook the soup until tender.
10. Chicken soup with zucchini and vermicelli

Even kids will love it!
You will need: 400 g chicken, 2 potatoes, 50 g carrots, 50 g onions, 150 g vermicelli, 1 zucchini, herbs, spices.
Cooking: Boil the chicken until tender, add the potatoes and cook for another 10 minutes. Fry the onions and carrots for 5 minutes, and also send them to the pan. After another 5 minutes, add finely chopped zucchini to the soup, and when all the vegetables are ready – vermicelli, herbs and spices. Remove the soup from the heat when the vermicelli is cooked.
11. Chicken soup with vermicelli and beans

Any bean will do, but cook it ahead of time to save time.
You will need: 700 g of chicken, 0.5 cups of beans, 1 carrot, 3 handfuls of vermicelli, 2 onions, 2 tbsp. tomato paste.
Cooking: Grate the carrots on a coarse grater, finely chop the onion and fry them until soft. Add tomato paste to the frying, mix and send it to the boiling chicken broth. After 7 minutes, add beans and vermicelli to the soup, and after another 5-7 turn off the heat.
12. Chicken soup with vermicelli and green peas

In season, you can safely cut young green peas.
You will need: 500 g chicken, 2 potatoes, 1 onion, 1 carrot, 70 g vermicelli, 100 g green peas.
Cooking: Boil the chicken until tender, add the potatoes and leave for 10 minutes. Then add the fried onions and carrots, and with it – green peas. After another 5-7 minutes, send the vermicelli to the pan and cook the soup until tender.
13. Soup with chicken, noodles and cauliflower

At the very end, you can add a handful of spinach or greens.
You will need: 500 g chicken, 3 potatoes, 1 carrot, 1 onion, 200 g cauliflower, 80 g vermicelli.
Cooking: Boil the broth, add potato cubes to it and cook for 10-12 minutes. Grate the carrots, finely chop the onion and fry until golden. Add finely chopped cabbage to the broth, and after 5 minutes – fry. When the cabbage is almost ready, add the vermicelli and spices, and after a couple of minutes after boiling, remove the chicken soup from the heat.
14. Chicken soup with vermicelli and cream

If desired, thicken it with a little flour.
You will need: 800 g of chicken, 1 onion, 3 carrots, 2 stalks of celery, 200 g of vermicelli, 150 g of corn, 0.5 cups of heavy cream, spices, herbs.
Cooking: Finely chop the onion, carrot and celery and sauté all together until soft. Boil the broth until cooked, put the frying into it, and after 5 minutes – corn and vermicelli. When the vermicelli is cooked, season the soup, pour in the cream, bring to a boil, sprinkle with herbs and remove from heat.
15. Chicken soup with mushrooms and vermicelli

To make the broth really mushroomy, take porcini mushrooms.
You will need: 700 g chicken, 1 bunch of greens, 0.5 zucchini, 300 g mushrooms, 200 g vermicelli, 2 carrots, spices, 1 onion.
Cooking: Prepare a rich broth and separately boil the washed mushrooms in a glass of water for 20 minutes. Fry the onion with carrots, and just finely chop the zucchini. Put mushrooms with broth, frying and zucchini in the broth. After 5 minutes, add greens and vermicelli, and when it is cooked, remove the soup from the heat.
