
Carrot casserole is one of the simplest vegetable dishes for children and adults. The advantage is that it can be made sweet or salty, with dried fruits or meat – everything to your taste. And we have already collected 15 of the best recipes in this collection!
1. Carrot casserole with milk

Instead of milk, you can take kefir – the essence will be the same. Almost like in kindergarten!
You will need: 300 g carrots, 50 ml milk, 1 egg, 10 g sour cream, 10 g butter, 8 g semolina, 10 g breadcrumbs, 10 g sugar.
Cooking: Cut the carrots into thin sticks and fry in butter. Pour in milk, simmer until soft and then add sugar with semolina. Simmer for another 10 minutes. Let the mass cool a little, stir in the egg and breadcrumbs, and put everything in a mold. Lubricate with sour cream and bake for 25 minutes in the oven at 180 degrees.
2. Carrot casserole with semolina

For carrot casserole, it is better to use semolina, not flour – this way the texture will be more pleasant.
You will need: 500 g carrots, 2-3 eggs, 3 tbsp. sugar, 3 tbsp. semolina, 1 pinch of soda.
Cooking: Boil the carrots until cooked, let it cool and rub on a fine grater. Mix eggs with sugar, semolina and soda. Add carrots, mix, put the mass into a mold and cook the casserole for 30-40 minutes in the oven at 180 degrees.
3. Carrot casserole with raisins and dried apricots in a slow cooker

Delicious sweet snack for tea or coffee. Comes down for breakfast too!
You will need: 500 g carrots, 1 egg, 1 tsp. sugar, zest of half a lemon, 100 g dried apricots and raisins, 50 g chopped walnuts, 1 tbsp. breadcrumbs, 5 tbsp. butter, 250 ml of milk, 1 tbsp. flour.
Cooking: Grate carrots, cut dried apricots and add raisins, sugar and a spoonful of butter there. Pour 150 ml of water into the slow cooker, lay out all this mass and cook for 10 minutes in the “Multi-cook” mode at 160 degrees, and then throw everything into a colander.
Separate the white from the yolk. Add the yolk to the carrots and all the remaining ingredients. Stir. Separately, beat the egg whites to peaks and stir in the same. Put the mass in an oiled multicooker bowl and turn on the “Baking” mode for 40 minutes.
4. Carrot casserole with apples

A good recipe for casseroles for the winter, when the diet lacks fruits and vegetables.
You will need: 3 carrots, 2 apples, 3 eggs, 1 cup semolina, 0.5 cup sugar, 1 tsp. baking powder, 1 tsp cinnamon, 3 tbsp. vegetable oil.
Cooking: Grate carrots, mix with sugar and leave for 10 minutes. Peel the apples and chop finely. Separately, beat the eggs with vegetable oil, and mix everything together. Add cinnamon, baking powder and semolina, leave the workpiece for another 20 minutes and then bake for 40 minutes in the oven at 180 degrees.
5. Carrot casserole with cottage cheese

Cottage cheese and carrot casserole is just the perfect healthy breakfast!
You will need: 200 g cottage cheese, 120 g carrots, 30 g sugar, 1 egg, 2 tbsp. semolina, 1 pinch of vanillin.
Cooking: Grind the cottage cheese through a sieve, grate the carrots on a fine grater and mix all the ingredients well. Leave the mass for 15 minutes and cook the casserole in the oven for 35 minutes at 180 degrees.
6. Carrot casserole with pumpkin

Classic autumn combination. And also – the incredible color of the finished casserole!
You will need: 200 g carrots, 200 g pumpkin, 300 ml kefir, 110 g semolina, 1 egg, 2 tbsp. honey, 1 tsp baking powder, 1 tsp cinnamon, 1 pinch of ground cardamom, cloves and nutmeg.
Cooking: Pour semolina with kefir and leave for 20 minutes. Cut carrots and pumpkin into cubes, pour in 50 ml of water and simmer for 15 minutes until soft. Whisk the vegetables in a blender. Mix all the ingredients and cook the casserole in the oven for 40 minutes at 180 degrees.
7. Carrot casserole with minced meat and cheese

Choose any minced meat – it does not affect the cooking process.
You will need: 400 g carrots, 350 g minced meat, 100 g leek, 2 eggs, 50 g celery root, 100 g sour cream, 50 g hard cheese, 40 g herbs, spices.
Cooking: Finely chop the onion and celery and fry for a couple of minutes. Add minced meat and fry everything together for 10 minutes. Season. Boil carrots, beat in puree and mix with spices, sour cream and eggs. Put the minced meat in the form, then the carrots, and sprinkle with grated cheese. Bake in the oven for 35 minutes at 180 degrees.
8. Carrot Casserole with Chicken and Mushrooms

This casserole is so easy and simple to prepare that anyone can handle it.
You will need: 600 g chicken fillet, 3 carrots, 1 onion, 200 g mushroom s, 0.3 cups of cream, 0.3 cups of grated cheese, 1 lemon, 1 bunch of parsley, 4 tsp. starch, spices.
Cooking: Cut the chicken into strips and marinate it in lemon juice and spices for 15 minutes. Finely chop the onion and fry until golden. Add chopped mushrooms and fry until tender. Pour in the cream, add the chopped parsley and starch, and simmer everything until it thickens.
Lay out most of the chicken. Sprinkle with cheese, lay out the mushrooms and grated carrots on top. Then lay out the remaining fillet and sprinkle with the remaining cheese. Cook the casserole in the oven for 45 minutes at 180 degrees.
9. Carrot casserole with nuts

You can add a handful of candied fruits or dried fruits to taste.
You will need: 500 g carrots, 100 g walnuts, 70 g butter, 250 ml milk, 1 tsp. sugar, 1 egg, 1 tbsp. flour, 1 orange.
Cooking: Grate the carrots on a medium grater and lightly fry them in butter. Pour in milk, add sugar and simmer until soft. Let the mass cool, add chopped nuts, egg, flour and orange zest. Flour can take more. Send the casserole to the oven for 45 minutes at 180 degrees.
10. PP Carrot Casserole with Honey and Coconut

A complete PP recipe for those who control their diet.
You will need: 3 carrots, 2 eggs, 1 cup oatmeal, 50 g coconut, 2 tbsp. honey, 125 g of cottage cheese, 0.5 cups of kefir, 0.25 cups of vegetable oil, 2 tbsp. ground flax seeds, 0.5 tsp soda, spices.
Cooking: Mix kefir with butter and soda, and beat eggs with salt and honey. Combine both masses and add grated cottage cheese there. Mix everything until smooth and add spices and grated carrots. At the end, add oatmeal, flax seeds and coconut flakes, and mix again. Cook the casserole in the oven under foil for about 70-80 minutes at 170 degrees.
11. Carrot casserole with rice

An original sweet casserole that will definitely not leave you indifferent.
You will need: 1.5 cups rice, 3 carrots, 1 tbsp. sugar, 2 cups milk, 1 egg, 4 tbsp. sour cream, spices.
Cooking: Cut the carrot into large pieces, boil in milk until cooked and then grind it with a blender. Separately, boil rice until a viscous porridge and mix with carrots. Add all other ingredients and mix the mass. Cook the casserole in the oven for about 30 minutes at 200 degrees.
12. Carrot casserole with oatmeal

Hearty and healthy carrot casserole made from cheap ingredients.
You will need: 150 g flour, 150 g oatmeal, 1 egg, 3 tbsp. sugar, 2 carrots, 2 tbsp. vegetable oil, 1 pinch of salt.
Cooking: Mix all dry ingredients. Add grated carrots, egg and oil and mix thoroughly. In the process, add a little water so that the dough comes out a little thicker than on pancakes. Put the mass into a mold and bake for 30 minutes in the oven at 180 degrees.
13. Carrot casserole with sour cream

The simplest recipe when there is no time and desire to cook.
You will need: 1.2 kg carrots, 5 tbsp. vegetable oil, 3 tbsp. flour, 200 g sour cream, spices.
Cooking: Grate the carrots on a coarse grater and fry for 7-8 minutes in oil until soft. Let it cool and mix with sour cream, flour and spices. Put everything in a mold and bake for half an hour at 180 degrees.
14. Lean Carrot Casserole

You will need: 250 g carrots, 130 g semolina, 1 tsp. ground ginger, 1 tsp baking powder, 200 g apples, 1 tsp. cinnamon, 75 ml vegetable oil, 120 g rice flour, 2 tbsp. honey or sweetener.
Cooking: Peel carrots with apples and grind them in a blender. Mix all the ingredients for the casserole. You may need less flour – look at the consistency. Put the mass into a mold and bake for 40-45 minutes at 180 degrees in the oven.
15. Carrot Banana Casserole

The kids will absolutely love this casserole!
You will need: 250 g cottage cheese, 200 g carrots, 1 banana, 15 g butter, 2 eggs, 90 ml water, 4 tbsp. sugar, 1 tsp starch.
Cooking: Grate carrots and stew in butter with water until soft and moisture evaporates. Beat cottage cheese with sugar and eggs in a blender, add carrots and beat again. Add starch, mix and add sliced banana. Pour everything into a mold and cook the casserole for half an hour in the oven at 180 degrees.
