
To diversify conservation, we suggest adding something more interesting than banal cucumbers with tomatoes – for example, green bean salad for the winter. We have collected 15 great recipes for you!
1. Green bean salad with tomatoes for the winter

Delicious, bright and fragrant – what else do you need from a blank?
You will need: 500 g of green beans, 1 kg of tomatoes, 300 g of carrots, 500 g of bell pepper, 4 cloves of garlic, 1 hot pepper, 125 ml of vegetable oil, 1 tbsp. salt, 60 g sugar, 30 ml vinegar.
Cooking: Peel the tomatoes from the skin and pass them through a meat grinder. Add butter, sugar, salt, minced garlic and hot pepper. Bring to a boil.
Add grated carrots, after 10 minutes – green beans, and after another 5 – chopped bell pepper. Boil everything together for 15 minutes, add spices to taste, pour in vinegar and roll the salad into sterilized jars.
2. Green bean salad with onions for the winter

The simplest salad with a minimum of ingredients, but they are enough.
You will need: 500 g of green beans, 2 onions, 2 cloves of garlic, 2 cloves, 2 bay leaves, 4 allspice peas, 400 ml of water, 1.5 tbsp. vegetable oil, 2 tbsp. vinegar, 50 g sugar, 1 tbsp. salt.
Cooking: Boil green beans for 5 minutes in boiling water and arrange them in jars with chopped onion, garlic and spices. Boil water with sugar and salt. Pour in vinegar and oil, boil for a couple of minutes, pour the beans with this marinade and roll up.
3. Green bean salad with bell pepper for the winter

It turns out something like a classic lecho, but with green beans.
You will need: 1 kg of green beans, 1 kg of bell peppers, 2 kg of tomatoes, 500 g of carrots, 1 bunch of herbs, 1 head of garlic, 250 ml of vegetable oil, 75 ml of vinegar, 2 tbsp. salt, 100 g sugar, 2 hot peppers.
Cooking: Skip the tomatoes, hot peppers, garlic and herbs through a meat grinder. Add butter, salt and sugar, and simmer for 10 minutes after boiling. Add grated carrots, after 10 minutes – green beans, and after another 10 – chopped sweet peppers. Carcasses all together for another 25 minutes, pour in vinegar, mix the workpiece and roll it into sterilized jars.
4. Green bean salad with basil and tomatoes

A very fragrant preparation with a slight touch of Italian cuisine.
You will need: 1 kg of green beans, 1 bell pepper, 1 onion, 1 carrot, 1.5 kg of tomatoes, 1 head of garlic, 2 bunches of basil, 3 tsp. salt, spices and vegetable oil.
Cooking: Fry chopped onion with carrots and bell pepper until soft. Peel the tomatoes from the skin, cut, add to the vegetables and simmer for 10 minutes. Then add green beans, salt, chopped garlic and spices. Cook everything together for another 15 minutes and add the chopped basil. Put the salad in jars, sterilize them for another 15 minutes and roll them up for the winter.
5. Green bean salad with vegetables for the winter

Feel free to add any other seasonal vegetables you have on hand.
You will need: 2 kg of green beans, 2 kg of tomatoes, 1 kg of carrots, 1 kg of bell peppers, 500 g of onions, 500 g of zucchini, 1 head of cauliflower, 1 glass of vegetable oil, 85 ml of vinegar, 2 tbsp. salt, 3 tbsp. sugar, spices.
Cooking: Roughly chop all vegetables. Boil green beans and cauliflower for 5 minutes in boiling water. Mix all the ingredients, except for the vinegar, and simmer for 30-40 minutes. Pour in the vinegar, mix and roll the salad into sterilized jars.
6. Green bean salad with carrots and herbs

If you want the beans to be softer, then first boil them for 5 minutes.
You will need: 1 kg of green beans, 1 kg of tomatoes, 500 g of carrots, 1 bunch of parsley and dill, 200 g of onion, 2 cloves of garlic, spices, 2 tbsp. vinegar, 1 tbsp. salt, 1.5 tbsp. Sahara.
Cooking: Peel the tomatoes from the skin, finely chop and simmer them for 15 minutes. Separately fry the chopped onions and carrots. Add this roast to the tomato mass, add green beans, salt, sugar and spices there. Bring everything to a boil and simmer for 20 minutes. Add chopped greens, garlic and vinegar, let the salad cook for a couple more minutes and roll up.
7. Green bean salad in tomato

You don’t need tomatoes for this recipe – just tomato paste is enough.
You will need: 300 g green beans, 1 onion, 1 bell pepper, 1 carrot, 400 ml water, 4 tbsp. tomato paste, 1 garlic clove, 1 tsp. salt, 1.5 tbsp. sugar, 0.5 tbsp. vinegar.
Cooking: Boil water with tomato paste, sugar and salt. Put the green beans and all the chopped vegetables there, and stew the workpiece for half an hour. Pour in the vinegar, mix the salad and roll it into sterilized jars.
8. Korean style green bean salad for the winter

A great savory salad for Korean-style vegetable lovers.
You will need: 700 g green beans, 100 g carrots, 80 g onions, 15 g garlic, 1 tsp. coriander, 1 tbsp spices for Korean carrots, 200 ml of water, 100 ml of vegetable oil, 40 ml of apple cider vinegar, 40 g of sugar, 5 g of salt, 3 clove buds, 4 allspice peas.
Cooking: Boil green beans for 5-7 minutes in boiling water. Grate the carrots on a Korean grater and cut the onion into feathers. Mix everything together, add coriander, chopped garlic and spices for Korean carrots. Divide the salad into jars. Boil water with all the other ingredients, fill the beans with the resulting marinade and roll up the lids.
9. Green bean and broccoli salad for the winter

Even those who carefully monitor nutrition and calories will like it.
You will need: 1 kg of green beans, 1 kg of broccoli, 1 bunch of greens, 1 liter of water, 2 tbsp. sugar and salt, 150 ml of vinegar, spices.
Cooking: Cut the green beans, and broccoli – disassemble into inflorescences. Boil everything for 2-3 minutes in boiling water and arrange in clean jars with herbs and spices. Separately, boil clean water with vinegar, sugar and salt. Pour the marinade over the vegetables, sterilize the salad for 15 minutes and roll it up for the winter.
10. Green bean salad with eggplant for the winter

Hearty and original salad, a bit in the style of Georgian cuisine.
You will need: 1 kg of tomatoes, 500 g of green beans, 500 g of eggplant, 200 g of onions, 5 cloves of garlic, 20 ml of vinegar, 2 tsp. sugar, 1 tsp salt, 1.5 tsp hops-suneli, spices.
Cooking: Slice the eggplant and fry until golden brown. Separately chop and fry the onion, add green beans to it and fry for another 10 minutes. Grind the tomatoes with a blender and rub through a sieve. Mix together all the ingredients, except for the vinegar, simmer for half an hour and pour in the vinegar. Arrange the salad in jars, sterilize for 15 minutes and roll up the lids.
11. Green bean salad with cabbage for the winter

String beans with cabbage is a rather original solution, so this salad will definitely surprise you.
You will need: 300 g of green beans, 300 g of cabbage, 300 g of carrots, 200 g of onions, 200 g of bell peppers, 500 g of tomatoes, 1 head of garlic, 1 bunch of herbs, 50 ml of vinegar, 120 ml of vegetable oil, 15 g of salt, 20 g of sugar .
Cooking: Boil green beans for 5-7 minutes. Randomly chop all the vegetables and mix them with the beans. Add butter, sugar and salt, and simmer the workpiece for half an hour. A couple of minutes before the end, add chopped herbs, garlic and vinegar. Roll up the salad in sterilized jars.
12. Green bean salad in tomato juice for the winter

From spices, we recommend adding a little paprika and fragrant Italian herbs.
You will need: 1 kg of green beans, 700 g of bell pepper, 500 ml of tomato juice, 45 ml of vegetable oil, 45 g of sugar, 30 ml of apple cider vinegar, 20 g of salt, 1 bunch of herbs.
Cooking: Bring the tomato juice to a boil, add chopped pepper and simmer for 10 minutes under the lid. Add chopped green beans, butter, sugar and salt, and simmer for another 20 minutes. A couple of minutes before the end, add chopped herbs and vinegar. Arrange the salad in jars, sterilize for another 15 minutes and roll up the lids.
13. Green bean salad with cucumbers for the winter

An original preparation for lovers of unusual tastes.
You will need: 2 kg of green beans, 2 kg of cucumbers, 1 kg of onions, 200 ml of vinegar, 100 ml of vegetable oil, 2 cups of sugar, 200 ml of tomato sauce, 4 tbsp. salt, 1 tbsp. ground black pepper.
Cooking: Boil green beans for 10-15 minutes in boiling water. Cut the cucumbers into rings, and the onion into feathers. Boil the oil with the tomato sauce, vinegar, sugar, pepper and salt. Pour all the vegetables and leave them for 2-3 hours. Pack the salad tightly into jars and sterilize for another 15 minutes. Roll up the lids.
14. Green bean and cauliflower salad for the winter

A simple recipe without sterilization and other additional complexities.
You will need: 300 g green beans, 1 head of cauliflower, 1 tsp. salt, 1 tsp sugar, 1 tbsp. vinegar, spices.
Cooking: Put in a jar green beans, small cauliflower inflorescences and spices to taste. Pour boiling water over them, cover with a lid and let cool completely. Then drain this water, boil it again and add sugar, salt and vinegar. Pour the marinade over the vegetables and roll up the salad for the winter.
15. Korean-style green bean salad with sterilization

Another version of our favorite Korean-style spicy salad!
You will need: 600 g green beans, 300 g carrots, 5 garlic cloves, 20 g spices, 1 bunch cilantro, 5 tbsp. vegetable oil, 2 tbsp. sugar, 2 tbsp. vinegar, 0.5 tsp salt.
Cooking: Boil green beans for a couple of minutes in boiling water and drain in a colander. Grate carrots on a Korean grater, chop cilantro and garlic, and mix all the ingredients together. Leave the salad to infuse for a couple of hours, and then pack it tightly into jars and sterilize them for another 20 minutes in boiling water.
