It is especially good on the festive table, and guests will definitely be impressed! We tell the best recipes on how to properly bake a goose in the oven, what it can be cooked with and how long it will take!
1. Goose baked in foil
The goose is baked for a very long time, but the foil allows you to speed up this process a little.
You will need: 1 goose, 5 apples, 1 lemon, spices, white wine.
Cooking: Stuff the cleaned goose with apple slices and lemon slices. Rub it with spices on the outside, drizzle with wine and wrap tightly in foil. Bake for 1.5 hours in the oven at 170 degrees, unfold and bake for another 30 minutes, periodically basting with juice.
2. Roast goose in the sleeve
The goose in the sleeve turns out to be as tender and juicy as possible.
You will need: 1 goose, 3 garlic cloves, 3 tbsp. olive oil, spices.
Cooking: Mix olive oil, crushed garlic and spices, and rub the cleaned goose carcass. Wrap it in a sleeve, put it in the refrigerator for a couple of hours and bake for 1.5-2 hours in the oven at 180 degrees.
3. Goose with apples in the oven
To get a beautiful ruddy hue, add paprika to the spices.
You will need: 1 goose, 3 apples, 1 tbsp each olive oil and soy sauce, spices.
Cooking: Put whole apples inside the peeled goose and zashees. Rub the carcass with a mixture of oil, soy sauce and spices, wrap it in a sleeve and bake in the oven for 2 hours at 180 degrees. After 1.5 hours, cut the package.
4. Goose with potatoes in the oven
Potatoes are soaked in juices and poultry fat, and it turns out doubly tastier.
You will need: 1 goose, 8 potatoes, 3 apples, 2 bay leaves, spices.
Cooking: Gutted goose stuffed with apples, rub with spices, wrapped in a sleeve and baked for 1 hour at 180 degrees. Put it in a mold along with all the juice. Add chopped potatoes and bay leaf there, and bake for another 1 hour.
5. Goose pieces in the oven
A good way if you need portioned pieces.
You will need: 1 goose, 5 garlic cloves, 3 tbsp. Dijon mustard, spices and herbs.
Cooking: Cut the goose into pieces and rub each with mustard with crushed garlic, spices and herbs. Put the goose in a mold, pour in half a glass of water, cover with foil and send for 1 hour in the oven at 200 degrees. Remove the foil and bake the goose until golden brown.
6. Goose with rice and prunes in the oven
A great way to cook goose right away with a fragrant side dish.
You will need: 1 goose, 200 g rice, 1 carrot, 160 g prunes, 3 tbsp. mayonnaise, 1 tbsp. rosemary, spices.
Cooking: Finely chop the carrots and prunes, mix with boiled rice and stuff the gutted goose. Sew up the hole, rub the carcass with spices and rosemary, and coat with mayonnaise. Wrap the goose in foil and bake for 2 hours at 180 degrees. Unroll the foil towards the end.
7. Goose with buckwheat in the oven
We advise you to boil buckwheat and eggs in advance – and then the preparation will take a few minutes.
You will need: 1 goose, 1 glass of buckwheat, 3 eggs, 1 onion, 1 tsp each honey and mustard, spices.
Cooking: Fry the onion in goose fat and mix with boiled buckwheat and chopped boiled eggs. Season, stuff the goose and zashea with this mixture. Lubricate it with honey, mustard and spices, and bake on a wire rack over a tray for 2-2.5 hours at 200 degrees. Water the bird with dripping juice every 20 minutes.
8. Goose with oranges in the oven
An amazing main course with subtle Asian touches.
You will need: 1 goose, 2 oranges, 100 ml soy sauce, 60 g honey, 50 ml olive oil, 1 tbsp. grated ginger, spices.
Cooking: Mix all the ingredients except the oranges and poultry and rub the goose with some of the marinade. Leave for an hour in the refrigerator and rub with the remaining marinade. Stuff the carcass with peeled orange slices and leave on the table for another 1 hour. Wrap in a sleeve and bake for about 2 hours in the oven at 200 degrees. Cut the sleeve and bake the goose until golden brown.
9. Goose with quince and dried apricots in the oven
Quince is a good alternative to classic apples for stuffing poultry.
You will need: 1 goose, 4 quinces, 150 g dried apricots, 1 lemon, 1 tbsp. honey and mustard, 5 tbsp. mayonnaise, spices.
Cooking: Mix mayonnaise, honey, mustard and spices, and rub with this m gutted goose inside and out. Leave it overnight in the refrigerator in a bag. Stuff the carcass with chopped quince and dried apricots, zashee and sprinkle everything with lemon juice. Bake the goose in the sleeve for half an hour at 200 degrees, and then for up to 2.5 hours at 180.
10. Goose with mayonnaise in the oven
A lazy goose recipe in a hurry. Minimum preparation!
You will need: 1 goose, 250 g mayonnaise, 3 garlic cloves, spices.
Cooking: Mix mayonnaise, crushed garlic and spices. Rub the gutted goose inside and out, leave for half an hour, put in a mold and bake in the oven for 2 hours at 200 degrees. Water it with the extracted juice several times an hour.
11. Goose in honey mustard sauce in the oven
The most delicious and sweet crust, and also an interesting baking technology.
You will need: 1 goose, 4 apples, 3 tbsp each honey and mustard, spices.
Cooking: Stuff the goose with coarsely chopped apples, rub with spices and then rub with a mixture of mustard and honey. Sew up the hole or fasten it with toothpicks. Put the goose on a baking sheet and pour in water to the thickness of a finger.
Bake the goose in the oven for 1 hour at 150 degrees. Remove fat from the pan, add the same amount of hot water, cover with foil, and bake for another 2 hours. Remove the foil 30 minutes before the end.
12. Goose with vegetables and wine in the oven
You can add any vegetables you like.
You will need: 1 goose, 8 potatoes, 4 onions, 2 carrots, 1 head of garlic, 200 ml red wine, 4 tbsp. honey and brown sugar, 1 tbsp. starch and mustard, spices.
Cooking: Mix honey, sugar and mustard. Prick a peeled goose with a toothpick and rub with spices. Pour it with honey mixture. Preheat the oven to 220 degrees, send the goose there on the grill, put a baking sheet under it, and immediately reduce the heat to 160 degrees. Roast the bird for 2 hours, and baste every 20 minutes with dripping fat.
Coarsely chop all vegetables. Drain most of the fat from the pan, and mix the vegetables with the rest. Put it back in the oven and cook it all together for another hour. Take out the goose, pour wine into the vegetables, and bake them separately for another 15 minutes at 220 degrees.
