The long-awaited picnic is approaching, and it’s time to plan the menu? Or maybe you’re the lucky one with the home grill? Then we tell you 12 great recipes on how to cook vegetables on it so that everyone will definitely like it!

1. Grilled vegetables in soy sauce

Sprinkle with chopped rosemary leaves before serving.

You will need: 2 zucchini, 2 eggplants, 2 peppers, 300 g of mushrooms, 0.5 cups of olive oil, 50 ml of apple cider vinegar, 4 tbsp. soy sauce, 4 cloves of garlic, spices.

Cooking: Mix oil, vinegar, soy sauce, crushed garlic and spices. Cut vegetables and mushrooms into large pieces, put in a bag, pour marinade, mix well and tie tightly.

Let them marinate for an hour, shaking occasionally. Grill vegetables for about 10-15 minutes, basting occasionally with marinade.

2. Vegetables in balsamic vinegar

A quick marinade with simple ingredients.

You will need: 1 zucchini, 1 eggplant, 1 pepper, 2 tomatoes, 1 carrot, 2 tbsp. olive oil, 50 ml balsamic vinegar, salt and pepper.

Cooking: Mix lightly heated oil, balsamic vinegar, salt and pepper. Coarsely chop all the vegetables and coat with this mixture on all sides. Grill, brushing with the rest of the marinade.

You will need: 300 g potatoes, 300 g mushrooms, 2 carrots, 150 ml mayonnaise, 4 garlic cloves, 2 tbsp. lemon juice, 1 tbsp. granular mustard, spices.

Cooking: Mix mayonnaise, lemon juice, mustard, spices and crushed garlic until smooth. Cut the carrots and potatoes into medium-sized pieces, and wash and clean the mushrooms. Marinate the vegetables for at least half an hour and grill them.

4. Vegetables in a spicy marinade

Very tasty in combination with pomegranate sauce and chopped nuts.

You will need: 2 eggplants, 2 red onions, 2 zucchini, 2 peppers, 2 tomatoes, 200 g broccoli, 1 cup vegetable oil, 50 ml balsamic, 5 garlic cloves, 1 chili, paprika, hot pepper.

Cooking: Mix oil with vinegar and heat through but do not bring to a boil. Add spices, chopped garlic and chili rings. Let the marinade cool and pour over the coarsely chopped vegetables. Leave for 1-2 hours and then grill.

5. Grilled vegetables in wine

Wine is better to take dry, but red or white – at your discretion.

You will need: 2 carrots, 2 eggplants, 1 pepper, 1 zucchini, 1 glass of wine, 2 onions, 3 tbsp. olive oil, 1 bay leaf, spices.

Cooking: Heat the wine with oil, spices and bay leaf, but do not bring to a boil. Finely chop the onion, add to the marinade, mix and pour over the vegetables cut into rings. After 1-2 hours, fry them on the grill.

You will need: 1 eggplant, 1 pepper, 200 g mushrooms, 1 carrot, 1 red onion, 2 tbsp. soy sauce, 4 tbsp. honey, 2 tbsp. mustard, spices, 3 tbsp. vegetable oil.

Cooking: Mix oil, mustard, soy sauce, honey and spices. Coarsely chop the vegetables and marinate in this mixture for 20 minutes before grilling.

You will need: 1 zucchini, 1 eggplant, 1 pepper, 200 g mushrooms, 1 lemon, basil, rosemary, 3 garlic cloves, 50 ml olive oil, spices.

Cooking: Mix lemon juice, oil, spices, crushed garlic and finely chopped greens. Coarsely chop vegetables and mushrooms, and marinate everything in an airtight bag for half an hour, shaking occasionally. Grill the vegetables for about 10 minutes on each side.

You will need: 300 g mushrooms, 200 g cauliflower, 1 zucchini, 1 carrot, 3 potatoes, 200 g sour cream, 2 cloves of garlic, spices and herbs.

Cooking: Mix sour cream with garlic, spices and herbs. Cut all the vegetables into rings of medium thickness, and just take smaller mushrooms. Marinate everything in sour cream for an hour and fry on the grill.

You will need: 2 carrots, 1 eggplant, 1 zucchini, 1 pepper, 200 g Brussels sprouts, 2 tbsp. chopped nuts, 2 tsp. Korean seasoning, 50 ml vegetable oil, 50 ml soy sauce, 0.5 bunch of basil.

Cooking: Mix oil, soy mustache, chopped basil, spices and nuts. Randomly chop the vegetables and marinate them in a bag for 2 hours before grilling.

You will need: 2 courgettes, 1 eggplant, 2 peppers, 2 tomatoes, 200 g halloumi, 130 ml olive oil, spices and herbs.

Cooking: In advance, mix the oil with spices and herbs, warm slightly and let cool. Cut vegetables and cheese into large pieces, thoroughly coat each with marinade and fry on the grill.

Easy, quick and very tasty side dish.

You will need: 300 g mushrooms, 3 peppers, 8 cherry tomatoes, 3 eggplants, 2 zucchini, 2 red onions, garlic, basil, green onions, 1 tbsp. ketchup, 3 tbsp. olive oil, spices.

Cooking: Randomly chop all vegetables and mushrooms, except tomatoes, and mix with oil and spices. After 10 minutes, add ketchup, crushed garlic and chopped herbs, and mix again. Add cherry tomatoes just before cooking, and fry the vegetables on the grill.

12. Grilled vegetables with potatoes

You will need: 2 zucchini, 4 potatoes, 1 onion, 4 carrots, 200 g of mushrooms, 4 cloves of garlic, 100 ml of vegetable oil, 1 bunch of parsley, spices.

Cooking: Grind the herbs with garlic in a blender and mix with oil and spices. Boil potatoes and carrots in advance for literally 5 minutes and let cool. Coarsely chop all the vegetables, marinate for a couple of hours or even overnight, and grill.
