Crispy pickled cabbage saves in winter, when vegetables and vitamins are sorely lacking. Moreover, it costs practically nothing to stock up on it for the future – quite a bit of effort and only simple ingredients. We have compiled a selection of 12 of the most delicious recipes!
1. Pickled Cabbage with Vinegar
Feel free to add any spices you like to the marinade.
You will need: 2.5 kg of cabbage, 1 head of garlic, 5 bay leaves, 1 tsp. cloves, 1 tsp allspice, 50 ml of vegetable oil, 1.5 l of water, 70 g of salt and sugar, 4 tbsp. vinegar.
Cooking: Chop the cabbage, chop the garlic, add spices and cover everything with oil. Boil water with sugar, salt and vinegar, pour the cabbage with this marinade and let cool. Leave the blank for a day at room temperature, put it in clean jars and store in the refrigerator or cellar.
2. Pickled cabbage with apples for the winter
Choose sour apples of green varieties – they will work better.
You will need: 1 cabbage, 2 apples, 5 garlic cloves, 200 ml apple cider vinegar, 150 ml water, 1 tbsp. allspice, 1 cinnamon stick, 4 tbsp. vegetable oil, 1 tbsp. sugar and salt, spices.
Cooking: Cut the cabbage into squares, and the apples into a cube. Mix all other ingredients, add finely chopped garlic and bring the marinade to a boil. Pour the cabbage with this marinade, leave it under the lid for a day, put it in jars and store it in a cold place.
3. Pickled cabbage with carrots for the winter
If there is a Korean grater, it is better to grate carrots on it.
You will need: 2 kg of cabbage, 1 head of garlic, 3 carrots, 1 liter of water, 2 tbsp. sugar, 1 tbsp. salt, 1 tsp hot red pepper, 1 tbsp. acetic acid, 2 tbsp. vegetable oil.
Cooking: Chop the cabbage, grate the carrots and cut the garlic into slices. Mix everything together. Boil the water with the remaining ingredients, pour the marinade over the cabbage and let it brew for 3 days, stirring occasionally. Arrange pickled cabbage in jars and store in a cool place.
4. Pickled cabbage with herbs for the winter
Such cabbage is well stored even in an ordinary closet.
You will need: 2 heads of cabbage, 2 carrots, 1 head of garlic, 1 bunch of parsley and dill, 5 glasses of water, 3 tbsp. vinegar, 1/2 cup vegetable oil, 1/2 cup sugar, 1 tbsp. salt, spices.
Cooking: Grind the garlic and herbs, grate the carrots and chop the cabbage. Put everything in layers in sterilized jars. Boil the water, add the rest of the ingredients and boil the marinade for another 2 minutes. Pour it into jars of cabbage and roll it up for the winter.
5. Pickled cabbage with bell pepper for the winter
It is advisable to take large, sweet and fleshy peppers.
You will need: 2 kg of cabbage, 1 head of garlic, 2 carrots, 1 bell pepper, 2 cups of water, 1 tbsp. salt, 1/2 cup sugar, 1 tbsp. vinegar, 0.5 tsp each ground coriander, black and red pepper.
Cooking: Chop and mix all vegetables together. Boil water with remaining ingredients. Pour the cabbage with marinade and leave for 12 hours, and then put it in jars and put it in a cold place for storage.
6. Pickled cabbage with cucumbers for the winter
Bright and colorful salad of simple garden vegetables.
You will need: 1 kg of cabbage, 1 kg of cucumbers, 1 bell pepper, 1 dill umbrella, 3 cloves of garlic, 1 tsp. ground black pepper, 1 tbsp. salt, 1 tbsp. vinegar.
Cooking: Randomly chop all the vegetables and pack them tightly in sterilized jars with spices, garlic and dill. Pour boiling water over and leave covered for 10 minutes. Boil this water, add vinegar and salt to it, pour it back in and roll up the cabbage for the winter.
7. Pickled cabbage with beets for the winter
Not only tasty, but also very bright preparation!
You will need: 2 cabbages, 2 carrots, 2 beets, 5 glasses of water, 4 tbsp. vinegar, 1/2 cup vegetable oil, 1 head of garlic, 1/2 cup sugar, 1 tbsp. salt, spices.
Cooking: Randomly chop the cabbage, cut the carrots and beets into strips, and the garlic into slices. Lay the vegetables in layers in sterilized jars. Boil water with all the remaining ingredients, boil the marinade for 2 minutes, pour cabbage over it and roll it up for the winter.
8. Pickled cabbage with cranberries for the winter
Cranberries are suitable fresh, frozen or even dry.
You will need: 2 heads of cabbage, 2 carrots, 2 apples, 2 handfuls of cranberries, 1 liter of water, 3 tbsp. sugar, 2 tbsp. vinegar, 1 tbsp. mixture of peppercorns, 1 tsp dill seeds.
Cooking: Chop cabbage, cut carrots and apples into strips, mix everything with spices and add cranberries. Boil water with sugar and salt, boil for 2 minutes and pour in vinegar. Put the cabbage in clean jars, fill it with marinade, sterilize for another half an hour and roll it up for the winter.
9. Pickled cabbage in Korean for the winter
An original savory snack for lovers of Korean vegetables.
You will need: 300 g cabbage, 300 g carrots, 1 bell pepper, 400 ml water, 1 tbsp. vegetable oil, 1 tsp salt, 2 tsp sugar, 2 tbsp. vinegar, spices.
Cooking: Cut all the vegetables into strips and mix them with butter, salt, sugar and spices. Leave for a couple of hours, tightly spread in sterilized jars and pour boiling water over it. Pour in the vinegar and roll up the blanks.
10. Pickled cabbage with tomatoes and aspirin
Perfectly stored in a dark cool place throughout the season.
You will need: 1 kg of small tomatoes, 1 kg of cabbage, 2 bell peppers, 1 head of garlic, 1 dill umbrella, 1 tbsp. salt, 2 bay leaves, 5 allspice peas, 2 aspirin tablets.
Cooking: Put the garlic, dill and spices in the bottom of a sterilized jar. Chop the cabbage, randomly chop the pepper, rinse the tomatoes and lay everything in layers. Pour boiling water over and leave covered for 10 minutes. Drain this water, add salt, sugar and aspirin to it, boil until dissolved and pour cabbage again. Roll up the workpiece.
11. Pickled cabbage with eggplant for the winter
Even the usual pickled cabbage can still surprise you!
You will need: 1 kg of cabbage, 1 kg of eggplant, 1 head of garlic, 300 g of carrots, 1 hot pepper, 1 tsp. a mixture of peppercorns, 1.5 tbsp. salt, 125 ml of vinegar.
Cooking: Chop cabbage, grate carrots, chop hot peppers and garlic. Boil the eggplants for 3-5 minutes in boiling water, cut them into cubes and send them to the vegetables. Add spices and vinegar, mix the workpiece and pack tightly into jars. Sterilize them for 20-30 minutes in boiling water and roll them up for the winter.
12. Pickled cabbage chunks with ginger
Another original recipe with notes of Korean cuisine.
You will need: 1.5 kg cabbage, 1 onion, 1 carrot, 2 tsp. grated ginger, 5 garlic cloves, 2 tsp. salt, 4 tsp sugar, 1 tsp paprika, 30 ml of vinegar.
Cooking: Cut the cabbage into large pieces, onions into feathers, and carrots into strips. Grind the ginger and garlic, and mix everything with spices, sugar and salt. Arrange the workpiece in sterilized jars, pour boiling water, pour in vinegar and roll up for the winter.
