
The list of the most tender and dietary meat will rightly be headed by a rabbit. Cooking it is not so easy – it has its own characteristics, but it is more than realistic if you pay a little more attention to the process. We have collected 12 great recipes for baked rabbit in the oven for you!
1. Whole rabbit in the oven

Most often, the rabbit is cut into portioned pieces, but you can bake it whole.
You will need: 1 rabbit, 0.5 lemons, 4 tbsp. mayonnaise, 1 tbsp. granular mustard, 4 cloves of garlic, spices.
Cooking: Soak the rabbit for 2-3 hours in water with 3-4 tablespoons of vinegar, rinse and dry. Mix mayonnaise, mustard, spices, crushed garlic and lemon juice, and rub the rabbit with this marinade. Leave it for 1 hour, and then put it on foil, cover with foil on top and bake in the oven for 1.5 hours at 190 degrees.
2. Baked rabbit in beer

Normal light beer without additives is better suited here.
You will need: 1.5 kg of rabbit, 1 onion, 500 ml of beer, 150 ml of vegetable oil, spices and herbs.
Cooking: Divide the rabbit into pieces, chop the onion coarsely and marinate everything for a couple of hours in beer and oil with spices. Fry the rabbit pieces until golden brown and place in a baking dish. Put the onion from the marinade on top and pour in half of the marinade itself. Send everything to the oven under foil for 1 hour at 190 degrees. For a golden crust, remove the foil for 15 minutes before the end.
3. Rabbit with tomatoes in pots

A portioned dish can be served immediately in pots.
You will need: 600 g rabbit, 4 tbsp. sour cream, 2 onions, 4 tomatoes, 2 carrots, 2 bay leaves, 4 garlic cloves, spices.
Cooking: Cut the rabbit into pieces, mix with spices and leave for half an hour. Chop onions and carrots and put half of the vegetables in pots. Then – a rabbit and on top the rest of the vegetables. Spread tomato slices and garlic on top, add bay leaf, pour in sour cream and put the pots in the oven for 50 minutes at 180 degrees.
4. Rabbit baked in sour cream and soy sauce

Another versatile marinade for cooking rabbit in the oven.
You will need: 1 kg of rabbit, 1 onion, 2 cloves of garlic, 200 g of sour cream, 100 ml of soy sauce, 1 tbsp. balsamic, 2 tbsp. olive oil, 6 sprigs of herbs, spices.
Cooking: Cut the rabbit into pieces, and beat all the other ingredients in a blender. Coat the meat with this marinade and leave for a couple of hours in the refrigerator. Put the rabbit with the marinade in the sleeve and send it to the oven for 50-60 minutes at 180 degrees.
5. Rabbit with potatoes in the oven

So the potato is saturated with juices and also turns out to be very soft.
You will need: 1 rabbit, 1 onion, 1 kg potatoes, 2 carrots, 2 tbsp. water, 4 tbsp. olive oil, 2 tbsp. lemon juice, spices.
Cooking: Cut the rabbit into pieces. Grind the onion in a blender with oil, lemon juice, water and spices. Mix it all with the rabbit and leave for a couple of hours. Coarsely chop the potatoes and carrots, mix everything together and put in a baking dish. Cook the rabbit for 1.5 hours in the oven under foil at 200 degrees.
6. Rabbit with vegetables in the oven

This recipe will especially appeal to everyone who follows proper nutrition.
You will need: 2 kg of rabbit, 2 carrots, 2 bell peppers, 2 zucchini, 2 stalks of celery, spices, 1.5 cups of sour cream.
Cooking: Cut the rabbit into large pieces, rub with spices and put in a mold. Coarsely chop all the vegetables, mix with sour cream and spices, and put on top. Send the dish to the oven under foil for 1.5 hours at 180 degrees.
7. Rabbit with honey in the oven

The light sweetness of honey is incredibly appropriate here!
You will need: 600 g rabbit, 2 purple onions, 4 tbsp. soy sauce, 1 tbsp. mustard, 1 tbsp. honey, 2 cloves of garlic, spices.
Cooking: Mix honey, mustard, soy sauce, crushed garlic and spices to taste, add a couple of tablespoons of oil for consistency and marinate the rabbit pieces for 2-3 hours. Grease the form with oil, put the onion cut into rings, and the rabbit on top. Send everything under the foil in the oven for 1 hour at 180 degrees.
8. Rabbit with onions in the oven

A very simple recipe for a rabbit in a mayonnaise-mustard marinade.
You will need: 1 kg rabbit, 100 g mayonnaise, 2 tbsp. mustard, 4 garlic cloves, 2 onions, spices to taste.
Cooking: Cut the rabbit into slices, the onion into rings, and chop the garlic. Add mayonnaise, mustard and spices, mix everything and leave for a couple of hours in the refrigerator. Put the meat in a mold, cover with foil and send for 2 hours in the oven at 200 degrees. Remove the foil half an hour before the end.
9. Rabbit with apples in the oven

We recommend using shallots whenever possible.
You will need: 500 g rabbit, 150 g onion, 2 apples, 50 ml broth, spices, 2 tbsp. vegetable oil.
Cooking: Cut the rabbit into pieces and lightly fry until golden brown on all sides. Add coarsely chopped onions and apples, and fry for another 3 minutes. Put in a baking dish, pour in the broth and sprinkle with spices. Cover the form with foil and send for 1 hour in the oven at 180 degrees.
10. Rabbit with fruit and wine in the sleeve

A very delicious rabbit recipe for the holiday table.
You will need: 1.5 kg of rabbit, 1 glass of semi-dry white wine, 5 cloves of garlic, 3 tbsp. sour cream, 1 apple, 1 tangerine, 4 bay leaves, ground red pepper, cinnamon and other spices to taste.
Cooking: Cut the rabbit into pieces and marinate in wine, a few tablespoons of oil, minced garlic, spices and chopped bay leaf. Send in the refrigerator for a couple of hours, and then transfer to the sleeve.
Send a diced apple and a tangerine there. Mix sour cream and half of the marinade, and pour in the same. Bake the rabbit in the sleeve for about 80 minutes at 180 degrees. Cut the sleeve and bake it for another 15 minutes.
11. Baked rabbit in kefir

Sour-milk marinade makes the already soft rabbit meat even more tender.
You will need: 1 rabbit, 4 cloves of garlic, 3 onions, 0.5 cups of granular mustard, 1 cup of kefir, spices and herbs.
Cooking: Butcher the rabbit, coarsely chop the onion and chop the garlic. Mix everything with spices, pour kefir and leave overnight in the refrigerator. Add mustard, stir and leave for another half hour.
Put the rabbit in a baking dish and send it to the oven at 200 degrees. After 15 minutes, turn the pieces over, and after another 15 fill everything with marinade. Lower the temperature to 160 and cook the rabbit for another 40 minutes.
12. Rabbit with white wine and herbs in the oven

You can take other herbs to your taste, but preferably fresh.
You will need: 1 rabbit, 3 sprigs of rosemary, 4 sprigs of thyme, 2 tbsp. olive oil, 150 ml dry white wine, spices.
Cooking: Slice the rabbit and marinate it in spices, herbs, oil and wine for 2 hours. Put it in a mold, pour in a couple of tablespoons of marinade and bake under foil for about 1 hour at 200 degrees. Add more marinade as needed.
