
To cook a truly delicious fried lagman, you need a cauldron or a good deep frying pan with a thick bottom. And the noodles themselves no longer need to be pulled out by hand – they are sold ready-made. Here are 12 great recipes!
1. Fried lamb lagman with potatoes

Let’s start with the classic and most satisfying recipe for fried lagman.
Cooking time: 1 hour 20 minutes.
Quantity: 6 servings.
- 500 g lamb
- 400 g noodles for lagman
- 4 potatoes
- 2 onions
- 2 tomatoes
- 1 carrot
- 1 glass of water
- 1 tbsp spices
- 1 tsp hops-suneli
1. Cut the lamb into small pieces and fry it in a pan for 10 minutes.

2. Finely chop the onion and carrots, and fry separately until soft. Add to lamb.

3. Pour boiling water over the tomatoes, peel and cut into cubes as well. Send them to the rest of the ingredients.

4. Put the potatoes cut into cubes there, add spices and mix everything again. Fry 10-15 minutes.

5. Pour in a glass of water and simmer under the lid until the vegetables are ready.

6. Boil the noodles according to the instructions, add them to the meat with vegetables and cook the fried lagman for another 7-10 minutes.

2. Fried lagman with homemade noodles

If there was no suitable noodle at hand, then it is done in a matter of minutes.
Cooking time: 1 hour 30 minutes.
Quantity: 4 portions.
- 500 g lamb or beef
- 450 g flour
- 1 egg
- 185 ml milk
- 1 tbsp. vegetable oil
- 4 potatoes
- 1 carrot
- 3 tomatoes
- 2 onions
- 1 tbsp spices
- 1 tsp hops-suneli
- Cut meat and all vegetables into approximately the same cube.
- Fry the meat for 10 minutes until golden brown, and add the carrots and onions.
- After 5 minutes, add potatoes, tomatoes and spices, and fry everything over medium heat, stirring regularly.
- Pour in some water if necessary. At the end, season the meat with vegetables.
- Knead elastic dough from vegetable oil, flour, milk and eggs. Roll it very thinly, cut into strips and let them dry slightly. Boil the noodles in salted water for 3 minutes after boiling.
- Divide the noodles on plates and add the meat and vegetables.
3. Fried beef lagman

Beef is also quite a classic option and is a good choice for anyone who doesn’t like lamb.
Cooking time: 1 hour 20 minutes.
Quantity: 4 portions.
- 400 g beef
- 0.5 bunch cilantro
- 1 bulb
- 1 carrot
- 1 bell pepper
- 3 tomatoes
- 300 g noodles for lagman
- 0.5 tsp zira
- 1 tbsp spices
- Cut the beef into cubes and fry for 15 minutes until golden brown over medium heat.
- Cut into strips all the vegetables. Add onions to the beef, and after another 10-15 minutes – sweet peppers and carrots.
- Fry everything together until the vegetables are soft, add the tomatoes and spices, and cook the meat until the liquid boils away.
- Separately, boil the noodles for the lagman according to the instructions, mix with meat and vegetables, add chopped cilantro and fry everything together for another 10 minutes.
4. Fried lagman with chicken

This recipe for fried lagman will especially appeal to those who do not eat red meat.
Cooking time: 1 hour.
Quantity: 4 portions.
- 500 g chicken fillet
- 400 g noodles for lagman
- 1 bulb
- 2 garlic cloves
- 1 carrot
- 1 bell pepper
- 2 tomatoes
- 1 tbsp tomato paste
- 0.5 tsp zira
- 0.5 tsp coriander
- 1 tsp paprika
- 1 tsp spices to taste
- Cut the chicken into pieces, season with spices and fry until golden brown for about 7 minutes.
- Add chopped onion with garlic and grated carrots. Fry for another 10 minutes, stirring. Add a couple of tablespoons of soy sauce if desired.
- Separately, fry chopped peppers with tomatoes, pour in tomato paste and a little water, add all the spices, and simmer the sauce for 5-7 minutes.
- Boil the noodles according to the instructions.
- Mix all the parts of the fried lagman and warm it up on thevegetable garden for another 10 minutes.
5. Fried lagman with eggplant

Before serving, you can sprinkle the lagman with chopped herbs or walnuts.
Cooking time: 1 hour 20 minutes.
Quantity: 6 portions.
- 600 g meat
- 2 bell peppers
- 300 g noodles for lagman
- 300 g eggplant
- 2 onions
- 3 tomatoes
- 200 g potatoes
- 2 tbsp tomato paste
- 1 tbsp hops-suneli
- 1 tbsp paprika
- 1 tbsp spices to taste
- Cut the meat into medium pieces, onions and peppers into half rings, potatoes and peeled eggplants into a small cube, and pour over the tomatoes with boiling water, peel and finely chop.
- Fry the meat until golden brown for 10 minutes over medium heat.
- Separately, fry the onion until translucent, add the eggplant, bell peppers and potatoes, and fry for another 15 minutes.
- Mix vegetables and meat. Add tomatoes, tomato paste and spices, mix everything and simmer for another 15 minutes.
- Boil the noodles for a couple of minutes in boiling water, send to the meat and fry the lagman for the last 10 minutes.
6. Fried lagman with egg

An interesting way to diversify a traditional combination of ingredients!
Cooking time: 1 hour 20 minutes.
Quantity: 4 portions.
- 400 g lamb or beef
- 300 g noodles for lagman
- 2 eggs
- 1 bulb
- 1 carrot
- 1 bell pepper
- 3 tomatoes
- 0.5 tsp zira
- 1 tsp hops-suneli
- 1 tbsp spices
- Cut the meat into small pieces, and all the vegetables into small cubes. First, peel the tomatoes by pouring boiling water over them.
- Fry the meat over medium heat for 10-15 minutes and add the onion.
- After 5 minutes, add carrots, and after another 5 – sweet peppers and tomatoes. Continue to fry everything until the meat and vegetables are soft, stirring.
- Boil the noodles until done according to the instructions.
- Separately, beat and fry the eggs, and cut the omelet into strips.
- Send noodles, scrambled eggs and all spices to the meat, mix the lagman and fry for another 10 minutes.
7. Fried lagman with pork

And instead of butter, you can fry everything in a small amount of animal fat.
Cooking time: 1 hour.
Quantity: 4 portions.
- 500 g pork
- 400 g noodles for lagman
- 2 onions
- 2 garlic cloves
- 1 carrot
- 1 bell pepper
- 3 tomatoes
- 1 tbsp tomato paste
- 0.5 tsp zira
- 0.5 tsphops-suneli
- 1 tsp paprika
- 1 tsp spices to taste
- Cut the pork into pieces and fry it for 10-15 minutes until soft.
- Finely chop the onion and garlic, grate the carrots and fry them separately for 5-7 minutes. Add pepper and tomato paste, and simmer for another 5 minutes.
- Pour boiling water over the tomatoes, peel and chop in a blender. Pour the tomato to the vegetables, season the workpiece and simmer again for another 10 minutes.
- Separately, boil the noodles for the lagman, send them to the meat, mix and fry the dish for the last 10 minutes.
8. Fried lagman with mushrooms

Both champignons and wild mushrooms are equally well suited here. It does not affect the cooking process!
Cooking time: 1 hour 20 minutes.
Quantity: 4 portions.
- 500 g meat
- 2 carrots
- 300 g noodles for lagman
- 300 g mushrooms
- 3 onions
- 3 tomatoes
- 1 bell pepper
- 1 tbsp hops-suneli
- 1 tsp zira
- 1 tbsp spices to taste
- Cut the meat into medium pieces and fry it until golden brown over medium heat.
- Randomly chop the onion with mushrooms, grate the carrots, and separately fry them together until tender.
- Add diced peppers and tomatoes to the mushrooms. Season and simmer for another 7-10 minutes.
- Mix vegetables with meat and continue to fry for 15-20 minutes over low heat.
- Boil the noodles for the lagman according to the instructions, arrange on plates, and spread the meat with mushrooms on top.
9. Fried lagman with beans

You can take canned beans in tomato sauce – it will be even tastier.
Cooking time: 1 hour.
Quantity: 4 portions.
- 500 g beef
- 1 purple onion
- 1 carrot
- 1 bell pepper
- 1 can canned red beans
- 3 tomatoes
- 300 g noodles for lagman
- 0.5 tsp zira
- 0.5 bunch cilantro
- 2 garlic cloves
- 1 pinch chili flakes
- 1 tbsp spices
- Cut the beef into medium pieces. Cut the onion and sweet pepper into strips, grate the carrots, chop the tomatoes in a blender, and finely chop the garlic and cilantro.
- Fry the beef over medium heat until golden brown. Add onions and carrots.
- After another 10 minutes, add the peppers and tomatoes. Continue frying, stirring, until the vegetables are cooked.
- Boil the noodles according to the instructions.
- Send noodles, beans, garlic, herbs and all spices to the meat. Fry the lagman for 10-15 minutes, stirring.
10. Fried lagman with Chinese cabbage and soy sauce

A little Asian touch will never interfere with a dish like lagman.
Cooking time: 1 hour 30 minutes.
Quantity: 6 portions.
- 500 g beef
- 200 g Chinese cabbage
- 100 g celery stalks
- 3 bell peppers
- 200 g green beans
- 3 tomatoes
- 400 g noodles for lagman
- 2 onions
- 0.5 bunch green onions
- 3 tbsp soy sauce
- 2 tbsp tomato paste
- 1 tbsp spices to taste
- Cut the beef into medium pieces. Randomly chop all the vegetables, and chop the green onions. Boil the noodles according to the instructions.
- Fry the meat until golden brown over medium heat. Add the onion, celery and bell pepper and sauté for 10 more minutes.
- Add Chinese cabbage and green beans, and cook again for 10-15 minutes.
- Add tomatoes, tomato paste and soy sauce. Season everything, and add a little water if necessary.
- Stew the dish for another 10 minutes, add the noodles, and cook again for 10 minutes.
- Add green onions, stir lagman and remove from heat.
11. Fried lagman with green beans

If you have fresh beans, boil them for a couple of minutes. But frozen – not necessarily.
Cooking time: 1 hour.
Quantity: 6 portions.
- 500 g meat
- 400 g noodles for lagman
- 200 g green beans
- 1 bulb
- 2 garlic cloves
- 1 bell pepper
- 3 tomatoes
- 0.5 tsp zira
- 1 tsp paprika
- 1 tsp spices to taste
- Roughly chop the onion, garlic and pepper. Cut the meat into medium pieces. Peel the skin off the tomatoes and chop finely.
- Fry the pieces of meat until golden brown and add the onion and garlic. After 10 minutes, add pepper and green beans, and after another 5 – tomatoes with spices.
- Fry everything together for a couple of minutes, and during this time boil the noodles according to the instructions.
- Send the noodles to the meat with vegetables, and fry the lagman for another 10-15 minutes, stirring occasionally.
12. Fried lagman with tomatoes in own juice

Tomatoes in their own juice are a great alternative to fresh tomatoes, tomato paste and ready-made sauces.
Cooking time: 1 hour.
Quantity: 6 portions.
- 400 g lamb
- 300 g noodles for lagman
- 1 can of tomatoes in their own juice
- 3 potatoes
- 2 onions
- 1 carrot
- 1 bell pepper
- 1 tsp zira
- 1 tbsp spices
- Cut the lamb into medium pieces and fry it until golden brown.
- Cut all vegetables into roughly equal cubes. And only potatoes – larger cubes.
- Add onions, sweet peppers and carrots to the lamb, and fry for another 15 minutes, stirring occasionally.
- Boil potatoes until half cooked. Boil the noodles separately.
- Pour the tomatoes with tomato juice into the meat, and bring to a boil.
- Add potatoes, noodles and all the spices, and cook the fried lagman, covered, for another 15 minutes.
