1. Pork lula kebab with paprika
It always turns out juicy and soaked in smoke.
You will need: 1 kg pork, 300 g tail fat, 300 g onion, 2 tbsp. lemon juice, 1 tbsp. paprika, spices and herbs.
Cooking: Grind pork, lard, onions and herbs in a blender or meat grinder, add spices and lemon juice, and knead the minced meat until smooth. Form a lule around the skewers from the chilled minced meat, and lay it over the coals.
Ideally, the coals should already be covered with a thin layer of ash. Fry on the grill for about 8-10 minutes on all sides until a beautiful golden color.
2. Beef kebab with herbs
Serve with pickled onions or fresh vegetables.
You will need: 1 kg of beef, 150 g of tail fat, 500 g of onion, 5 cloves of garlic, 1 bunch of parsley, 1 tsp. zira, 1 tsp coriander, spices.
Cooking: Grind greens, garlic, onion and spices in a blender until smooth. Pass the beef and fat through a meat grinder, and mix the minced meat with the green mass. Beat the minced meat well, let it cool and form a lule around the skewers. Grill on the grill for about 10 minutes on all sides.
3. Lyulya-kebab from chicken with adjika
You can add any tomato sauce or ketchup you like.
You will need: 800 g chicken fillet, 2 onions, 1 bunch of herbs, 4 cloves of garlic, 1 tbsp. adjika, spices.
Cooking: Grind the fillet, onion, herbs and garlic in a blender, add adjika and spices, and mix the minced meat. If you want the grilled lula to be juicier, use thigh or drumstick fillets. Form them around the skewers and fry.
4. Lamb kebab on the grill
Lamb goes great with pomegranate sauce.
You will need: 1 kg lamb, 500 g tail fat, 400 g red onion, 1 tsp. smoked paprika, coriander, suneli hops and pepper, 1 bunch of cilantro.
Cooking: Coarsely chop the meat, fat and onion, roll in spices, mix with chopped herbs and pass through a meat grinder twice. Knead the minced meat like dough, beat it hard, form a lule weighing about 200 g and fry on a pre-heated grill for 2 minutes on each side for 10 minutes.
5. Lyulya-kebab with cheese on the grill
We recommend using a very hard cheese that does not melt as quickly.
You will need: 900 g of any minced meat to taste, 300 g of onion, 75 g of herbs, 200 g of cheese, spices.
Cooking: Finely chop the onion, chop the herbs and grate the cheese. Add everything to the minced meat, season to taste and mix thoroughly until smooth for 5-10 minutes.
Let the minced meat cool in the refrigerator and form elongated patties on flat skewers. Preheat the grill in advance, make sure that the coals are moist enough, and fry the lyulya for 10 minutes, constantly turning over.
6. Lyulya-kebab with greens on the grill
You can add any greens – from spinach to chopped lettuce.
You will need: 800 g minced meat, 0.5 bunches of cilantro, parsley, basil and green onions, spices, 0.5 onions.
Cooking: Pass the minced meat twice through a meat grinder, and chop the onion and herbs in a blender. Mix both masses, add spices and beat well. Form a lule around the skewers and grill over hot coals for 10 minutes, turning often.
7. Lyulya-kebab with semolina
Semolina retains juiciness even better, because it absorbs all the juices.
You will need: 1 kg of meat, 100 g of fat, 2 onions, 1 bunch of dill, 2 tbsp. semolina, spices.
Cooking: Pass meat, salok and onion through a meat grinder, add chopped herbs and spices, and mix. At the end, add semolina, mix again and carefully beat the minced meat to a viscosity. Form a lula and fry on the grill for 8-10 minutes.
8. Potato kebab
A very unexpected and original recipe that will suit even strict vegetarians!
You will need: 1 kg potatoes, 3 tbsp. olive oil, 4 cloves of garlic, 1 bunch of herbs, 1 tsp. turmeric, spices.
Cooking: Boil potatoes until cooked, let cool and pass through a meat grinder. Add spices, chopped herbs, crushed garlic and oil to it, and mix well. Form oblong cutlets around the skewer.
Potato lula, unlike meat, can be fried at a higher temperature. Otherwise, it may crack, fall apart and fall into the brazier. And so that it does not burn out, quickly enoughturn it over as soon as one side seizes.
9. Lyulya kebab from homemade minced meat on the grill
Mixed homemade minced meat is always richer in taste.
You will need: 300 g pork, 300 g beef, 200 g chicken, 100 g bacon, 2 onions, 4 garlic cloves, spices.
Cooking: Pass pork, chicken, beef and bacon through a meat grinder twice, add finely chopped onion and garlic, season and beat the minced meat. Leave it in the refrigerator to cool, and then immediately form a cradle around the skewers. Cook on the grill for about 10 minutes.
10. Lula kebab with mushrooms and rice
If you see that the stuffing is completely falling apart, add an egg.
You will need: 750 g of meat, 20 g of lard, 200 g of onion, 5 cloves of garlic, 300 g of mushrooms, 150 g of tomatoes, 10 g of flour, 100 ml of white wine, 1 lemon, 100 g of boiled rice, spices.
Cooking: Finely chop the meat or pass through a meat grinder, and stew on lard with wine and onions. Add boiled rice, spices, garlic, chopped mushrooms, grated tomatoes and drizzle with lemon juice. Form a lule around the skewer and fry on the grill until cooked.
