1. Cold borscht with chicken

Lets start with a universal classic recipe!
You will need: 500 g chicken, 3 beets, 5 potatoes, 2 radishes, 3 eggs, 2 cucumbers, spices.
Cooking: Boil the chicken until cooked, remove from the broth and cool both. Finely chop the boiled eggs, cucumbers and radishes into cubes. Separately, boil potatoes and beets, and grate them on a coarse grater.
Disassemble the chicken into fibers and mix all the ingredients well together. Season to taste and pour the cooled broth, and then decorate with an egg, herbs or sour cream.
2. Cold borsch on kefir

A very popular first course in Lithuanian cuisine.
You will need: 2 beets, 2 eggs, 2 cucumbers, 500 ml of kefir, 150 g of sour cream, 1 bunch of dill, 1 tsp. lemon juice, 1 bunch of green onions, spices.
Cooking: Boil the beets until cooked under the lid for about 50 minutes, cool and grate on a coarse grater. Separately, boil the eggs, grate the whites, and rub the yolks with a fork with sour cream.
Grate the cucumbers in the same way, and chop the green onions and herbs and rub them lightly so that they release the juice. Mix all the ingredients with sour cream, add spices, pour kefir and send for half an hour in the refrigerator.
3. Cold borscht with meat

It is better to boil the meat in advance so that it definitely has time to cook and cool.
You will need: 400 g beef, 500 g beets, 2 carrots, 1 bunch of green onions, 3 cucumbers, 2 eggs, a pinch of sugar, 1 tbsp. vinegar, spices.
Cooking: Boil the beef and beets in different pots until tender, and strain the broth with the broth. Cut cucumbers, boiled beets and carrots into strips, finely chop onions and chop boiled eggs.
Grind the meat separately, mix all the ingredients and add sugar with spices to taste. Pour the resulting mixture with broth and beetroot broth with vinegar in arbitrary proportions.
4. Ukrainian cold borscht

Probably the most satisfying cold borscht recipe in this collection!
You will need: 400 g pork, 3 potatoes, 2 eggs, 2 cucumbers, 2 beets, 0.5 lemons, 0.5 bunches of dill, parsley and green onions, 1 tsp. sugar, spices.
Cooking: Boil the meat until soft for about 1.5-2 hours, remove and divide into fibers, and strain the broth. Separately, boil potatoes with eggs. And grate the beets on a coarse grater and simmer for 30 minutes with a glass of water and a spoonful of sugar.
Finely chop the eggs, potatoes and cucumbers, add the cooled beets with the remaining liquid to them, and season. Add the meat there, mix everything together, sprinkle with lemon juice and fill with broth. At the end, add chopped greens.
5. Cold borscht with fish

Another find of Baltic cuisine.
You will need: 2 beets, 2 potatoes, 1 tomato, 400 g of fish, 3 pickles, 1 bunch of dill, 1 bunch of green onions, spices.
Cooking: Boil the fish in salted water for about 15 minutes. Peel the beetroot and tomato, cut the tomato into slices, and boil them separately for about an hour. And then strain the broth, mash the tomato and grate the beets.
Send the chopped vegetables back to the broth, and there - raw potatoes, chopped herbs and pickles. Boil everything together until the potatoes are ready, cool and send the pieces of fish to the pan.
6. Cold borscht with cucumbers

It turns out no worse than the classic okroshka!
You will need: 4 beets, 350 g cucumbers, 3 eggs, 4 tbsp. mayonnaise, 1.2 liters of water, 1.5 tbsp. vinegar, 2 bunches of greens.
Cooking: Grate cucumbers for Korean carrots, and also grate boiled eggs and boiled beets. Add mayonnaise and mix all ingredients together. Add chopped greens, pour in water, pour in a spoonful of vinegar and let the cold borscht brew in the refrigerator.
7. Cold borscht with sausage

A quick express option when there is absolutely no time to cook.
You will need: 2 beets, 5 potatoes, 350 g boiled sausage, 5 cucumbers, 6 eggs, 1.5 tsp. vinegar, herbs.
Cooking: Boil eggs and potatoes until tender, then cut into cubes. Grate beets on a coarse grater, cover with water, add vinegar and boil too. Cut the cucumbers and sausage, mix all the ingredients and pour over the cooled beetroot broth. Add greens before serving.
8. Cold borscht with sorrel

Yes, green borscht can be cold too!
You will need: 5 potatoes, 400 g sorrel, 4 eggs, 4 tbsp. sour cream, 4 tbsp. milk, 2 cucumbers, 50 g green onions, spices.
Cookinge: Cut the potatoes into cubes and boil until tender in boiling water. Then add the sorrel cut into strips there and boil together for 5 minutes.
Rub a raw egg with spices, milk and a spoonful of this broth, and pour into the borscht in a thin stream. Boil the remaining eggs and finely chop along with cucumbers and herbs. Mix everything together, add sour cream and pour over the potato-sorrel base.
9. Cold borscht with mushrooms and apple

One of the most original recipes weve ever seen!
You will need: 2 potatoes, 50 g dried mushrooms, 1 onion, 2 beets, 1 carrot, 350 g cabbage, 1 apple, 2 cloves of garlic, spices, herbs.
Cooking: Rinse dry mushrooms, fill with water and boil the mushroom broth. Chop the potatoes and the apple, chop the cabbage and finely chop the onions, carrots and beets. Add all the chopped ingredients to the mushroom broth and boil for 5 minutes.
After 5 minutes, add greens, crushed garlic and spices, and boil for another 7 minutes. Remove the borscht from the heat, let it brew and chill in the refrigerator before serving.
10. Cold borscht with pickled beets

You will need: 3 beets, 0.5 cups of sugar, 0.5 cups of vinegar, 2 cloves of garlic, 500 ml of water, 100 ml of vegetable oil, a pinch of salt, 5 potatoes, 5 eggs, 2 cucumbers, 400 g of ham, spices, herbs.
Cooking: Boil water and add sugar, salt, vinegar and oil to it, and boil for a couple of minutes. Boil the beets, chop them randomly, add crushed garlic and pour over the marinade. Leave overnight in the refrigerator.
Boil potatoes and eggs, and finely chop all other ingredients. Mix them with beets, season and add chopped greens. Pour cold borscht with boiled water and let it brew.
