Mexican tortilla with aromatic filling is a quick snack that does not bother you day after day. And all because you can experiment with content ad infinitum. For example, today we have prepared a large selection of chicken quesadilla recipes!
1. Quesadilla with chicken and cheese
Cheddar is ideal, but you can use any cheese you like.
You will need: 2 tortillas, 1 onion, 1 chicken fillet, 100 g tomato paste, 50 g cheese, spices.
Cooking: Finely chop the onion and fry until golden, then set aside to cool. Thinly cut the chicken fillet into strips and fry in the same way over high heat.
Add spices and tomato paste to the chicken, mix well, warm everything together for just a minute and also transfer to the onion. Put one tortilla in the pan, sprinkle with grated cheese, then – a layer of filling and more cheese. Cover with the second tortilla and fry for 2-3 minutes on both sides.
2. Quesadilla with chicken and pineapple
You can also add some canned corn to this.
You will need: 4 tortillas, 50 g butter, 200 g pineapple, 1 cup grated cheese, cilantro, 2 tbsp. barbecue sauce, spices.
Cooking: Lightly fry the pineapple slices on a grill or non-stick skillet. Cut the chicken into strips, mix with spices and fry too. Remove from heat and stir in barbecue sauce.
Melt the butter and lightly fry the tortillas. Put all the stuffing on two of them, sprinkle with cheese and cover with the remaining tortillas. Heat them for a couple of minutes to melt the cheese.
3. Quesadilla with chicken and eggplant
We recommend supplementing the recipe with fragrant herbs, such as cilantro, dill or mint.
You will need: 2 tortillas, 2 chicken fillets, 2 tomatoes, 1 onion, 1 eggplant, 150 g cheese, olive oil, spices.
Cooking: Peel the eggplant from the skin and cut all the ingredients into a very small cube. Fry everything together and season. Arrange thin slices of cheese on the tortilla, then the filling, cheese again and the second tortilla. Heat the quesadilla in a skillet or oven until the cheese is melted.
4. Quesadilla with chicken and apple
A very original culinary experience!
You will need: 4 tortillas, 500 g chicken, 2 apples, 50 g cheese, 125 ml yogurt, 1 tbsp. Dijon mustard, 1 tsp zest, 1 tsp curry, a pinch of rosemary, spices.
Cooking: Mix yogurt with Dijon mustard, grated cheese, zest and spices, and let it steep for a bit. During this time, cut the chicken into thin slices and fry evenly on both sides.
Peel the apples and cut into thin slices. Brush 2 tortillas generously with sauce, top with chicken and apples, and top with remaining tortillas. Send the quesadilla to the oven for 5 minutes at 200 degrees.
5. Quesadilla with chicken, herbs and olives
An interesting combination of Mexican cuisine and Italian motives.
You will need: 4 tortillas, 50 g spinach, 1 chicken fillet, 1 red onion, 200 g olives, 300 g mozzarella, 190 g feta, 16 cherry tomatoes, 2 peppers, chili flakes, oregano, spices.
Cooking: Chop the onion, spinach, peppers and olives, roughly break the cheese, and cut the cherry tomatoes in half. Lightly fry the pepper to soften it. Finely chop the chicken and also separately fry in spices.
Put half in the pan, sprinkle with spinach, onions, chicken, peppers, tomatoes, olives, feta, mozzarella and spices, and cover with the second half. Fry the quesadilla on both sides, and repeat with the rest of the tortillas.
6. Quesadilla with chicken, avocado and beans
If you like, add feta or other soft salted cheese.
You will need: 4 tortillas, 150 g chicken, 4 tbsp. canned beans, 1 avocado, 1 bunch of arugula, 1 tomato.
Cooking: Finely chop and fry the chicken, and at the end add spices and chopped tomato to it. Divide the beans, avocado slices, chicken and a handful of arugula over 2 tortillas and cover with the rest. Fry the quesadilla until crispy.
7. Quesadilla with chicken and mushrooms
If using wild mushrooms, boil them a little first.
You will need: 4 tortillas, 150 g mushrooms, 200 g chicken, 1 tomato, 100 g cheese, half a bunch of cilantro, 1 tbsp. tomato paste, 1 chili pepper, half sweet pepper, spices.
Cooking: Very finely chop the peeled tomatoes and chili peppers. Add spices, chopped cilantro there, and mix well. Finely chop the mushrooms and peppers and lightly fry until soft.
Cut the chicken into thin strips and also fry separately. Add tomato paste, spices, and simmer for 2 minutes, and then add chopped tomatoes. Put chicken, mushrooms with pepper, grated cheese on the tortilla and fold in half. Fry in a pan or put in the oven for 5-7 minutes at 180 degrees.
8. Quesadilla with chicken and corn
Ready minced chicken is also suitable.
You will need: 4 tortillas, 220 g chicken, half an onion, half a can of canned beans and corn, 1 chili, spices, 100 g cheese, 1 tbsp. tomato paste.
Cooking: Finely chop the chicken or pass it through a meat grinder. Finely chop the onion in the same way and fry them together with spices.
Add tomato paste, beans, corn, thin chili rings to the pan, and mix well. Stew everything together for a couple of minutes and spread the filling on 2 tortillas. Sprinkle with grated cheese on top, cover with the remaining cakes and lightly fry on both sides.
9. Quesadilla with chicken and ham
A delicious quesadilla option for a hearty and healthy breakfast!
You will need: 2 tortillas, 100 g yogurt, 2 garlic cloves, 100 g chicken, 100 g ham, 50 g pepper, 50 g melted cheese, spices.
Cooking: Mix yogurt with crushed garlic and spices and brush with 1 tortilla. Arrange ham slices and pepper strips on top. Quickly sauté the seasoned chicken, add to the quesadilla, and top everything with thin strips of melted cheese. Top with the remaining tortilla and fry for 2-3 minutes.
10. Quesadilla with chicken and egg
For color, add some spinach or other greens.
You will need: 2 tortillas, 1 egg, 0.5 cup milk, half an onion, half a pepper, 100 g chicken, spices.
Cooking: Cut the onion and pepper into small cubes, pour over the beaten egg with milk and fry, stirring constantly. Separately, fry the chicken in seasonings and put it on the tortilla first, and then the vegetables. Cover with the second tortilla and leave for a couple of minutes in the pan.
